Escape the city crowd and head over to Karangan, a quiet-remote area off Kulim Kedah... approximately an hour drive from Georgetown. Karangan is surrounded by many Palm Trees, driving into the area feels like entering jungles but the area houses many hidden Seafood restaurants. One of the latest additions is Sungai Kob Leisure Farm (喜洋洋河鲜农场餐馆), opened in late 2017, the farm is a good 5 minute drive away from the main road of Karangan (via bumpy roads surrounded with Palm Trees and woods). The setting definitely deserves a big "WOW", the dining area is beautifully decorated with many Chinese elements; especially note-worthy is the wooden hut built along the river... allowing diners to kick back, relax and enjoy the sumptuous meal amidst the greens. On the menu, the restaurant proffers a great variety of Chinese dishes with great emphasis on freshwater fish. The standard catch of Patin, Catfish, Tilapia are there but if you have an extra dollar to splurge, expensive option like Empurau is also available.

{依約來補食譜--零麩質法式鹹派}
零麩質鹹派和零麩質糕點一樣, 很容易轉換,而且對我來說,風味、口感絲毫不遜於一般小麥製派皮。
有心嚐試零麩質(或起碼「去小麥」)飲食者,通常是基於健康考量或者家中有人對麩質敏感,因此我不建議買市售零麩質預拌粉,那多半混摻了不少空卡路里食材如白米粉、玉米澱粉 ( corn starch)、馬鈴薯澱粉 (potato starch)、木薯澱粉 (tapioca starch) 等精製澱粉,也少不了口感改良劑如三仙膠 (Xanthan gum) 、華爾豆膠 (Guar gum) 等。精製澱粉不只缺乏營養價值,還會震盪血糖;上述兩種口感改良劑好壞爭論未定,但有許多人反應會造成腹瀉、消化不良、脹氣等腸胃或者失眠問題。既然是食品添加劑,我的立場是能不用就不用;而如果不用,成品口感也不差,那何必用呢?
只要派皮搞定,法式鹹派的餡料組合,包山包海,無邊無際。傳統上只要有蛋和奶當底,其它就自由發揮了。我喜歡用洋蔥提味而覺得不可少,其它就是有什麼用什麼 (當令食材為佳),喜歡什麼就加什麼。不吃蛋的素食者,理論上可以奇亞仔或亞麻籽加水釋出膠質後取代 (比例:水3大匙+籽1大匙=1顆蛋,亞麻籽需先打碎),但我還沒運用在鹹派上,效果不知;不吃牛奶製品也好解決,豆漿、杏仁奶、種籽奶、椰奶都可替換。
{零麩質韭菜花雞茸菌法式鹹派}
派皮食材:
零麩質燕麥粉1杯或用燕麥片(rolled oat) 1杯打成粉 (燕麥本身不含麩質,但常和小麥同處加工而受污染。對麩質過敏者請選用有加註「零麩質」的燕麥產品)
杏仁粉 (是浸泡過後去膜烘乾的almond flour, 不是帶膜的almond meal。前者的反營養素植酸量少很多) ½杯
糙米粉1/3杯 (我用台灣友人送的佳實牌糙米粉,此品加工前有浸泡過)
葛根粉2大匙 (作用和玉米粉相同,但是由整個塊莖植物磨製分離而來,沒有前者的基改和化學精製過程)
冰涼的有機奶油 (或凝結的椰油)100克(相當於美式奶油條七大匙),切小丁
海鹽1/2小匙
冰水約1/4杯
內餡食材:
洋蔥一顆,切碎
野生雞茸菌 (Chicken of the woods mushroom) 或其它菇類,手抓兩大把,切適口大小
韭菜花1小把 (或任何喜歡的綠蔬適量),切碎
蒜末2瓣
巴沙米克醋1-2大匙
初榨橄欖油2大匙
奶一杯 (我用自製豆漿)
有機蛋2大顆或3小顆
海鹽和現磨胡椒適量
現磨起司 (我用parmigiano reggiano),磨在內餡表層 (可免)
作法:
1. 先做派皮。取一大碗,將燕麥粉、杏仁粉、糙米粉、葛根粉和海鹽混拌過,加入冰涼的奶油,用手抓捏至粉類出現如麵包碎的顆粒狀,然後一點一點慢慢加水,直到麵粉聚合成團 ,再用手將麵團塑成圓碟狀;若麵團無法粘合,就再加點水。這做派皮過程,愈短愈好,才會酥脆。用保鮮膜包覆,放進冰箱冷藏20-30分鐘。
2. 平底鍋用中大火預熱,入油炒香蒜末和洋蔥丁。續入菇類,炒至稍軟後以海鹽、胡椒和巴沙米克醋調味。起鍋備用。烤箱預熱到350度F (175度C)。
3. 將派皮圓碟自冰箱取出,上下各舖上保鮮膜或烘焙紙,將麵團撖成比塔盤(我用10吋圓形)大上一吋的圓形,然後對折兩次成四分之一圓周,將圓周直角對準塔盤中心,小心放進塔盤,再攤開舖平、壓邊。若有剩餘一點派皮,就找縫隙填滿。
4. 用叉子在派皮上輕壓出小洞,進烤箱烤10-12分鐘,以防入餡後派皮變溼潮軟。
5. 取一大碗,將蛋液打勻, 入奶混拌均勻,以海鹽胡椒調味;續入炒熟放涼的混合蔬菜,拌進切碎的韭菜花,拌勺後倒入塔盤,磨進一層薄薄的起司 (若有用)。若有多餘的韭菜花,舖幾根上去裝飾。進烤箱烤40分鐘左右, 或至刀子插進塔心拔出無沾粘即可。

5 MIN Pork Rice Bowl Tsuyudaku (with Extra Soup)

Ingredients:
75g (2.5oz) pork slices
50g (1.7oz) onion slices
50g (1.7oz) Maitake mushrooms (hen-of-the-woods)
Tsuyu (Sauce)
* 2tbsp. water
* 1tbsp. Sake
* 2tsp. sugar
* 1tbsp. soy sauce
* 1/2tsp. chicken soup stock powder https://amzn.to/2R3KEvn
* a hint of grated ginger if you like
1 bowl of cooked rice

Directions:
1. Cut pork into bite-size pieces. Slice onions. Remove the tough base of Maitake mushrooms and break into pieces.
2. Place Tsuyu (Sauce) in a microwavable dish, Add pork slices, onion slices, and Maitake mushrooms alternately.
3. Lightly cover with plastic wrap, and microwave at 500w for 2 min. Mix then microwave at 500w for another 3 min.
4. Serve on a hot bed of rice with the cooking liquid (as much as you want is ok), garnish with Benishoga (red pickled ginger) if you like.
