Benns Ethicoa has launched a limited edition bean to bar chocolate. The Merdeka blend is the first ever bean to bar chocolate that combines two high quality cacao beans from two of the best cacao farms in Malaysia.
We chose cacao beans from Sungai Ruan Pahang & Panchor Malacca not only because of its fine flavors but also in recognition of their effort in cultivating high quality cacao beans. Mr Koh Ah Kau who manages & owns a cacao farm in Sungai Ruan has been passionately cultivating fine flavor cacao for 30 years. His experience has led him to become a well respected figure within the cacao farming industry. Mr Simon Ting is a passionate & brave young farmer who dived into cacao farming in 2015. Learning everything from scratch, his hard work paid off as his cacao beans are now currently used by some of the famous artisanal chocolate brands in Malaysia.
The 63% blend was created in celebration of Malaysia's 63th birthday.
Sungai Ruan cacao beans have a strong character and an acidic profile. There are strong flavor notes of burnt almonds and blackcurrant. Panchor cacao beans on the other hand exhibit a very different taste profile. It has a more subtle character of milky & creamy flavor notes with low acidity. A blend of 63% dark recipe creates a sweeter flavor profile of moderate acidity, a milky middle note & a very surprising gingery note!

With National Day 2 days away, I have prepared some bon bon from @bennsethicoa.sg for my friends who are coming over for National Day crouchside celebration.
This latest collaboration between Benns Ethicoa and @straitspreserves consists of 3 different flavours ( Singapore Sling, Ginger Snap and Calamasi Surprise). Each bon bon is encased in a 72% dark chocolate shell with Singapore-inspired marmalade and velvety chocolate ganache. I couldnt resist the wait and have tried the Calamansi Surprise. So good can!! It is refreshing and the dark chocolate popping candy almond praline gives it a nice element of nostagic childhood surprise. Oh yes, I like that it is not cloyingly sweet though it is made with a layer of white chocolate ganache sandwiched in between.

Ingredients:
1 cup of Whipping Cream
1 cup of Milk
¼ cup of Brown Sugar
¼ cup of Cacao Powder
¼ cup of Raw Cacao Nibs
Garnishing Chocolate Coated Almonds

Methods:
1. Combine the whipping cream, milk, brown sugar, cacao powder in a bowl.
2. Whip the combination above until is well-blend.
3. Add the Raw Cacao Nibs and mix it.
4. Leave it in the freezer for 20 minutes.
5. Garnish it with Chocolate Coated Almonds & Raw Cacao Nibs and ready to serve.

Baking is not my powerful skills. But I believe practice make perfect. I have created chocolate chips cookies ? and it taste good and crunchy. My secret ingredients are Benns products. 2 1/4 All-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 egg
1 cup Benns Drinking Chocolate
1. teaspoon vanilla
2 Benns Raw Cacao Nibs
1. Heat oven to 375°F. In small bowl, mix flour, baking soda and salt; set aside.
2. In large bowl, beat softened butter and sugars with electric mixer on medium speed, or mix with spoon about 1 minute or until fluffy, scraping side of bowl occasionally.
3.Beat in egg and vanilla until smooth. Stir in flour mixture just until blended (dough will be stiff). Stir in Benns Drinking Chocolate and Benns Cacao Nibs.
4. Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
5.Bake 8 to 10 minutes or until light brown. Cool completely, about 30 minutes.
