米奶 vs 米水
近年植物奶大行其道,米奶亦是其中一種,米奶和米水哪一種比較好?來了解一下吧!
🥛 甚麼是米奶?
米奶是由白米及水製成的仿奶製品,不含奶類成份,其營養來自白米,相比牛奶熱量較低,不含動物性脂肪,適合素食人士、乳糖不耐症患者及減肥人士飲用;惟注意升糖指數高,糖尿病人士慎飲。
自製米奶
材料:白米1杯、開水5杯
做法:白米洗淨,放雪櫃浸泡一晚。倒走浸泡的水,將米及開水以高速攪拌機攪成糊狀,如顆粒比較大,可用隔渣袋過濾米渣,即成米奶。
*米和水的比例可按個人喜好而定
*用白飯可省卻浸米時間
🍚 甚麼是米水?
米水是用紅米、白米及生薏米煲成的養生飲品,從中醫角度看,白米及紅米皆有補氣養脾胃功效,亦能除煩渴、長肌肉、止腹瀉,加入少量生薏米取其健脾袪濕功效,加強去水能力。米水可紓緩容易疲倦、食慾不振、面色偏黃欠光澤及身體浮腫等問題,由於屬性平和,男女老幼皆適合,唯薏米會令子宮收縮,建議孕婦不下薏米服用。
自製米水
材料:紅米2湯匙、白米半湯匙、生薏米半湯匙
做法:將材料洗淨,鍋內加入約800-1000毫升水,以武火煮滾後調文火煮20-30分鐘。
備註:天天煲,一天飲完,不要過夜

🥛 What is rice milk?
It is a milk substitute made of white rice and water. In other words, it does not contain dairy product. The nutrient of rice milk comes from white rice, and it is lower in calories. Since rice milk does not contain animal fats, it is suitable for vegans, lactose-intolerant individuals, and those who wish to lose weight. Diabetic patients, however, should watch out for its sugar content.
Homemade rice milk
Ingredients: 1 cup of white rice, 5 cups of boiled water
Method: wash the white rice and soak it in water overnight in the refrigerator. Pour away the water, and replace it with boiled water. Pour the mixture into a high-speed blender to turn them into a paste. Use a sieve to remove the large bits of rice and retrieve the rice milk.
*Adjust the ratio of the rice and water according to personal preference
*Using cooked rice can reduce the hours of soaking
🍚 What is rice water?
Rice water is a healthy drink made from red rice, white rice, and coix seed. White rice and red white can both replenish qi, strengthen the spleen and stomach, relieve excessive thirst, promote muscle growth, and alleviate diarrhea. Coix seed can strengthen the spleen and dispel dampness. Rice water can improve fatigue, poor appetite, yellowish complexion that is lacking shine, and bloating. Due to its mild nature, it is suitable for the entire family with the exception of pregnant women as coix seeds can cause uterus contraction.
Simple healthy rice water
Ingredients: 2 tablespoons red rice, half tablespoon of white rice, half tablespoon of coix seeds
Preparation: rinse all ingredients thoroughly. Combine all ingredients with 800-1000ml of water and cook on high heat until boiling. Turn to low heat and simmer for 20-30 minutes.
*Rice water should be made fresh daily and should not be stored overnight as it will spoil easily.
*For pregnant ladies, they can omit coix seeds.
*Those with diabetes should consult a nutritionist accordingly.

認識低GI食物

CheckCheckCin:「升糖指數」(Glycemic Index,簡稱GI)是量度各類含碳水化合物(醣質)食物在進食後對血糖影響程度的數值,食物中的碳水化合物在消化道分解後,會轉化成葡萄糖進入血液,血糖會因而上升,各種食物的轉化速度不一樣,高GI的食物較容易消化而轉化成葡萄糖,一般都是纖維含量低、精緻度高、較為稀爛的食物,例如白飯、粥、麵包、蛋糕、南瓜、薯蓉、果汁、砂糖等,故進食後容易出現高血糖情況;而精緻度低、富含膳食纖維、蛋白質的食物大多屬於低GI,例如糙米、燕麥、全麥麵包、意粉、蘋果、粟米、白扁豆、紅腰豆、牛奶、乳酪等,延長飽足感時間,有助控制血糖。
從中醫角度來看,低GI食物多為粗糧,故建議平日多食用,包括全穀類食品,例如燕麥、藜麥、蕎麥、小米、粟米、五穀米、全麥麵粉等;要注意烹調時間越長GI值亦越高,食物越軟爛,消化時間就越短,血糖會升得較快。

Get to know low GI foods
“I was recently diagnosed with diabetes, and the doctor asked me to take note of the Glycemic Index of the foods I eat. Does that mean I have to start taking sugar-free foods?”
CheckCheckCin: Glycemic Index (GI) is used to measure the effects of carbohydrates (sugars and starches) on blood sugar levels. Once the carbohydrates enter the digestive tract, they will be broken down into glucose that can enter the bloodstream, causing an increase in the blood sugar levels.
Different foods will convert to glucose at different rates. Foods with higher GI can be digested and turned into glucose more easily. They are normally lower in fiber, high in refined carbs, and are easily mashed. These include rice, porridge, bread, cake, pumpkin, mashed potato, fruit juice, and sugar. They might cause blood sugar levels to spike.
On the contrary, foods with a lower GI have lower refined carbs and rich in fiber and protein. Some examples are brown rice, oats, whole wheat bread, spaghetti, apple, corn, white lentils, kidney bean, milk, and cheese. These foods can keep us full for a longer period. Hence, they are effective in controlling our blood sugar levels.
From the perspective of Chinese Medicine, foods with lower GI are generally coarse grains, and Chinese medicine practitioner recommend consuming them on a regular basis. These includes all types of whole grains such as oat, quinoa, buckwheat, millet, corn, grain rice, and whole-wheat flour.
Do note that the longer you cook these foods, the higher the GI readings you will get, as they become mashed. This will also shorten the digestion time, causing the blood sugar levels to rise.
