Teochew Chiu Chow style Prawns cooked-marinated in the Crab Soup, that was used to make the Cold Flower Crabs. 又去我香港最愛的潮州店 + 外賣店之一.. 今次汕頭老闆入得太多海鮮做凍龍蝦, 因為好多客人訂咗凍龍蝦同凍花蟹, 所以冇做到 蟹湯浸瀨尿蝦 Mantis Shrimps.
蟹湯浸蝦 都好好食而且神奇地咁多年來未加過價. 🤔
*題外話 "花蟹" 係叫做 Flower Crab, 也算是 Swimmer Crab 一種 🦀. 唔知點解, 近排咁多人都寫叫做 Flowery Crab 🔤. 搞到連 Worlds50Best 個網址都寫錯了 🤔

Steamed Crab 🦀 with Cuttlefish & Minced Pork Patty 🤤🙈
This similar style recipe is more prevalent in rest of Canton & also traditionally served in Chiu Chow side, but even there less customers order it these years, as they concentrate more on Flower Crabs too. Where Crab is mixed with Steamed Pork Patty, also involving some Chinese wine, etc. Some famous chef's restaurant in Shenzhen uses his own proprietary add ons too, but guess better let him explain it himself as a proprietary trade secret 😬. Also note the use of 目魚 here with Pork is this restaurant's own Shanghainese accent to this dish
To be eaten with rice. Micro variations of the similar things.
*Note pls call to ensure they have this item on the day or night. It's less seasonal but still subject to micro seasonal fluctuations in between

Blood cockles - colloquially known as see hum or si hum - were really cheap back in the days. They used to be 50 cents (Singapore dollars) for a kilo but now it's about S$14 per kilo. See the difference? According to Channel News Asia, cockles are becoming more expensive because of pollution and over-harvesting. Hopefully with aquaculture, the supply of cockles can once again be bountiful. Due to the surge in pricing, usually it will cost you quite a bit if you were to order this at a food centre or restaurant. That's why we decided to share this recipe with you so that you can easily make this dish whenever you see cockles being sold at a market near you. If you are a fan of cockles from Putien Restaurant, you may want increase the amount of sugar used because their version is a lot sweeter than ours.

I finally got to chow down on the bone marrow I have been craving. I'm MMMMMMM'ing all over the place! We paired our bone marrow with cow knuckles and rice. This is such a savory Mukbang! I am in heaven y'all.
***Note: For those of you who don't know what bone marrow is, it is the fatty tissue located in the center of the bones. Usual from cows, lambs, caribou, or moose; the ones I bought are from cows. It is a spongy texture and has a buttery taste, which is why bones make for a good ingredient for soup broths.
