紅衫魚蕃茄豆腐湯:
材料:
紅衫魚1斤
蕃茄3個
豆腐1磚
薑1小舊
處理:
1. 紅衫魚,打鱗,清除內臟,清洗乾淨,擎乾水。
2. 豆腐,洗乾淨,切細舊。
3. 薑,去皮,洗乾淨,拍鬆。
4. 要滾4碗湯,就煲6碗水。
烹調:
1. 大火在鑊中燒熱油1湯匙。
2. 加入薑及魚煎透。
3. 要魚湯滾出來有奶白色,就要灒滾水落鑊,另一邊預先煲好一鑊水。
4. 魚,已兩面煎透。
5. 水,已煲滾,即時灒入煎魚的鑊內。繼續大火滾。
6. 湯已滾了10分鐘,隔好魚湯。
7. 再大火煲滾魚湯。
8. 蕃茄切細舊,放入魚湯內,大火滾起。
9. 完成,可享用。
Tofu fish soup with tomatoes:
Ingredients:
Golden threadfin bream 1 catty
Tomatoes 3 Nos.
Tofu 1 cube
Ginger (small) 1 No.
Preparation:
1. The fish, get it scaled, remove its intestines. Rinse thoroughly and hang dry.
2. Tofu, get it rinsed and diced into small cubes.
3. Ginger, get it peeled, rinsed and beat well.
4. Put 6 bowls of water into pot if you want 4 bowls of soup.
Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Fry ginger and fish well.
3. If you want the soup is white in colour, you have to pour boiled~up water into wok. So you have to boil up a pot of water on the other side first.
4. The fish, both sides have been fried well.
5. Water has been boiled up. Pour direct into wok, continue boiling up at high flame.
6. Soup has been boiled for 10 minutes. Properly filter the soup.
7. Heat up the soup at high flame again.
8. Dice tomatoes in small cubes. Put into fish soup. Heat up at high flame.
9. Complete. Serve.

角魚營養湯:
材料:
角魚1斤半
蕃茄3個
豆腐2磚
薑1小薑
處理:
1. 角魚用兩隻手指扯開魚肚,把魚鰓及內贓搣出來。
2. 耐心清洗乾淨。
3. 薑,刮去皮,洗淨。
4. 蕃茄搣去椗,洗淨。
5. 拍鬆薑。
6. 切好蕃茄。
烹調:
1. 放2湯匙油落鑊大火燒熱。
2. 放魚和薑落鑊煎。
3. 魚煎了大約3分鐘。
4. 滾水直按倒入鑊內,魚湯才會奶白色。
5. 湯滾起後,收中慢火,滾15分鐘。
6. 放蕃茄入另一邊的煲內。
7. 用大茶隔隔魚湯落煲內。
8. 用大火煲2分鐘釋出茄紅素就可以了,用豆腐或節瓜代替蕃茄都可以。
9. 完成。
Nutritional sea robin soup:
Ingredients:
Sea robins 1 1/2 catty
Tomatoes 3 Nos.
Tofu 2 cubes
Ginger 1 No.
Preparation:
1. Sea robins, use two fingers to tear off fish belly, clear its intestines.
2. Rinse fish patiently.
3. Peel the ginger, with a peeler, then rinse.
4. Remove anchor of tomatoes, then rinse.
5. Beat ginger well.
6. Cut tomatoes well.
Steps:
1. Heat up 2 tbsp oil at high flame in wok.
2. Fry fish and ginger in wok.
3. Fish has been fried for 3 minutes.
4. Pour boiled up water direct into wok, fish soup will turn to colour in milky white.
5. Turn to medium~low flame after boils up. Boil 15 minutes more.
6. Put tomatoes inro another pot.
7. Filter fish soup into the pot.
8. Boil up soup at high flame for 2 minutes to release lycopene. Use either tofu or fuzzy melon instead of tomatoes is OK.
9. Serve.
