Lại là một món nội địa Trung nữa nè :> Nhưng đc cái là món này khá hợp vs khẩu vị của C 😆
1 set gồm có bún khô, mộc nhĩ vs đậu que muối, măng chua, súp ốc, dầu ớt chưng, váng đậu chiên và đậu phộng. Ơ thế ko có ốc nhở :))) quạo 1p... Huhu 60k này ra Đống Đa có bát bún ốc riêu r =))) Thôi đùa đấy, ốc cũng khó bảo quản lắm, quan trọng là vị mấy thứ kia có ngon ko thôi 😌
Bún này nấu khá là lâu nhé mn, ko giống nấu mì bt đâu, nấu bún chín rồi mới bỏ các gói sốt nha, xong topping cho lên trên là đc. Mùi hương món này khá là thơm, khá cay nhưng ko đến nỗi chảy nước mắt vs ko bị hắc đâu, tuy nhiên C nấu ít nước quá nên nó bị mặn, mn cho nhiều nc xíu nha vì mấy cái toppings kia cũng đc muối r hiu hiu. Vị dù ok đấy mà lại ko có gì làm mình liên tưởng đến ốc cả 😅
Nhìn chung là món này dễ ăn nè, nếu bạn nào muốn thử đồ ăn Trung mà sợ ko hợp khẩu vị thì có thể bắt đầu vs em này trước nhé 😚

Set contents : dried rice noodle, cured wood ear mushrooms and long beans, pickled baby bamboos, snail soup, chilli oil, fried tofu skin and peanuts. Wait, then where were the snails? Omg, with 60k I could have gone to Dong Da and have one with real snails and crab meat 🤣 Just kidding, snails are really hard to preserve in these kind of things, as long as the other toppings are good then it's okay :>
This rice noodle took really long time to cook, not like normal ones, not until they were cooked, I didn't pour the other the sauces in. The toppings will go on top in the last minute 😚 The smell of this noodle was pretty nice, spicy but not too much to make me cry. The broth was a little bit salty for me, cuz I didn't cook it with much water and some of the toppings had salt already, next time I'll put more. The taste was nice for me, though it didn't give me any feeling of eating snail noodle 😶
In general, if you wanna try Chinese snacks or instant food, but you don't know which one would fit you, you can try with this one first 😚

❤️ BÚN CÁ TƯƠI RÓI CHO BỮA SÁNG – FRESH FISH NOODLE SOUP FOR BREAKFAST 😌
C thực ra ko phải là fan của bún cá kiểu ĐN cho lắm, vì nó hơi bị tanh, C quen ăn kiểu rán lên của HN rồi, hiu hiu… 😅 Hôm nọ lê lết quanh tìm đồ ăn sáng mãi mà ko biết ăn cái gì cả, nên ghé đại vào hàng này ăn thử xem sao vì thấy đông quá.
Quán bán bún vs 3 loại : cá chim, cá thu và cá bớp. C ăn cá bớp 😚 Thoạt nhìn thì món này có vẻ ko hấp dẫn, cả bát bún có 1 khúc cá, miếng bí đỏ, bắp cải vs rắc tí hành… Nhưng đến lúc lật ra thì mới biết khúc cá ko hề nhỏ (khinh thường chủ tịch và cái kết) 😂 Cá rất thơm, ăn là biết ngay cá tươi, nước dùng ko quá tanh như những nơi khác 😳 Có cả chả cá nữa, ăn bt thôi, ko có gì nhiều. Với gọi thử bát bún đầu cá xem ntn, lúc họ đem ra buồn cười ghê =))) Cả nguyên nửa cái đầu cá to đoành chiếm trọn cái bát. Họ cho thêm cái đĩa bên cạnh để mình gỡ ra ăn nữa, cũng ngon mà kiểu thấy… cục súc ghê haha 😂
Quán chỉ bán buổi sáng thôi nha, C có chụp bảng giá nữa, từ 20-40k thôi.

I am not a fan of Danang style fish noodle soup, it's a little fishy for me, I get used to the fried fish in Hanoi's ones already 😅 The other day, I struggled in finding breakfast, there was nothing interesting out there so I decided to try this place then, it was stuffed with people at that time.
They have 3 different kinds of fish : pomfrets, mackerels and cobias. I got cobias for myself 😚 First impression it didn't look that tasty, the whole bowl only had a piece of fish, a piece of pumkin, some cabbage and chives😑 Not until I turned the fish over, I found out it was pretty big The fish was super fresh, I could tell right from the first bite, the broth wasn't too fishy like I thought 😲 They have fish cakes too, but I don´t like them, not much. I tried a bowl of fish head too, and I almost bursted into laugh when then brought the bowl to my table. The whole fish head was there inside the bowl like that hahaha 🤣 They gave me a small plate so I could put the head there to eat. It was nice, but the presentation was damn weird… 😂
They only open in for breakfast, I took a pic of the menu too, only from 20-40k. @ Nguyễn Văn Thoại

無鹽牛油 40g Unsalted Butter
洋蔥 400g Onion
鹽 1/2tsp Salt
砂糖 1tsp Sugar
麵粉 5g Flour
白酒 100ml White Wine
雞湯 250ml Chicken Broth
水 250ml Water
百里香 1/2tsp Thyme
法包 4slices Baguette
碎芝士 90g Shredded Cheese
1.洋蔥去皮切絲備用
2.法包切片備用
3.小火煮溶牛油,放入洋蔥,鹽及砂糖,中火炒約3分鐘
4.洋蔥鋪平後加蓋,小火煮約15分鐘至軟身,不時攪動
5.不斷翻炒將洋蔥炒乾至焦糖色
6. 加入麵粉炒勻
7.加入白酒煮滾,再加入雞湯,水及百里香,以小火煮約10分鐘
8. 把煮好的洋蔥湯倒入湯盅內,湯面放上兩片法包,撒上芝士碎
9.上火以200℃焗至表面金黃色即成

人生總是五味紛陳,甜酸苦辣交替現身,要留住甜、體會酸、捱得苦、嚐過辣,經歷才算完整。「Son姐」張慧敏今次帶來的酸菜魚,同樣用上各種配料衝擊味蕾,混合起來卻是一道美味佳餚。Son姐希望憑魚寄意,讓心肝寶貝明白母親的一番心意。
炮製酸菜魚難度有限,反而如何在香港尋覓「酸菜」而非鹹酸菜才是難事。買不到酸菜怎麼辦?買到又要怎樣保存?魚肉怎樣醃製才又白又滑?芫荽怕不怕放得過多?毋須擔心,有Son姐教路,包你獨立自煮冇失手!
Son姐說,做這道菜同樣有段古。家中兩個孩子日漸長大,作為要求高又心急的媽媽,和孩子相處難免起爭執,期望愛女吃到喜歡的這道酸菜魚,能理解媽媽着緊全因為愛,並不是偏心:「明知細佬唔係好食得辣,我都會煮,就係希望佢知道,無論我講嘅道理佢今時今日未必明白,始終希望可以透過我為佢煮嘅食物,無論幾嬲媽咪都好,都會記得張氏家訓:不可含怒到食飯。」
常說食物不只用作填肚果腹,為家人親自下廚的料理出品,小小杯盆盛載着的,更多是溫馨和關愛。對你來說,哪一道菜才是家的味道?
食譜
酸菜魚
材料:
黑鱲
配料:
酸菜
芹菜
芫荽
泡椒
白胡椒
蛋白
薑
葱
白酒
步驟:
.買魚時請魚檔幫忙起肉,最好能協助先放血;回家後清洗再檢查去骨是否徹底,然後切件、切片。
.魚肉吸乾水後醃製,放白胡椒、蛋白後拌勻至黏手,備用。
.切薑留皮,中間部份再切成絲,再切葱段、芹菜待用。
.開油鑊,先把薑爆香爆透,再放魚頭、魚骨部份香煎,邊緣泛白即可翻轉再煎至金黃色。
.煲滾水後倒進煎魚鑊至覆蓋魚件再煲滾,滾後將芫荽根部、葱的根部與胡椒粒放進去,煲十分鐘。
.酸菜放進白鑊炒至乾身;泡椒切粒。煲好湯頭後材料可棄掉。
.開油鑊放薑絲、酸菜炒香後放泡椒,然後將魚湯倒進鑊,然後放鹽、糖調味。
.將起骨後魚肉放進魚湯,厚身先放,然後放芹菜。
.燒熱平底鑊,冒煙後放油,再待冒煙。
.將芫荽放進酸菜魚鑊中,可加紅椒粒裝飾;最後將滾油倒入酸菜魚鑊,略與芫荽拌勻即成。
Hot and Sour Fish with Pickled Chinese Cabbage
Ingredients:
Blackhead Seabream
Pickled Chinese cabbage
Celery
Cilantro
Pickled pepper
White pepper
Egg white
Ginger
Scallion
White wine
Peppercorn
Steps:
1. When buying the fish from the market, ask to remove blood and bones from the fish. At home, clean and check if all bones have been removed, then fillet and sliced.
2. Pat fish pieces dry, marinate with white pepper and egg white. The mixture should feel sticky. Set aside.
3. Julienne thinly unpeeled ginger, scallion, and celery. Set aside.
4. Heat pan with oil, sauté ginger until cooked; add fish head and bone to sauté both sides until golden in color.
5. Add boiling water to cover fish head, cover and bring to rolling boil. Add the stems of cilantro, stems of scallion, and peppercorn, boil for 10 minutes.
6. In a dry pan, sauté pickled Chinese cabbage until dry; dice pickled peppers. Once the soup from step 5 is done, remove all ingredients and only keep the broth.
7. Heat pan with oil, sauté ginger and pickled Chinese cabbage for a few minutes, and add pickled peppers. Add fish soup into wok, season with salt and sugar.
8. Add fish slices into fish soup by adding thicker slices first, and then add celery.
9. Heat a clean pan until you see smoke, and then add oil, heat until you see smoke from oil.
10. Add cilantro into fish soup, can also add red chili peppers to garnish; lastly, add heated oil into the fish soup, mix in some cilantro to finish.
