在超市貨架上林林總總的橄欖油，
如何能分辨它們的種類？
如何閱讀標籤？

1. Extra-virgin Olive Oil -🇮🇹Extra Vergine di oliva
特級初榨橄欖油/特純初榨橄欖油

最頂級的橄欖油，是選用新鮮採摘的橄欖果實，由採收、清洗、壓榨整過製作過程必須於「24小時」內進行。由於它是在室溫下(不可以高於攝氏27度)榨取，不經任何加熱處理(🇮🇹Estratto a freddo 🇬🇧 Cold extraction)，因此又稱為「冷壓初榨橄欖油」。 歐盟組織規定，特級初榨橄欖油每100克的油酸度(Oleic Acid) 必須低於0.8%，含游離脂肪酸極低，能保持橄欖的天然果香，味道有橄欖天然的苦味及辛辣味，色澤黃金帶天然的青綠色，而維生素、多酚類等營養價值也能夠保持在最高水平。

2. Virgin Olive Oil 初榨橄欖油

優質的橄欖油，但次於特級初榨橄欖油。跟特級初榨橄欖油的生產程序大致一樣，也是經橄欖果首次冷壓而成，經壓榨的橄欖油，油酸度高於0.8%的將被分級為初榨橄欖油(Virgin Olive Oil)，而在歐盟組織規定下，初榨橄欖油每100克的油酸度必須低於2%。初榨橄欖油的味道比特級初榨橄欖油溫和，仍保留豐富的營養價值。

互聯網及坊間有資料表示Virgin Olive Oil是「次榨橄欖油」，是使用經特級初榨橄欖油壓榨過的橄欖果肉再次壓榨而成，這並不正確。Extra Virgin Olive Oil 跟Virgin Oil 的都是屬於初榨橄欖油，我們可以從其名字「Virgin」 得知，而它們最大分別，只是在於油酸度(Oleic Acid) 的含量比例。

3. Pure Olive Oil/Olive Oil 純橄欖油/橄欖油

很多消費者都以為「純橄欖油」、「純正橄欖油」或「100% Pure」(Olive Oil or Pure Olive Oil) 是最優質的橄欖油，這是錯誤的。「純橄欖油」其實是經過精練(加熱及化學處理) 的橄欖油，己失去了橄欖果實的天然香氣、味道、顏色及營養價值，所以需要混合約10%-20%的特級初榨橄欖油或初榨橄欖油以提昇味道，特點是顏色較淺，味道較清淡，營養價值大減。「純」及「100% Pure」的字樣只是表示是百分百由橄欖製造而已。

4. Extra Light Olive Oil 清淡橄欖油

是由精煉橄欖油與極少量特級初榨橄欖油或初榨橄欖油混合而成的。在銷售商的商業考量下，引導了崇尚窈窕、輕盈的消費者誤以為標籤「Extra Light」或「Light」的橄欖油是代表低脂肪、低熱量，事實上這跟熱量並無關係，這種橄欖油的熱量跟一般橄欖油沒有多大分別。只是因為這種橄欖油所含的精練油成份超過90%，已失去了橄欖果實的天然口味及營養成份，味道十分清淡而取名「清淡橄欖油」。 屬低質量的橄欖油。

怎樣閱讀意大利橄欖油的標籤？

意大利在橄欖油出口、進口及消費量均是世界第一，由於需求量大，在市面上發售的意大利橄欖油並非一定百分百來自意大利，唯在歐盟組織嚴謹的規定下，消費者可透過正確的閱讀標籤認清產品詳情。學懂閱讀標籤，選擇適合自己的優質橄欖油。

Bottled in Italy? Packed in Italy ? Imported from Italy?

當你在超市選購橄欖油的時候，可留意一些大量生產的知名品牌在標籤上有否以上字眼，若有的話，你可以知道這些品牌並不是百分百來自意大利，而是精選來自不同國家的橄欖油，入口意大利再進行混合、入樽及包裝工序，再行銷至世界各地。這些橄欖油的生產地除了意大利外，通常有西班牙、希臘、突尼西亞、土耳其等等。可以仔細留意標籤的一角或背面，有否列明橄欖油的來源地。由於這些橄欖油來自不同國家，種植方法、氣候、土壤及製作工序亦有所不同，品質參差，在輸入意大利再經過混合再包裝後，質素未能得到百分百的保證。

要購買真正意大利製造的橄欖油，除了可認明標籤上的DOP產地認證外，亦可留意瓶身有否註明「Produced in Italy」、「Prodotto in Italia」、「100% Italiano」、「100% product of Italy 」等字樣。

怎樣儲存橄欖油？

橄欖油怕光、怕熱及空氣接觸 ，為避免陽光直接照射，所以選購橄欖油時應選擇包裝為鋁罐或深色玻璃瓶裝為最優。陽光及高溫會使橄欖油的風味及營養成份流失，所以應存放在陰涼的地方。雖然橄欖油並無添加任何化合物及防腐劑，但若能妥善仔存放，保質期能達18個月之久。

特級初榨橄欖油適合高溫煮食嗎？

一般人認為特級初榨橄欖油只適合用作調配沙律油或拌意大利麵時使用，並不適用於高溫煮食的煎、炒、煮、炸，這是一個錯誤的觀念。這是因為特級初榨橄欖油是最頂級的橄欖油，基於成本高的關係，入口商同時購入成本低的Pure Olive Oil 或 Extra Light Olive Oil，並引導消費者Pure Olive Oil 及 Extra Light Olive Oil 能夠高溫煮食，而特級初榨橄欖油只適合醃肉、製作沙律或涼拌等美食，以提高銷量。

事實上，優質的特級初榨橄欖油是冷壓而成，未經任何加熱處理，游離脂肪酸很低，起煙點達210度，高於油炸食物的理想油溫180度，因此特級初榨橄欖油是很健康及全面的食用油選擇。

Red Bull 400 Titisee-Neudstat 2021 Race Summary

Heat 2 - 1.12pm. There were a total of 13 Heats (Male), 2 Heats (Female) with each heat up to 50 participants and with a gap of 12 min. The winner of each heat auto Q to Final and next 37 fastest will be q into Final as well.

I was pretty confident on getting into the final, and during the heat, my main objective was to understand the course better, find out the best lane to go up and win the heat to secure the Final Run. The course were wet due to the rain two days ago, the grass at some part are long and deep in. Best is to stay on the part where the grass were short and you can see the mud as it provide more grip.

Took a sachet of Mitoceps an hour prior to my run. I was trying not to go fast but there were one guy ran pretty fast from the start. So I decided to keep a close contact with him and waiting for him to slow down 😅

Indeed after the first 200m mark, I got him and ran past him then got into a steady pace. He stayed right behind me and I continue the same pace and crossed the finishing line first with a time of 4:53 min.

Throughout the run, I was so happy to hear the cheer from the spectators, saying "Go Malaysia". The emcee mentioned few times about my name and from Malaysia as a towerrunner.

After the heat, I went down to the resting zone and did a cold down jog and quickly change and had light lunch provided by the organizer.

Met new friends and we have great chat. There were one female runner came and asked me for some tips and I shared with her some tips. We were have a conversation about the race course and how we can improve it in the final.

After that, I took a 30 min nap with Edifier W820NB on and listen to instrumental music, and with TK sleep mask. To be honest, before this event, I felt mentally exhausted after all the traveling here and there and competitions. It was really tough to go through this stage, where the mind is no longer ready to race. Didn't have enough rest plus traveling with a 3 wheels luggage 😂

UHA味覚糖「なが〜い さけるグミ 巨峰」をまるまる一本使って、レアチーズケーキをつくりました。
ゼリーに閉じ込めた3つの飾りは水引梅結びにした、さけるグミです。梅結びは、縁起が良いとされ、水引きなどでよく見かける結び方です。梅結びを大量に使って、夏に作っていた娘の工芸作品が かわいかったのに影響され、ケーキにしてみました。
さけるグミのお陰で、思いっきり巨峰味のレアチーズケーキができました。
この手の面白くておいしいお菓子、ほんとにすばらしいな。

*レシピ*（直径 14.5 cmの丸型 1個分）
１．なが〜い さけるグミを4つに割き、梅結びを作る。

ボトムを作ります
２．ビスケット 70gを細かく砕く。
３．溶かした無塩バター 30g（若干崩れやすかったので、35gにしてみてください）を入れ混ぜる。
４．型に敷き込み冷蔵庫で冷やしておく。

レアチーズケーキを作ります
５．水 35gに粉ゼラチン 10gを振り入れておく。
６．室温に戻したクリームチーズ 100gをなめらかになるまで混ぜる。
７．砂糖 60gを入れ混ぜる。
８．無糖ヨーグルト 200gを入れ混ぜる。
９．（5）を600wの電子レンジで20秒ほど加熱し、ゼラチンを溶かす。
１０．（8）を混ぜながら（9）を入れる。
１１．半量（200g程度）を取り分ける。
１２．（1）の梅結びを3つ残し、残りのさけるグミ（22g）を耐熱容器に入れ、水を10g加える。
１３．600wの電子レンジで20秒ほど加熱し、さけるグミを溶かす。
１４．（11）の半量の片方に（13）を入れ混ぜる。薄紫になるように着色しました。
１５．（4）に流し入れ、1時間弱冷蔵庫で冷やし、表面を固める。
１６．（15）に（11）の残りの半量を流し入れ、冷蔵庫で冷やし、表面がうっすら固まりかけたら（1）の梅結びを3つのせ、表面を固める。

上部のゼリーを作ります
１７．80℃程度のお湯 150gに粉ゼラチン 6gを入れ溶かす。
１８．砂糖 30gを入れ溶かす。
１９．レモン汁 5gを入れ混ぜる。

２０．冷ました（19）を（16）に流し入れる。
２１．冷蔵庫で冷やし、しっかり固める。
２２．でけた。
むちゃくちゃ巨峰味。そして、さけるグミがフォークで切れるかたさになってて、むちゃくちゃ感謝したわ。

I made a no-bake cheese cake using a whole UHA Mikakuto "Nagaai sakeru Gummy Kyoho".
The three decorations trapped in the jelly are gummies tied in mizuhiki plum knots.
Plum knots are said to be auspicious and are often seen in mizuhiki. I was inspired by my daughter's cute craftwork that she made during her summer vacation using a lot of plum knots, so I decided to make it into a cake. Thanks to the gummy candies, I made a no-bake cheese cake with a Kyoho flavor. This kind of interesting and tasty snack is really wonderful.

*Recipe* (for 1 round mold 14.5 cm in diameter)
1.Divide the gummy candy into four pieces and make a plum knot.

Make the bottom.
2.Crush 70g of biscuits into small pieces.
3.Mix in 30g of melted unsalted butter (it was a little crumbly, so try 35 grams).
4.Place in a mold and chill in the refrigerator.

Make the rare cheesecake.
5.Sprinkle 10g of powdered gelatin into 35g of water.
6.Mix 100g of cream cheese at room temperature until smooth.
7.Mix in 60g of sugar.
8.Mix in 200g of unsweetened yogurt.
9.Heat (5) in a microwave oven at 600 watts for about 20 seconds to dissolve the gelatin.
10.Add (9) while mixing (8).
11.Set aside half the amount (about 200g).
12.Leave 3 plum knots from (1), put the remaining gummy candies (22g) in a heat-resistant container, and add 10g of water.
13.Heat in a microwave oven at 600W for 20 seconds to melt the gummy.
14.Add (13) to one half of (11) and mix. I colored it so that it would be light purple.
15.Pour into (4), cool in the refrigerator for less than 1 hour, and harden the surface.
16.Pour the other half of (11) into (15), cool in the refrigerator, and when the surface is about to harden, put three plum knots from (1) and harden the surface.

Make the top jelly.
17.Add 6g of powdered gelatin to 150g of hot water at about 80 ° C and dissolve.
18.Dissolve 30g of sugar in it.
19.Mix in 5g of lemon juice.

20.Pour cold (19) into (16)
21.Refrigerate and harden.
