Aiyu jelly is one of Taiwan’s famous summer drinks and dessert. It’s all naturally made from special fig tree seeds, and the process is called as “washing” aiyu by rubbing the seeds in water. Super hydrating and commonly paired with lemon and honey in the night market. Chef Marc from #小鉢洋食 paired it with osmanthus for the light fragrance, poached pear, kumquat sorbet, and few drops of dill oil. There’s no other dessert that’s more suitable than this when dining without air conditioner on this humid, summer day! 😋
