The best thing for a cook is to have the right tool. I would say "Turk" is like my soulmate in cooking meat. Don't know how to name this dish but chicken and brussels sprouts are an amazing combo. Using leftover chicken oil to fry those cute veggie balls then you'll know what I'm saying.

ゴロッと旬の芽キャベツを入れ、レモンで爽やかな風味をアクセントに♪
豆乳であっさり仕上げ、体にも優しいレシピです♡

芽キャベツの豆乳レモンクリームパスタ
2人分
材料:
パスタ 200g
芽キャベツ 6個
レモン(輪切り) 3切れ
エリンギ(縦切り) 1パック
にんにく(みじん切り) 2片
小松菜 1/2束
A豆乳 250ml
A白みそ 20g
A白すりごま 大さじ2
Aだし用昆布 1枚
オリーブオイル 大さじ2
塩 少々
粗びき黒こしょう 小さじ1/2
作り方:
1.パスタは、塩を適量入れたたっぷりの熱湯でパッケージの表記よりも1分短めに茹でる。
2.フライパンに大さじ1のオリーブオイル(分量外)を熱し、エリンギを炒めて皿に取り出す。
3.フライパンに、にんにく、芽キャベツ、食べやすい大きさに切った小松菜を入れて中火で炒める。
4.Aを加えて、全体を混ぜてひと煮立ちしたら、弱火で5分ほど加熱する。
5.レモンを6等分のイチョウ切りにし、4に加えて弱火で1分ほど加熱する。
6.オリーブオイル、パスタ、炒めたエリンギを入れて全体を和え、塩で味を調える。
7.だし用昆布を取り出し、器に盛り付け、粗びき黒こしょうを散らして完成。
Soy Milk Lemon Cream Pasta
Servings:2
INGREDIENTS
200g Pasta
6 Brussels sprouts
3 slices Lemon
1 pack King trumpet mushrooms
2 cloves Garlic (chopped)
1/2 bunch Japanese mustard spinach
A 250ml Soy milk
A 20g White miso
A 2 tablespoons White sesame seeds
A 1 piece Kelp for dashi
2 tablespoons Olive oil
Salt
1/2 teaspoon Pepper
PREPARATION
1. Cook the pasta in boiled salt water, 1 minute shorter than indicated on the package.
2. Heat 1 tablespoon of olive oil in a frying pan, cook the mushrooms and set aside.
3. Place garlic, brussels sprout and Japanese mustard spinach cut into easy-to-eat pieces in the frying pan and cook over medium heat.
4. Add A, mix thoroughly and cook for a while, lower the heat to low and cook for about 5 minutes.
5. Cut the lemon slices into 6 pieces each, add to 4 and heat on low heat for 1 more minute.
6. Add olive oil, pasta and stir-fried mushrooms, mix and season with salt.
7. Remove the kelp, serve it in a bowl, and sprinkle with coarse black pepper to complete.
8. Enjoy!

Egg Salad Sandwiches with Brussels Sprouts Chunks (Recipe)
Difficulty: Easy
Time: 30min
Number of servings: 2 servings
Ingredients:
2 eggs
2 tbsp. mayonnaise
a pinch of sugar
salt and pepper
2 slices of bread

Directions:
1. Boil eggs for about 20 minutes from water to make boiled eggs.
2. Chop (or mash with a fork) the eggs, then season with mayonnaise, sugar, salt and pepper.
3. Put the egg salad and Brussels Sprouts Namul between 2 slices of bread. Wrap in parchment paper and cut in half to serve.

We Japanese also love Korean-style dishes. I did not make it spicy for kids btw. I love dishes seasoned with simple salt, sesame seeds and sesame oil. Smells really good and appetizing. MUST TRY, really good 😋

Brussels Sprouts Namul (Korean-Style Vegan Salad 나물 Recipe)
Difficulty: VERY EASY
Time: 5min
Number of servings: 2
Ingredients:
200g (7oz.) brussels sprouts
1/4 tsp. salt
1 tbsp. sesame oil
1 tsp. toasted white sesame seeds
Directions:
1. Wash brussels sprouts, trim off the dirty end, then slice down the middle lengthwise.
2. Boil water in a large pot. Add a teaspoon of salt in the water, cook brussels sprouts for about 3 minutes. Drain well in a strainer.
3. Toss with salt, sesame oil, and sesame seeds to finish.
You can keep it in the fridge for 3 days.
