用大火把雞蛋的香氣逼出
秘訣2:全程大火炒
水氣蒸發,米飯又香又Q
秘訣3:有水材料最後放
炒飯才不會濕濕糊糊
秘訣4:配料先煮熟
生食先料理,最後再下鍋

Tip 3: Add watery ingredients last
so the fried rice does not become wet and mushy
Tip 4: Cook ingredients first

蛋炒飯
Fried Rice
材料:
白飯 220公克
蔥花 20公克
雞蛋 2顆
Ingredients
220g white rice
20g chopped green onion
2 eggs
調味料:
鹽 1/4茶匙
白胡椒粉 1/8茶匙
Seasoning:
1/4 teaspoon salt
1/8 teaspoon white pepper
作法:
1. 將白飯放入盤中,撒上鹽、白胡椒粉及蔥花;蛋打散備用。
2. 熱鍋,加入約2大匙沙拉油,倒入蛋液快速攪散至蛋略凝固。
3. 將作法1的白飯放入作法2的鍋中,用鍋鏟將飯壓散翻炒至飯粒完全散開,再持續以大火翻炒至飯粒鬆散均勻即可。
To prepare
1. Place the rice on plate and sprinkle with salt, white pepper, and green onions; beat the eggs.
2. Heat the wok, add about 2 tablespoons salad oil, quickly stir in the egg mixture until it starts to become firm.
3. Place the rice from step 1 into the wok from step 2, using a spatula to stir the rice so that the grains are completely dispersed. Continue to cook over a high flame until the grains become loose., and keep stirring until mixed evenly
番茄蛋炒飯
Tomato Fried Rice
材料:

3. 將作法1的白飯放入作法2的鍋中,用鍋鏟將飯壓散翻炒至飯粒完全散開,持續以大火翻炒至飯粒鬆散。
4. 加入番茄醬持續炒至乾香均勻即可。
