【#小暑】天氣炎熱來吃海鮮
⭐️清熱配搭口味清新
⭐️泰式風味最適合夏日
#節氣煮煮Cin
小暑養生重點:「清熱消暑,健脾利濕」
椰青:清熱解暑,生津止渴
花蛤/蜆:滋陰化痰,利水止渴
椰青煮花蛤
材料:椰青1個、花蛤/蜆1斤(約600g)、上湯200毫升、香茅1根、南薑1角、紅蔥頭3枚、青檸兩個、檸檬葉數片、九層塔少量、鹽及糖少量
做法:
1. 所有新鮮材料洗淨,水中加入3-4茶匙鹽,加入花蛤/蜆以浸泡30分鐘吐沙後備用。
2. 用大刀底尖位沿椰青頂邊劈開,椰青水倒出及刮起椰肉備用。香茅以刀背拍打後切段,南薑切片,紅蔥頭切絲備用。
3. 以少量油爆香紅蔥頭至金黃色,加入南薑及香茅炒香,加入花蛤/蜆、椰青水及椰肉以及上湯,調中大火,蓋上煲煮至殼打開。
4. 加入檸檬葉,擠青檸汁後試味,隨口味加上少量鹽及糖調味,上碟時加入九層塔即成。

Clam: Nourishes yin and relieves phlegm, promotes fluid production and relieves thirst.
Thai young coconut clam
Ingredients: 1 young coconut, 600g clam, 200ml chicken broth, 1 lemongrass stalk, 1 segment of galangal, 3 shallots, 2 limes, kaffir lime leaves, Thai basil, salt
Preparation:
1. Rinse all the fresh ingredients. Add 3-4 tablespoons of salt into cold water and soak the clams for at least 30 minutes to release any grit and sand.
2. Cut off the top of the young coconut, set aside coconut water and scraped coconut meat. Tap the lemongrass stalk with the back of knife, slice into pieces. Slice the galangal and shallots into shreds.
3. Heat the pan with oil, add lemongrass, galangal and shallot, cook till golden brown and fragrant. Add clams, young coconut water and chicken stock, return to a boil with medium to high heat until the clams fully open.
4. Add kaffir lime leaves, season with lime juice, salt and sugar. Garnish and serve with Thai basil.

白酒蛤蜊義大利麵
材料
義大利麵 200公克 spaghetti 200g
蒜末 10公克 garlic 10g
洋蔥末 30公克 onion 30g
蛤蜊 600公克 clam 600g
白酒 1大匙 white wine 1tbsp.
水 500ml water 500ml
鹽 1/4茶匙 salt 1/4tsp.
九層塔 適量 basil leaves q.s.
作法
1. 熱鍋,倒入少許油,加入蒜末與洋蔥末炒香。
2. 放入蛤蜊、白酒與水,蓋上鍋蓋燜煮至蛤蜊打開。
3. 取出蛤蜊,鍋中留下湯汁。
4. 蛤蜊湯汁煮滾,放入義大利麵煮軟後拌開,再轉小火煮約15分鐘。
5. 放入蛤蜊與九層塔炒勻即可。

Blood cockles - colloquially known as see hum or si hum - were really cheap back in the days. They used to be 50 cents (Singapore dollars) for a kilo but now it's about S$14 per kilo. See the difference? According to Channel News Asia, cockles are becoming more expensive because of pollution and over-harvesting. Hopefully with aquaculture, the supply of cockles can once again be bountiful. Due to the surge in pricing, usually it will cost you quite a bit if you were to order this at a food centre or restaurant. That's why we decided to share this recipe with you so that you can easily make this dish whenever you see cockles being sold at a market near you. If you are a fan of cockles from Putien Restaurant, you may want increase the amount of sugar used because their version is a lot sweeter than ours.

1.無油煎魚
標:不怕油爆的煎魚法
標:小火加蓋魚肉鮮嫩不散
材料
虱目魚肚 1片 milkfish 1pcs
鹽 適量 salt q.s.
作法
1. 熱鍋,魚兩面撒上鹽,魚肚向下,以小火蓋上鍋蓋燜煎約3分鐘。(小字—魚皮向下可先煎出魚油,利用魚油將魚肉煎香)
2. 再翻面,再煎3分鐘即可。
2.酒蒸蛤蜊
材料
蛤蜊 200公克 clam 200g
米酒 2大匙 cooking rice wine 2tbsp.
蒜末 15公克 garlic 15g
奶油 30公克 butter 30g
作法
1. 蛤蜊放入鍋中,加入蒜末、奶油、米酒。
2. 蓋上鍋蓋,以小火燜蒸至蛤蜊都差不多開口,約5分鐘。
3. 倒入大盤中即可。
3.無油煎牛排
標:小火慢煎香酥不焦
標:加蓋燜留住肉汁
材料
牛排 2塊 steak 2pcs
鹽 適量 salt q.s.
黑胡椒粉 適量 black pepper powder q.s.
作法
1. 熱鍋後,牛排放入鍋中,蓋上鍋蓋,以小火煎3分鐘。
2. 撒上鹽與黑胡椒粉,翻面再煎3分鐘。
3. 再撒上鹽與黑胡椒粉,將牛排側邊煎上色即可。
4.蒜香煎蝦(煎)
材料:
鮮蝦10隻 shrimps
奶油適量 butter qs.
蒜末25g garlic
鹽1/4茶匙 salt 1/4tsp.
黑胡椒粉少許 ground black pepper qs.
米酒1/2大匙 cooking rice wine 1/2tbsp.
九層塔碎少許 basil leaves qs.
作法:
1.先將蝦鬚與尖嘴剪去。
2.鍋中依序放入蝦子,撒上鹽、黑胡椒粉、蒜末、米酒,再擺上奶油。
3.蓋鍋蓋,開中火煎煮2分鐘。
4.開蓋,撒上九層塔碎,再煎1分鐘即可。
5.脆酥煎餃
小標:原味煎餃也很好吃
鍋具小標:條紋鍋面設計 減少食材沾黏
材料:
冷凍水餃 18顆/ frozen dumplings 18pcs
水 適量/water q.s.
油 1茶匙/oil 1tsp.
作法:
1. 將冷凍水餃排放入鍋中,倒水至約1/3處,再加入油。
2. 蓋上鍋蓋,用中小火煎至水收乾即可。(小字:加蓋熱循環效果更好,熟得均勻)
6.蔥花蘿蔔絲煎餅
中筋麵粉:糯米粉:水=4:1:5
基礎麵糊(1份)
材料:
中筋麵粉320g plain flour
糯米粉80g sweet rice flour
蛋1顆 egg 1
鹽1小匙 salt 1tsp.
糖1/2小匙 sugar 1/2tsp.
白胡椒粉1/2小匙 1/2tsp.
水400㏄ water
作法:
將麵粉和糯米粉混合,再依序加入其餘材料,充分攪拌均勻。即為1份基礎麵糊。
材料:
基礎麵糊1份 batter 1
白蘿蔔絲300g radish
蔥花50g scallion
蝦米20g
鹽1大匙 salt 1tbsp.
沙拉油少許 oil
作法:
1.白蘿蔔絲加鹽1大匙拌勻,靜置5分鐘後,幾乾水分。
2.基礎麵糊中加入白蘿蔔絲、蔥花、蝦米拌勻。
3.靜置5分鐘。
4.加入沙拉油拌勻。
4.熱鍋適量加油,舀入適量麵糊,蓋上鍋蓋。
5.中小火煎至麵糊邊緣凝固變色(約10分鐘以上),即可翻面,續煎熟至兩面金黃。
7.蘑菇醬燜麵
材料
油麵 200公克 alkaline noodle 200g
水 100ml water 100ml
番茄醬 2大匙 ketchup 2tbsp.
烏醋 1茶匙 black rice vinegar 1tsp.
糖 1/2茶匙 sugar 1/2tsp.
蘑菇 20公克 mushroom 20g
蒜末 10公克 garlic 10g
奶油 少許 butter q.s.
雞蛋 1顆 egg 1pcs
作法
1.煎鍋中放入水、番茄醬、烏醋、糖煮勻,再放入蘑菇、洋蔥末、蒜末煮至滾沸。
2.再放入油麵拌開,蓋上鍋蓋以中火燜煮約2至3分鐘收汁。
3.鍋面撥出一小空間,放入奶油煮化,打入雞蛋煎至蛋白凝固即可。
