處理:
1. 杏鮑菇,清水洗乾淨。
2. 杏鮑菇,1開2,切細條。
烹調:
1. 大火在鑊中燒熱油1湯匙。
2. 放杏鮑菇。
3. 加入清水30毫升,繼續炒。
4. 加入素食蠔油1湯匙,炒至軟身及收汁。
5. 完成,上碟,可享用。
Stir frying king oyster mushrooms with vegetarian oyster sauce
Ingredients:
King oyster mushrooms 2 packs
Vegetarian oyster sauce
Preparation:
1. King oyster mushrooms, rinse with tap water.
2. King oyster mushrooms, thinly shred.
Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Put king oyster mushrooms.
3. Add water 30ml, continue frying.
4. Add vegetarian oyster sauce 1 tbsp. Continue frying until mushrooms have been turned soft and the sauce has been become thick.
5. Complete. Put on plate. Serve.

It is an Old Story, that happened by chance.
Along a narrow alleyway, in the most ancient district of Tainan City, is an old blue building called Chi Kan West House. It is a fusion of classic Taiwanese and Western styles, having traditional octagonal windows embellished with silver frames and ironwork.
Chi Kan West House is not just the resurrection of an old building back to its heyday, but more the voice of an opera,singer vocalizing a 94-year-old song of Tainan and the inheritance of a culture.
Chi Kan West House is a four and a half-storied blue building hidden in a narrow alleyway of the prefectural city of Tainan. It is a blend of Taiwanese and Western architecture. When stage one was constructed in 1924 it was one story tall but in 1953 stories were added to become the second tallest building in the city, Hayashi Department Store being the first.
The building’s renovation into a four-story building was because of the filial piety of the Hong Family brothers for their mother. She was not only elderly, but also had bound feet, and the location and height of Chikan enabled her to watch the Taiwanese Operas performed on stage at Fort Provintia.
However, time goes by, and all good shows must end. Eventually, this old house became a long-neglected building with its elegance fading away.
It was not until 2014, under strange and unimaginable circumstances that a married couple bought the old house. With a large investment, exceeding their budget, they insisted on refurbishing instead of demolishing it. To preserve it, they had to recruit local elderly masters whose carpentry skills will soon to be lost. It was finally restored into a historical site, embellishing again the glory of its original appearance. Now Chi Kan West House is again unique among its contemporaries not only reborn, but also revitalizing its neighborhood.

以下材料足够给六大碗。
? A. Ingredients/材料?
? Prawn (虾) - 1KG
?Chicken Bone (鸡骨) - 3pcs
?Sotong (苏东) - 6pcs
?Lala (蛤蜊)- half kg
?Pork Meat (猪肉)- small portion
?Fish Ball (鱼丸)
Note: Feel free to add in any meat/vegetble/seafood
注:可以加入任何喜欢的肉类/蔬菜/海鲜
? B. Soup Ingredients (东炎汤材料)?
Galangar (南姜) x2
Lemongrass (香茅)x10
Torch Ginger Flower (姜花) x1 (optional)
Kaffir Lime Leaves (疯柑叶) - around 20 leaves
Lime (疯柑)x 10
Chili Padi (小辣椒)x 20
Mushroom (蘑菇)(optional)
Cilantro (香菜) (optional)
Tomato (番茄)x2
Big Onion (大葱) x2
Garlic (蒜头) x1
? C. Seasoning (调味) ?
Tomyam Sauce 东炎酱 1 Bottle
Sugar (糖)2 Tablespoon
? Step ?
1. Put everything in "B" and cook for 1 hour. Either in plain water or stock, my recipe are prepare with prawn and chicken stock.
2. Cook "A" with Step 1 Soup.
3. Seasoning with Tomyam Sauce & Sugar to flavor.
4. Off heat and add lime juice to falvor. Important to turn off heat, else it will become bitter taste.
5. Done! Enjoy
Note: Torch Ginger Flower & Cilantro to be added after cook, optional ingredients.

1.把所有 "B"材料放进锅里熬煮一小时。可以用水或高汤,我用虾和鸡骨熬高汤。
2.用步骤1.的高汤煮煮"A"。
3.根据自己喜欢的味道调味,慢慢加入盐和东炎酱。
4.关火了才慢慢的加如疯柑汁。记得关火了才放哦,不然会变苦。
5.好啦!好好享受把!
注:姜花和香菜不一定要放,根据个人喜欢的味道加入。
