CheckCheckCin:「升糖指數」(Glycemic Index,簡稱GI)是量度各類含碳水化合物(醣質)食物在進食後對血糖影響程度的數值,食物中的碳水化合物在消化道分解後,會轉化成葡萄糖進入血液,血糖會因而上升,各種食物的轉化速度不一樣,高GI的食物較容易消化而轉化成葡萄糖,一般都是纖維含量低、精緻度高、較為稀爛的食物,例如白飯、粥、麵包、蛋糕、南瓜、薯蓉、果汁、砂糖等,故進食後容易出現高血糖情況;而精緻度低、富含膳食纖維、蛋白質的食物大多屬於低GI,例如糙米、燕麥、全麥麵包、意粉、蘋果、粟米、白扁豆、紅腰豆、牛奶、乳酪等,延長飽足感時間,有助控制血糖。
從中醫角度來看,低GI食物多為粗糧,故建議平日多食用,包括全穀類食品,例如燕麥、藜麥、蕎麥、小米、粟米、五穀米、全麥麵粉等;要注意烹調時間越長GI值亦越高,食物越軟爛,消化時間就越短,血糖會升得較快。

Get to know low GI foods
“I was recently diagnosed with diabetes, and the doctor asked me to take note of the Glycemic Index of the foods I eat. Does that mean I have to start taking sugar-free foods?”
CheckCheckCin: Glycemic Index (GI) is used to measure the effects of carbohydrates (sugars and starches) on blood sugar levels. Once the carbohydrates enter the digestive tract, they will be broken down into glucose that can enter the bloodstream, causing an increase in the blood sugar levels.
Different foods will convert to glucose at different rates. Foods with higher GI can be digested and turned into glucose more easily. They are normally lower in fiber, high in refined carbs, and are easily mashed. These include rice, porridge, bread, cake, pumpkin, mashed potato, fruit juice, and sugar. They might cause blood sugar levels to spike.
On the contrary, foods with a lower GI have lower refined carbs and rich in fiber and protein. Some examples are brown rice, oats, whole wheat bread, spaghetti, apple, corn, white lentils, kidney bean, milk, and cheese. These foods can keep us full for a longer period. Hence, they are effective in controlling our blood sugar levels.
From the perspective of Chinese Medicine, foods with lower GI are generally coarse grains, and Chinese medicine practitioner recommend consuming them on a regular basis. These includes all types of whole grains such as oat, quinoa, buckwheat, millet, corn, grain rice, and whole-wheat flour.
Do note that the longer you cook these foods, the higher the GI readings you will get, as they become mashed. This will also shorten the digestion time, causing the blood sugar levels to rise.

Bratkartoffeln is a popular dish in every German household. Yes, it is very difficult to pronounce (brat-kah-toff-len) translates as "fried potatoes" and it's indeed pan-fried potatoes, bacon, onions, and seasoning. I don't eat bacon, so I did it without most of the time. It will taste as great still. Another dish which will make you fall in love forever. Trust me, if it isn't making u love again, please ask me to buy u a drink! :P
Trust me, it is so easy to prepare and cook. JUST time consuming. Normally it takes me 1 hour to cook the potatoes. Slow cooking is the best!
Ingredients :
. MANY potatoes. I used 4kgs of Potatoes.
. A lot of FAT aka BUTTER. 1 to 1.5 blocks of unsalted butter
. 2 whole finely chopped onions
. Salt to taste
. Black pepper
You may also add some marjoram & chopped bacons.
Some nice tips:
- Potatoes can be cooked several hours ahead. You must boiled whole potatoes for 20 mins and not less. In fact, this dish is often made with leftover potatoes.
- In Germany, these potatoes are traditionally served with fried sunly side up eggs, pickles, and green salad.
- If you're using a nonstick pan, the potatoes will need a lot of butter to brown properly.
- Cook the potatoes on medium low fire after the onion turn golden. Turn/flip the potatoes slices gentlely and not as often but watch out, don't let them burn.
- If you are a vegan, use oil instead of butter.
- The potato slices will turn brownish and crispy on the edges. It means they are ready!
I learnt this dish from Oma- German Grandma of my kids. She is such a good cook. Eventhough I dont't speak German, I still managed to learn from her. Glad I did, my kids love this dish and miss their Deutsch homeland too.

In this video, we whipped up the Ultimate Singaporean Breakfast in Neo’s Kitchen. Since so many of you have requested an Economic Bee Hoon video, I decided to make it a challenge but with a twist. A traditional plate would consist of Bee Hoon/Egg Noodles with a bunch of sides like luncheon meat, eggs and stir-fried vegetables, with a healthy dollop of sambal. However, I came across OmniMeat, a plant-based alternative to your common meats, that offered OmniMeat Luncheon, an imitation luncheon meat. They also offered OmniMeat Strip, which is their equivalent to the sliced cuts of meat commonly used in stir-fries. There is a lucky draw for FairPrice gift vouchers, details are below!
For my challenge, I piled on at least 4 portions each of Bee Hoon and Fried Egg Noodles, together with 9 eggs and 3 packets worth of OmniMeat Luncheon onto my giant plate. My mum helped to cook the egg noodles and also stir-fried the OmniMeat Strip with some vegetables, which I added onto the platter. To round it off, I added a healthy serving of sambal.
The luncheon meat had an almost identical texture and colour to real luncheon meat and it would be difficult to tell the difference at a glance. Flavour-wise, it did taste different but not in a bad way. Luncheon meat normally tastes very salty and processed while OmniMeat Luncheon tasted “cleaner” and felt more like it was comprised of actual ground meat. The OmniMeat strips were pleasant and chewy but it was apparent that it was not meat in the flavour. However, it was far superior to most mock meats I have tried with a palatable taste and rich smoky flavour.
This was a straightforward challenge featuring one of Singapore’s most popular breakfast dishes, Economic Bee Hoon. Jazzed up with plant-based meat, an ever-growing trend that is supposed to be better for the environment, this challenge was healthier than most. OmniMeat Luncheon is certainly far healthier than any canned luncheon meat and would be a great addition to your kitchen. Do note that it requires cooking. If you are hosting for Chinese New Year, OmniMeat would be a great option to have in your spread, especially for vegetarian friends and family. OmniMeat also has a range of other Asian-inspired plant-based alternatives that would not be out of place at a Chinese New Year party. This Vegan Chinese Mushroom Rice recipe is really easy to execute and best of all, delicious. This dish was inspired by the famous Taiwanese Braised Pork Rice but we gathered that some of you cannot take pork or animal derived ingredients so we decided to replicate the taste using mushrooms instead. As this is a rice cooker recipe, you just need one pot. Even if you don't have a rice cooker, you can cook this in a normal pot over your stove. Watch our cream of mushroom rice video (https://youtu.be/cS8DzVoSl6U) to learn how to cook rice over stove. You can also use your multicooker to cook as long as your cooker has the rice cooking function. If your rice cooker doesn't have the fry function, try turning on your rice cooker and set the rice cooking function with the lid open. Then see if the pot gets hot. If it does then you can just use it to fry the ingredients first before resetting the rice cooking function again to cook the rice normally as you would with normal rice. For those of you who are cooking for more, just ensure that your rice to water ratio is 1:1. This means that if you need to cook 3 cups of rice, just use 3 cups of water. Of course you'll need to increase the other ingredients proportionately. Easy, right?

Rice Cooker Vegan Chinese Mushroom Rice 台湾卤肉式香菇饭 Taiwanese Braised Pork Style Vegan Rice
Ingredients:
Serves 4 pax

8 cloves of shallot (thinly sliced)
1 cinnamon bark
1 star anise
4 cloves of garlic (chopped)
6 pieces Chinese dried mushrooms (rehydrated & diced)
200g of oyster mushroom (diced) - you can use any types of fresh mushrooms
2 cups rice (use rice cup or a 210ml cup to measure)
2 tablespoons vegetarian mushroom sauce or Chinese mushroom sauce
1 tablespoon premium dark soy sauce
A few dashes of white pepper
2 cups water (use rice cup or a 210ml cup to measure)
1 teaspoon salt
Note: If you do not need this dish to be vegan, you can use regular oyster sauce.

通常はストロークで演奏されていたようですが、時々、この弾き語りバージョンを披露されていました。
全体を通してかなり難易度が高い曲です。
如何にベース音を正確にトレースすることができるか?がキーポイントですが、なかなか思うようには弾けませんでした💦
また、孝蔵さんも使っていたので、普段は使わないサムピックで弾いたのですが、力加減が難しくて、ちょっとぎこちないリズムになってしまいました💦

I did a cover of Murashita Kozo's 6th single "Odoriko(Dancer)" of arpeggio version.
Normally, he played this song by stroke, but, sometimes he was playing this by arpeggio.
This song has a very high degree of difficulty throughout.
It is a key point that how can trace a bass part accurately, however, I quite could not do it at my pleasure.💦
Also, because Kozo-san used, I played this song by thumb pick which I usually do not use, but, it was difficult to control, it had became bit an awkward rhythm.💦
However, I did my best, so I'd be happy if you watch.😀
