☘️ Hot and Sour Soup

Here, I would like to share this super easy, yet absolutely delicious recipe with you. I hope you’ll have a go at making it.
The main ingredients for this soup are tofu, bamboo shoots, dried shiitake mushrooms, dried wood ear mushrooms, carrots, mung bean vermicelli (glass noodles), chilli bean paste, vinegar etc; cooked in a clear soup. The dish is characterised by it's sour, spicy, fresh, salty and fragrant flavours.
This soup is rich in nutrients such as protein, calcium, iron, dietary fiber, minerals, and vitamins. It is an indispensable and appetising healthy food which will helps to relieve heat in the hot summer.
Since dried shiitake mushrooms and dried wood ear mushrooms may not be something that people in the UK are familiar with, I have used fresh shiitake mushrooms in this recipe instead, and omitted the dried wood ear mushrooms. However, the traditional ingredients can be found in any Chinese supermarket, Amazon, and Sous Chef.
Shiitake mushrooms are one of the most popular mushrooms worldwide. They are prized for their rich, savory taste and diverse health benefits. Compounds in shiitake may help fight cancer, boost immunity, and support heart health.
You’ll only need 4-5 dried shiitake mushrooms (乾香菇) and 1 piece of dried wood ear mushrooms (木耳). The cooking method for these two ingredients are different to the fresh alternatives, if you have managed to find them and want to use them, let me know and I’ll be happy to explain.
I have found all the suppliers for the above ingredients and have attached the images in the comments below if you do want to give them a go.
You can get the fresh shiitake mushrooms, bamboo shoots and mung bean vermicelli from Tesco, just make sure you search online to ensure they stock them in the branch that you visit.

✳️ Ingredients:
(serves 4)
200g medium firm tofu
250g fresh shiitake mushrooms
1/2 medium carrot
60g tinned bamboo shoots
50g mung bean vermicelli
4 slices ginger
1 tbsp sunflower oil
coriander- washed and chopped to garnish
✳️ Seasonings:
* 1 tsp salt
* 1 tbsp light soy sauce
* 1/2 tsp ground white pepper
* 2 tsp sugar
* 2 tsp sesame oil
* 3 tbsp dark balsamic vinegar
* 2 tbsp white balsamic vinegar
* 1 tbsp chilli bean paste (豆瓣醬 Doubanjiang - you can add more if you can handle the heat)
* 2000ml water
* 1 tbsp vegan oyster sauce / vegan stir-fry sauce
* 3 tbsp corn flour
* 3 tbsp water
✳️ Method:
1. Soak the mung bean vermicelli in warm water until soft, then use scissors to cut into sections.
2. Gently wash and pat dry the tofu and fresh shiitake mushrooms and cut both into thick strips.
3. Peel the carrot, and cut into thin strips. Drain the bamboo shoots, rinse and cut into thin strips.
4. Cut the ginger slices into thin strips then finely dice into small cubes.
5. Mix the corn flour and water together to make a slurry and leave to one side.
6. Heat a large saucepan over medium heat, add oil, then add ginger and fry until slightly brown, stirring gently. Next, add the bamboo shoots and carrots, stir-fry together for a while, add salt, soy sauce, pepper, sugar and sesame oil, and fry until soft.
7. Pour in the black vinegar, white vinegar, vegan oyster sauce and chilli bean sauce. Then, add water and bring to a boil. Turn to low heat and continue to cook for 5 minutes.
8. Put the tofu and shiitake mushrooms in, gently move around with chopsticks or wooden spoon, and add the vermicelli, stirring everything around. Turn to medium-high heat and bring to a boil.
9. Whisk the corn flour water into the soup, a little bit at a time until you reach the desired consistency. If you like it thicker, add a bit more, or if you prefer thinner, add a bit less. After the soup is boiled, taste it and adjust the seasoning, then garnish with coriander.

有說在麻雀枱上可以看清一個人的品格,其實在飯枱上打邊爐亦一樣,將喜歡的食材放入鍋中煮熟就吃看似簡單,其實當中有不少需要自律的禮儀,遇上一個「唔生性」,真的令你食之無味,棄之可惜⋯⋯
.一次過將所有食材下鍋
明明只有三、四個人打邊爐,有人偏偏喜歡將整碟食材倒入鍋中「一鑊熟」,「一餅」肥牛下鍋表面熟中間生,吃到最後又會煮得過熟被嫌棄,有些食材又會煮到糊掉,完全失去「烚下烚下」的樂趣。
.洗筷子
「烚下烚下」時用公筷,食用時用另一雙私筷是衛生的做法,亦可避免用同一雙筷子處理生熟食物交叉感染,遇著一個懶換筷子、甚至喜歡啜筷子的朋友,真是叫人倒胃口。
.鴛鴦鍋不再鴛鴦
鴛鴦鍋的存在,方便同枱中有吃辣和不吃辣的朋友,清湯鍋留來灼菜亦可吃得健康,有人卻嫌麻辣鍋太辣,從麻辣鍋中挾起食物然後放入清湯鍋中「過水」,你有想過其他人的感受嗎?
.水終於滾了有人加生料
人多打邊爐,或者遇著一個火力弱的爐,下生料後等水滾需時,終於等到煮滾可以吃了,鍋蓋一開有人卻立即加一堆生料,全枱人又要呆等一輪。
.咬一口發現未熟丟回鍋中
人多打邊爐,食物生熟情況不易掌握,有人挾起食物咬一口後發現未熟,立即丟回鍋中繼續煮,除非是家人能包容你「食你口水尾」,否則以後應該無人再約你打邊爐。
.將自己碗內的湯倒入鍋中
這個行為匪夷所思,但好似又確實存在過,就是有人將自己碗內吃剩的湯汁倒入鍋中!驚嚇度達十級!你身邊有這種朋友嗎?

Irritable behaviors during hotpot
People say we can always tell a person’s character during a game of mahjong. This also applies to hotpot sessions. Putting our favorite ingredients into the hotpot to cook does not seem complicated, but it can show how disciplined people are, as well as their manners.
It would be an undesirable experience if we come across someone who does not observe all these social etiquettes……
. Dumping all the ingredients into the hotpot in one go
Even when there are only three or four persons sharing one hotpot, certain people just love to dump all the ingredients into the hotpot and have them all cooked in one shot. While some ingredients like beef will remain not fully cooked on the inside, some are overcooked and turned mushy. Such action also takes away the joy of rinsing the ingredients little by little.
. ‘Washing’ the chopsticks in the hotpot
It is always hygienic to use a pair of sharing chopsticks for cooking the ingredients in the hotpot, and eat using our own pair of chopsticks. This can avoid any form of contamination during the process. It would be unappetizing to see someone who does not switch chopsticks - or even worse, someone who likes to bite his or her chopsticks constantly.
.Two-flavored hotpot no longer ‘two-flavored’
The two-flavored hotpot, or as the Chinese called ‘yuanyang’, caters to the needs of two group of friends – those who can and those who cannot eat spicy food, and the clear soup should also be used to blanch vegetables for healthy eating. However, when some people feel the mala soup is too spicy, they would insist on ‘rinsing it’ in the clear soup first before eating. What would the others think of this behavior?
. Someone adding raw ingredients into the hotpot when the soup is boiling
When many people share one hotpot, or when the stove is not giving enough heat, the soup will take a longer time to boil. Just when we are about to take out the cooked ingredients and eat, someone just randomly adds more raw ingredients into the soup, causing the waiting game to repeat all over again.
. Dumping uncooked ingredients back into the hotpot
It is difficult to determine whether the ingredients are fully and partially cooked, especially when it involves many people. Imagine someone taking a bite of the food, realizing it is still not fully cooked, and dumping it right back to the hotpot! Our family members might tolerate this behavior but your friends would probably think twice before inviting you to another hotpot session.
. Pouring the remaining soup in the bowl into the hotpot
This might seem unbelievable but yes, some people would actually clear the soup in their bowl out by pouring it back into the hotpot! Shock level: 10/10. Do you have such friends?

We are making Tofu Don, a tofu bowl, which is a delicious way to enjoy plenty of chilled, smooth tofu. We'll also introduce how to make delicious dashi soy sauce. This is an easy and very tasty rice bowl that you don't need to cook during the hot season. You can just arrange what you have in the refrigerator on the rice bowl.
How to Make Tofu Don

[Tofu Don (Tofu Bowl)]
Steamed Rice, as much as you like
Used Katsuobushi (Bonito Flakes), saved after making the dashi stock
200g Soft Silken Tofu, 1/2 pack (7.1 oz)
1 Egg Yolk, optional
20g Soft Shirasu Whitebait, kamaage shirasu (0.7 oz)
20g Takanazuke, pickled takana leaves fermented with lactic acid, substitute: suguki, nozawana or hiroshima pickles (0.7 oz)
Tenkasu, crunchy bits of deep fried flour-batter
Spring Onion Leaves
Toasted White Sesame Seeds
[Dashi Soy Sauce] (about 150 ml/5.1 fl oz, substitute: regular soy sauce or mentsuyu, noodle soup base)
80ml Mirin (2.7 fl oz)
100ml Soy Sauce (3.4 fl oz)
50ml Water (1.7 fl oz)
3g Dashi Kombu Seaweed, shredded used kombu can be used in miso soup (0.11 oz)
10g Katsuobushi (Bonito Flakes) (0.35 oz)
Recipe Notes:
As a substitute for the takana pickle, there are lactic acid fermented pickles such as Kyoto's Suguki, Hiroshimana, and Nozawana pickles.
When using this dashi soy sauce as a dipping sauce for soba or udon noodles, dilute 1 part dashi soy sauce with 2 parts cold water.
When making the dashi soy sauce, you can add sake to the mirin instead of the water and evaporate the alcohol together. The sake will add a savory flavor to the dashi soy sauce, making it even more delicious.
You can store the chopped spring onions in the refrigerator for 3 to 4 days. Line a paper towel in a food storage container and place the spring onions in it.

Somen is perfect refreshing food for hot and humid summer season :)
Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).
Kids requested me to make Edamame and Corn Nagashi Somen (Flowing Somen). Edamame and corn were pretty easy to catch and eat 😉 Kids enjoyed it very much 👍

Dilute with water as instructed on its package.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water.
NOTE: You can put about 100g (usually 2 bundles) of Somen noodles in the machine or the noodles won't flow.
((Somen Dipping Sauce from scratch))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.

How you make the batter is the key. My mom uses Takoyaki flour and tasty Dashi broth, then makes the batter bit loose and less salty. In this way we can eat Takoyaki forever with No Sauce 😂👍
Serving Takoyaki with Dashi broth is our typical family style. Sometimes we put sauce then pour over the Dashi but this time, no one used the sauce because the batter was a success. Takoyaki is a popular Japanese ball-shaped snack made of batter, diced octopus, tenkasu (tempura scraps), beni shoga (red pickled ginger), and aonegi (green onion), topped with okonomiyaki sauce, mayonnaise, aonori (green laver), and katsuobushi (bonito flakes). Slightly crispy on the outside and creamy inside.

How to Make Takoyaki
Difficulty: Easy
Time: 30min
Number of servings: 40 pieces
Necessary Equipment:
Takoyaki pan
spouted measuring cup
oil brush (you can make it with paper towel, chopsticks, and rubber band)
steel pick (long bamboo pick is ok)
Ingredients:
200g (7oz.) takoyaki flour
2 egg
600cc water
cooking oil
Fillings
* diced boiled octopus
* chikuwa (fish cake) if you like
* beni shoga (red pickled ginger)
* tenkasu (tempura scraps)
* aonegi (green onion)
Sauce
* okonomiyaki sauce
* mayonnaise
* katsuobushi (bonito flakes)
* aonori (green laver)
Directions:
1. In a bowl, mix takoyaki flour, eggs, and water (add little by little).
2. Heat takoyaki pan and grease the molds with cooking oil.
3. Pour batter into the molds to the full.
4. Put beni shoga, tenkasu, aonegi, and octopus or chikuwa in each mold.
5. Wait a little until batter on the edge of the molds become cooked.
6. Flip takoyaki with a pick, fix the form by flipping, and cook until golden brown.
How to serve:
1. Place on a plate and top with okonomiyaki sauce, mayonnaise, katsuobushi, and aonori.
2. With dashi broth. (boil 200cc water and 2 tbsp. Kamada dashi soy sauce**)
3. With grated radish and ponzu sauce.
4. With sausage. (cut sausage into half. finely cut outer curve of the sausage and cook. place takoyaki and draw face with nori and ketchup.)
