欠幹勁?以祛濕茶抗春困!
春天到了,煙霧繚繞的景色充滿詩意,但人總是欠缺幹勁、呵欠連連,是作病嗎?中醫理論認為這是人受到天氣潮濕的影響。濕有分外濕、內濕,外濕多與天氣有關,例如香港比較潮濕或常吹冷氣、坐草地或淋雨,都會令我們受外濕的影響。引致內濕多因為不良的飲食習慣,例如經常飲食生冷、嗜甜,或者經常都在滋陰補身,總在湯或糖水中加入花膠、雪耳等膠質重的食物,進食過量也會導致身體聚濕。所以在春天要適量祛濕,但祛濕前要分清自己是寒濕還是濕熱,因為兩種調理方法大不同!
寒濕人症狀:
- 舌淡紅,舌苔色白膩
- 女性白帶偏多
- 大便稀爛或如水狀
- 怕冷
- 手腳冰冷
寒濕人祛濕茶療:香茅炒米水
功效:暖胃驅寒,健脾祛濕,紓緩怕冷、困倦、容易腹瀉等寒濕症狀。
材料:香茅1支、炒米2湯匙
做法:香茅以刀背輕輕拍碎,切段備用。杯內加入800毫升熱水,加入所有材料泡5分鐘即可。連渣倒進保溫瓶,此茶能反覆沖泡至味淡。建議一星期飲用2-3天,連續兩星期為一個療程。

材料:炒白米
功效:暖胃散寒、溫暖四肢
濕熱人症狀:
- 舌偏紅,舌苔偏黃膩
- 女性白帶偏多,色偏黃味重

- 眼乾目赤
- 多面油,容易出暗瘡粉刺
濕熱人祛濕茶療:土茯苓菊花茶
功效:清熱袪濕,紓緩皮膚泛紅、痕癢、眼垢、四肢重墜等濕熱症狀。
材料:土茯苓12克、菊花9克
做法:土茯苓切碎,材料洗淨放保溫瓶,以熱開水沖洗一遍,注入熱開水焗10分鐘即可。此茶可反覆沖泡至味淡。建議一星期飲用2-3天,連續兩星期為一個療程。
注意:孕婦不宜飲用。

Feel unmotivated? Combat spring fatigue with dampness dispelling tea
Spring has arrived, and the view around us has become more lively and poetic. Yet, some of us may seem to lack enthusiasm and tend to yawn regularly. Is something wrong? From Chinese Medicine perspective, dampness and humidity of the weather can affect our bodies.
There are two types of dampness - internal and external. External dampness is closely associated with the weather. For instance, Hong Kong’s humid weather, or when an individual stays in an air-conditioned environment, sits on grass, or gets wet in the rain. These are examples of how external dampness around us.
As for internal dampness, it is normally caused by unhealthy dietary habits such as eating and drinking raw, cold, and sweet food and beverages. Those who like to add gelatinous ingredients such as fish maw and snow fungus into their soup or dessert to nourish the body can also cause dampness to accumulate in the body.
Hence, in order to eliminate dampness from the body during spring, it is important to understand if we are experiencing damp cold or damp heat as the treatment for each condition is very different from each other!
Symptoms of damp cold
- light red tongue with white tongue coating
- ladies have increased vaginal discharge
- loose or watery stool
- aversion to cold
- cold limbs
Healing tea for damp cold: Fried rice water with lemongrass
Effects: Warms the stomach and dispels cold, strengthens the spleen and dispels dampness. Relieves damp cold symptoms such as aversion to cold, drowsiness, and likelihood to have diarrhea.
Ingredients: 1 lemongrass, 2 tablespoons fried rice
Preparation: Slightly pound the lemongrass with the back of a knife and cut into sections. Add 800ml hot water into a cup. Add all the ingredients and steep for 5 minutes. The tea can be poured into thermos and re-browed until flavour weakens.
For best results, drink consecutively for 2-3 days. Two weeks for a treatment.
✔ CheckCheckCin Rice Water Recommendation: Fried Rice Water
Ingredients: Fried White Rice
Effects: Warms the stomach and dispels cold. Warms limbs.
Symptoms of damp heat
- Red tongue with yellowish tongue coating
- ladies have increased vaginal discharge that is yellowish with strong odor
- soft and sticky stool that is unusually smelly with feeling of heat in anus
- strong body odor
- red and dry eyes
- increased facial oil, prone to acne
Healing tea for damp heat: Smilax and chrysanthemum tea
Effects: Clears heat and dispels dampness. Relieves damp heat symptoms such as skin redness, itchiness, frequent eye discharge, heaviness in limbs.
Ingredients: 12g smilax, 9g chrysanthemum
Preparation: Cut smilax into pieces. Place all ingredients into thermos and rinse with hot water once. Add in hot water and steep for 10 minutes. This tea can be re-browed until flavour weakens.
For best results, drink consecutively for 2-3 days. Two weeks for a treatment.
Note: Not suitable for pregnant women.
✔CheckCheckCin Rice Water Recommendation: Dawn Rice Water
Ingredients: Red Rice, Coix Seed, White Rice
Effects: Suitable for the whole family to enhance physical wellbeing, especially those with a weak digestive system or with a phlegm and dampness body type.
Note: Not suitable for pregnant women.

說到法式甜點的 #台灣味,怎麼能不提萬華的 菓實日?
前幾年就為菓實日將台灣傳統文化融入法式甜點的創意心折,如果說巴黎有日式銅鑼燒店 Pâtisserie TOMO 作為日法甜點水乳交融之作的代表,(參見 #法式甜點學 p.156, 241, 336, 337),菓實日便似乎象徵著法式甜點真正能在台灣生根、與在地庶民文化結合開出的芳草奇卉。TOMO 以法式甜點技法重新詮釋日式甜點,外型融入了銅鑼燒與法式經典(如 Paris-Tokyo、檸檬塔、反轉蘋果塔、日本威士忌聖托佩塔等)、口味也兼有兩者之長;菓實日則不受限於單一類型糕點,代表作「紅龜」與「滷肉飯」大膽地用法式蛋糕(entremets)重新詮釋了他們心目中的台味與台灣精神。
數年前有幸品嚐過「紅龜」,一直對酒釀慕斯加紅豆餡既新奇又傳統的搭配念念不忘。這次趁著留在台灣的時間,又去拜訪了他們幾次,還剛好遇到他們在籌備線上課程期間,有幸飽覽饅頭主廚的精彩作品,並品嚐了這碗讓我一直好奇不已的「滷肉飯」。「滷肉飯」不僅有著法式甜點繁複多層的特質,還非常奇妙地揉合了台味無比的混搭創意:以蜜漬地瓜丁加焦糖醬模擬了滷肉飯的靈魂元素——滷肉與滷汁、米香白巧克力薄殼包裹著八角慕斯則成了晶瑩的米飯,最妙的是一匙舀起,還會意外地發現碗底的驚喜:肉鬆加自製酥菠蘿(奶酥、crumble)和生乳酪蛋糕體,最上方點上一片鮮綠的香菜,就變成了一碗技法完全是法式、但風味組合與精神卻100%台味的滷肉飯造型甜點。
前兩個禮拜我提到「是否有 #台灣神髓?」、「什麼是台灣神髓?」、「台灣神髓是否能被表現出來、又該怎麼表現?」,而菓實日的「滷肉飯」幾乎是不偏不倚地回答了這些問題。所有曾經必須對外國友人介紹台灣飲食的朋友,都會知道「台灣味」、「台菜」非常難以定義與畫出界線,因為台灣就是一個充滿了移民的島嶼、乘載了各種不同文化混雜的歷史,尋求「純粹的」台味很難不落入徒勞無功的下場。事實上台灣的活力,確實也來自於那種能將不同文化輕鬆且毫不做作地混搭、交融的自在。菓實日的「滷肉飯」恰恰體現了這種看似大膽奔放、但成果無比協調的餘裕。多達八層,且有香菜、地瓜、八角、肉鬆等台灣常見的料理元素,被妥貼地收納在這個「法式蛋糕」中。或許你無法一口氣分辨出每一種元素與層次,但它們卻如此完滿、歡欣地在嘴裡融合在一起,讓人不由得脫口而出「好吃」!哎呀,這不正是「台灣」和「台灣神髓」嗎?

Kajitsu, a hidden treasure in Taipei’s Wanhua district, is a little French pastry shop that makes Taiwan-inspired pastries. Chef Mantou transforms traditional festive pastry “Âng-ku-kóe” and “Lu Rou Fan”, Taiwan’s national dish, into French entremets. It is not unusual that food adapts to local tastes when it travel overseas. It takes place in different forms. Take French pastries for instance, adding local ingredients in the classics is one way. For example, Japanese chefs may use yuzu to replace lemon when making their tarte au citron. Employing foreign skills to revisit or transform one’s traditions is another. Pâtisserie TOMO in Paris that combines Dorayaki and classic French pastries serves one of the best examples. In Taiwan, Kajitsu is another interesting case.
“Âng-ku-kóe”, “red tortoise cake”, used to be the most popular local festive pastry in old times. It’s shaped as a turtle and coloured in red (sometimes in green) since turtles are a symbol of longevity, fortune, and fame in Taiwan. Red is also the lucky color here. In Kajitsu, chef Mantou tries to transform this traditional delight into a French entremets. She keeps the sweet red bean paste in the filling and matches it with sweet rice wine mousse to modernise the traditional taste. “Lu Rou Fan”, braised pork rice, one of the most beloved dishes that can be seen everywhere in Taiwan, is the chef’s another brilliant creation. Mantou takes sweet potato confit and caramel sauce to create a “trompe l’œil” of the famed braised pork and its sauce, star anise mousse hints the indispensable spice during the braising, the rice crispy and white chocolate coating shape the bowl of rice, and the unusual combination of pork floss and cheesecake gives a little surprise beneath. A refreshing coriander leave on top takes you to the humid summer of Taiwan instantly. Lots of seemingly conflicting ingredients are grouped together, resulting in, however, an incredible harmony. It is a fascinating dessert that can only be created by a Taiwanese pastry chef as it parallels Taiwan’s history and reflects its source of energy: immigrants with diverse origins, cultures and values cohabit and learn to evolve together.
As Kajitsu’s pastries are deeply rooted in the everyday life of Taiwan, there are also other intriguing creations such as petits fours with motifs of old tiles and the sweet “Doom crackers” inspired by the role of the god ruling the Qing Shan Temple in Wanhua district.

Normally, during the holy month of Ramadhan, our family focusses on our Ibadah more than food, because after all, Ramadhan is not a festival of food, but a time to bring ourselves closer to Allah and to remember those who are less fortunate...but today is an exception!
Words can’t describe how blessed I am, but I guess the video says it all. Forget all my favourite food which is there, but just listen to my father’s voice to hear how excited he is to surprise me! I wish you could see his proud face, and I’m glad that I’m the reason behind it!

INGREDIENTS
RED VELVET MUG CAKE
A. For the cake
70 gr all purpose flour
1/2 tsp baking powder
20 gram caster sugar
20 gram white chocolate
50 ml milk - at room temperature
45 ml oil
1/2 egg (2 Tbsp/ 25 gram) - at room tempt
1/2 tsp red food color
B. Cream cheese frosting
40 gram cream cheese - at room tempt
30 ml whipping cream 35% fat - cold
10 gram caster sugar
1/4 tsp vanilla extract
To make the frosting: whisk cream cheese until smooth, then add in whipping cream, sugar and vanilla, whip until the cream reaches stiff peak. Keep in the fridge until use. Note that this cream gets thicken and reaches stiff peak quite fast, particularly if you whip it with a mixer. So pay attention in the last minute (after the cream has reached soft peak) to avoid overwhipping the cream (which makes cream look curdled or lumpy).

CARAMELISED APPLE CAKE
A. For the cake
50 gram apples - chopped
25 ml (5 teaspoon) unsweetened yogurt - at room tempt
25 ml (5 teaspoon) unsweetened milk - at room tempt
40 ml (3 Tbsp minus 1 teaspoon) oil
1/2 egg (25 gram/ 2 Tbsp) - at room tempt
35 gram brown sugar
75 gr all purpose flour
1/2 tsp baking powder
1/4 tsp cinnamon powder
B. Caramelised apple
15 apple - chopped
8 gram (1/2 tablespoon) unsalted butter
8 gram (1/2 tablespoon) brown sugar

CHOCOMALLOW CAKE
20 gram unsalted butter
50 ml (3 Tbsp plus 1 tsp) milk - at room tempt
45 gr all purpose flour
15 gr natural unsweetened cocoa powder
1/2 tsp baking powder
35 gram caster sugar
25 ml (5 tsp) unsweetened yogurt - at room tempt
1/2 egg (25 gram/ 2 Tbsp) - at room tempt
1/4 tsp vanilla extract
Marshmallow

MOCHA BREAD PUDDING
100 gram old bread of any type (some popular examples are brioche, croissants, baguette, milk loaf)
2 egg medium sized (60 gr/ egg including shell) - at room tempt
40 gram caster sugar
135 ml milk at room tempt
150 ml whipping cream at room tempt
15 ml coffee (strong - can be substitute with 15 ml milk if you don't like coffee)
1/2 tsp vanilla extract
20 - 30 gram raisins
