材料:-
豬肋排..................400g
水..........................1/3杯
薑(切薄片)............4片
梅羔醬(梅羔醬)....3.5湯匙
金桔油...................1/2湯匙
醃料:-
蛋黃..................1隻
木薯粉..............1.5湯匙
糖......................1茶匙
魚露..................1/2茶匙
鹽......................1/4茶匙
做法:-
1. 將豬肋排加入醃料拌勻醃一小時。
2. 熱油鍋下豬肋排,以中火半煎方式煮熟拿出。
3. 熱油鍋下薑出爆香,加入梅羔醬(梅膏醬)、金桔油、水煮至濃稠,起小泡泡狀態,然後豬肋排入鍋快炒至每塊豬肋排沾上醬汁便可。
梅羔醬(梅膏醬)和金桔油在潮州雜貨舖有售。
