[The Roti Man Story - Support Local Business and Get Rip Off In Return?]
Many local and small business may not be doing that well relatively in this Covid-19 pandemic era. Therefore, as a full saleried person with some extra income to spare, we always try to support local business, let it be a local hotel, restaurant, groceries store, hawkers and many more. Everyone's little effort contribute to the economy cycle.
One of the small local business we have been supporting is roti man, or known as mobile roti benggali bike. Apart of appreciating their hardwork, we also would love to see the sustaibility of these increasing rare sight of traditional mobile bread shop on Malaysia street. On top of that, we simply enjoyed the roti benggali with peanut and butter spread.
However, not all local businesses are appreciative and still trying to rip off their customers. One of them is a roti man stationed at certain local hotspots. He sells his breads at exorbitant price to me. Meanwhile, another roti man who frequents my house is an honest guy, and we had been supporting him ever since.
Perhaps you may argue price differences exist between different stall, and willing seller willing buying concept. I agree to that, but the price differences here are too big and constitute a rip off. Here was the scenario (2 loaf of roti benggali, all with peanut butter spread).
Dishonest roti man : RM 9.6 (RM 2 for spread on each loaf; never buy empty loaf)
Honest roti man: RM 5.6 (RM 1.6 for spread on each loaf; RM 1.2 for each empty loaf)
We felt it was a total rip off as we had been buying from the dishonest guy, at least 2 to 3 times. Even it was a mere RM 4 for each loaf of bread, but the differences could mean a lot to some family and it could be well utilised to feed another meal
Everyone is having hard time now. Perhaps we were fortunate to be able to worry free for next and tomorrow's meal, but there are family with children food insecurity. Shame on those unscrupulous business.

Ingredients (5 breads of 100g each)
A. Hokkaido bread dough
270 grams bread flour
30 grams cake flour
5 grams (1,5 tsp) instant yeast
15 grams milk powder
40 grams sugar (granulated or superfine)
1 pinch salt
30 grams egg (whisk 1 egg lightly and scale 30 grams, save the rest for filling)
125 grams milk
75 grams whipping cream (min 30% fat)
B. Coconut filling
30 grams unsalted butter - softened at room tempt
100 grams grated coconut
30 grams icing sugar
20 gram egg (the rest of 1 egg after taken 30grams for part A)

Hello friends! Today we're going to show you how to make Spanish classic chilled soup for summer: Gazpacho(and yes, it's vegan ❤️ ).
Gazpacho is one of the best known Spanish dishes. It originates from the South of Spain, the Andalusia area. In there, most gazpacho recipes include stale bread, tomato, cucumbers, onion, green bell pepper, garlic, olive oil, sherry vinegar, water, and salt. Especially during hot summer days, cold gazpacho is ideally to enjoy as an appetizer.
Today, gazpacho has different varieties. But in this video, we wanna show you the most popular and classic tomato based version. Served cold and enjoy with homemade croutons, it’s so good in summer. Enjoy. :)

How to make Spanish Gazpacho Soup,
Spanish Gazpacho cold Soup Recipe
☞ Yield: 4~5 servings, 150ml/cup
✎ Ingredients
beef tomatoes & cherry tomatoes 420g
cucumber 75g
green bell pepper, 35g
red bell pepper, 35g
red onion 20g
garlic 2g
old bread 2 slices (22g)
olive oil 12g (1.5 tbsp)
sherry vinegar 12g (1tbsp, vinagre de Jerez)
salt Q.S.
a pinch of black pepper
homemade croutons Q.S.
Instructions
1. Cut the baguette slices into small pieces. Set aside.
2. Slice off the stem-end of the green bell pepper, remove the ribs, veins and seeds away, then cut into small pieces. Repeat the process for red bell pepper.
3. Cut the onion into thin slices.
4. Cut off the root end, and peel the skin from the clove. Slice the clove into thin pieces.
5. Cut off the stems of cucumber, then peel the skin and slice into a platter.
6. Cut the tomato in half, and remove the stem and core. Cut the tomato into small wedges.
7. Place the tomatoes, peppers, onion, garlic into a food processor or blender, blend until very smooth.
8. Add baguette bread and
soak completely with vegetable puree until soft. Season with salt and black pepper, drizzle olive oil as you like, and add the sherry vinegar. Cover the lid and blend until well combined.
9. Taste and adjust the seasoning as necessary. 10. Strain the mixture through a strainer, pushing all the liquid through with a spatula and discard the solids. Chill until very cold for hours or overnight.
11. Cut the baguette in half, then cut in half lengthwise and slice into bite-size. Set aside.
12. Mince garlic. Combine olive oil and minced garlic, and then drizzle (the bread) with oil evenly.
13. Place the breads onto a baking sheet. Season with black pepper and Parmesan. If you like, you can season with salt.
14. Preheat oven to 170C, bake for 12-14 mins or golden brown.
15. Remove the croutons from oven, let cool.
16. To serve, pour gazpacho into a cup or a bowl, put some ice cubes, garnish with tomatoes, chopped cucumber, homemade croutons and a drizzle of olive oil.

お砂糖を少しとバターも少し使って、シンプルなテーブルパンを焼いてみました。
お食事パンにもジャムやはちみつを付けておやつに食べてもあきない美味しさです。
薄切りの胡瓜とたっぷりの茹で卵のタルタルを挟みましたが
(夫リクエストのため)オリーブオイルをつけて食べるのが一番のおススメ!
朝食にもおやつにも夜食にも~結局いつ食べても美味しいパンです^^ はっはっはっ。

【Ingredients】
★200g Bread flour
★6g Sugar
★3g Salt
3g Dry yeast
130g Water
10g Unsalted butter(room temperature)
For Sprinkle:Bread flour(as needed)
The best water temperature for the dough: About 15℃-20℃ for spring and autumn. About 10℃ for summer, and about 25℃-30℃ for winter.
【Directions】
①Combine the dry ingredients (★)and mix.
②Add dry yeast and water and Mix.
③Put it on the table and knead. (10mins)
④Add butter and knead more. (5mins)
⑤Make it round, then leave it at a warm place until it gets twice as bigger. (primary fermentation)
⑥Degas the dough from ⑤, divide it into 8 pieces and make them round.
⑦Cover them with a wet cloth and leave them for 10 mins. (bench time)
⑧Again, make them round.
⑨Cover them with plastic wrap or a wet cloth not to dry, leave it at a warm place until they get twice as bigger. (secondary fermentation)
preheat the oven to 392 °F/200℃.
⑩Dust the rolls with bread flour (not listed in the ingredient list) using a tea strainer.
Bake at 374 °F/190℃ for 16 minutes.

*Be careful not to let the dough dry out when you are letting it rise or rest.
*When the dough is too moist and sticky, powder the dough a little.
【材料】
★強力粉 200g
★砂糖 6g
★塩 3g
ドライイースト 3g
水 130g
無塩バター(室温) 10g
強力粉(分量外)
*水の適温:
春・秋は、約15-20℃、夏は、約10℃、冬は約25-30℃です。
【作り方】
①★の材料をボウルに入れて混ぜる。
②中央にイーストを加えて水を注ぎ入れ混ぜる。
③台の上に生地を取りだして、10分こねる。
④バターを加えてさらに5分ほどこねる。
⑤丸めてボウルに入れて、ラップなどを被せて大きさが約2倍になるまで暖かい場所に置いて一次発酵。
⑥生地のガス抜き後、8分割して、丸める。
⑦乾燥させないように濡れ布巾などを被せ、10分ベンチタイム。
⑧再びきれいに丸めなおして天板に並べる。
⑨ラップなどを被せて大きさが約2倍になるまで暖かい場所に置いて二次発酵。
オーブンを200℃に予熱する。(オーブンの発酵機能使用の場合は発酵終了後にすぐにオーブンを温め始める)
⑩パンの上から茶こしで強力粉を振りかけ、200℃のオーブンで16分焼く。
*冷めたら乾燥しないようにビニール袋などに入れてください。
*発酵中やベンチタイム、成形時は生地が乾燥しないよう気を付けて下さい。
