氣炸鍋韓國烤肉:
材料:
豬花腩1磅
處理:
1. 豬花腩用清水解凍。
2. 豬花腩已解凍5分鐘,切開1吋1舊。
3. 用粗鹽乸豬花腩5分鐘 去除雪味及腥味,及加入少許鹹味。
4. 沖洗乾淨,擎乾水,用廚紙索乾。
5. 豬花腩調味:
a. 五香粉1/2茶匙
b. 鮑魚汁1湯匙
c. 生抽1/2湯匙
d. 生粉1湯匙
撈勻,醃10分鐘。
烹調:
1. 氣炸鍋用200度預熱3分鐘。
2. 放氣炸鍋紙。
3. 放豬花腩入氣炸鍋。
4. 用200度氣炸10分鐘。
5. 過了10分鐘,看看是否夠金黃色,如果不夠,氣炸多3分鐘,共氣炸了13分鐘。
6. 反轉豬花腩,用200度氣炸8分鐘。
7. 預備黃、青芥辣。
8. 完成程序放上碟。
9. 用廚紙索乾油分。
10. 切好豬花腩,上碟。
11. 完成。
Airfrying pork bone~in belly in Korean style:
Ingredients:
Pork bone~in belly 1 lb
Preparation:
1. Defrost pork bone~in belly in tap water.
2. Pork has been defrosted for 5 minutes, cut with 1" per each.
3. Season pork with cooking salt for 5 minutes to remove the unpleasant smells and tastes and add some salty taste to the pork.
4. Rinse thoroughly, hang dry and dry with kitchen towel.
5. Season the pork:
a. Five spices powder 1/2 tsp
b. Abalone sauce 1 tbsp
c. Light soya sauce 1/2 tbsp
d. Tapioca starch 1 tbsp
Mix well. Season for 10 minutes.
Steps:
1. Preheat airfryer at 200 C for 3 minutes.
2. Put airfrying paper.
3. Put pork into airfryer.
4. Airfry at 200 C for 10 minutes.
5. After 10 minutes, see whether the pork has been turned into golden yellow. If not, airfry 3 minutes more, totally airfrying for 13 minutes.
6. Flip over pork, airfry at 200 C for 8 minutes more.
7. Prepare yellow and green wasabi.
8. Steps completed. Put pork on plate.
9. Dry pork with kitchen towel.
10. Cut pork well. Put on plate.
11. Serve.

理氣健脾湯水小貼士:
適當地添加理氣健脾功效的食材如蓮子、百合、猴頭菇等。
佛手瓜猴頭菇鵪鶉湯
功效:理氣健脾開胃,紓緩精神壓力大而引致食慾差等症狀。
材料:佛手瓜2個、紅蘿蔔2根、猴頭菇2塊、鵪鶉1隻、陳皮1塊、蜜棗2枚
做法:
1. 所有材料洗淨,佛手瓜及紅蘿蔔去皮切大塊;猴頭菇浸泡約半天,期間換1-2次水。鵪鶉汆水備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮2小時,最後下鹽調味即可。

Stress-relieving soup for the whole family
The COVID-19 pandemic has disrupted our regular lifestyle, including our children’s school life. Nevertheless, the learning process must go on. Getting used to the new teaching and learning method and constantly staying home have increased the children’s stress level, causing them to develop frustration, anxiety and other emotional problems.
If you notice your children seem to be more irritable than usual, or experience stomach upset, it most probably is due to stress. As parents who also develop stress in taking care of children, and worry about work and livelihood, we should learn to de-stress, or else our emotions, appetite and sleep quality will be affected.
It is time to make stress-relieving soup for both young and old members of the family. Chayote, from the gourd family, can strengthen the spleen and improve the appetite, clear the lungs and eliminate phlegm; quail can nourish the five internal organs; this soup tastes sweet and refreshing and at the same time, helps relieve stress.
Tips for soup to regulate qi and strengthen the spleen:
Appropriately add in ingredients such as lotus seed, lily bulb and monkey head mushroom etc.
Chayote soup with monkey head mushroom and quail
Effects: Regulate qi, strengthen spleen and alleviates lack of appetite. Alleviates stress induced symptoms such lack of appetite.
Ingredients: 2 chayotes, 2 carrots, 2 monkey head mushroom, 1 quail, 1 piece of dried citrus peel, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Peel chaoytes and carrots and cut into pieces. Soak monkey head mushroom for half day, change water for 1-2 times. Blanche quail.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 2 hour. Add salt to taste.

我們常說五味包括甜、酸、苦、辣、鹹,但其實舌頭只感受到甜、酸、苦、鹹,那麼辣呢?原來辣是痛覺非味覺,辣椒素會產生強烈的刺激性,吃後使人感到灼熱的辛辣感。從中醫角度來看,辣又稱為「辛」,具辛味的食材多具有宣散、行氣、祛散風寒、通血脈及發汗的功效,辛味食物大多屬性偏熱,例如辣椒、薑、蔥、洋蔥、大蒜、胡椒、紫蘇等,都有驅寒補暖的功效,所以身體偏寒人士可以適量食用,亦適合外感或風寒濕邪者食用。要注意氣虛、血虛人士則不宜多吃辛辣食物,以免氣血耗散,令氣血更虛弱。
氣滯、血瘀、濕熱及陰虛體質亦少吃為宜,因為辛辣會加重身體的偏熱症狀,辛辣又會抑制肝臟功能,使經脈不能保持暢通,加劇氣滯、血瘀問題。容易胃痛、胃脹的人亦不宜吃辣,以免加重症狀。
吃辣可以以促進排汗而祛濕,但濕熱體質的話,要祛濕還是多進食健脾祛濕食物例如薏米、淮山、白扁豆、赤小豆等,或者每天飲用一杯米水健脾胃吧。

Is spicy food good for you?
The five basic tastes we often talk about are sweet, sour, bitter, spicy and salty, but our taste buds can only detect sweet, sour, bitter and salty. So what about “spicy”? Technically speaking, spiciness is not a taste but a pain signal stimulated by capsaicin, causing the burning sensation.
From Chinese medicine perspective, the sense of spiciness is also known as “xin”. Most food with the “xin” sensation promotes dispersion and circulation of qi, dispels cold from the body, improves blood circulation and stimulates the sweat glands. Since most of them are hot in nature, for instance, chili, ginger, scallion, onion, garlic, pepper and Chinese basil, they can dispel cold to keep the body warm when consumed in an appropriate quantity, especially by individuals with cooler bodies and those suffering from externally contracted illness and wind-cold dampness.
On the other hand, individuals with qi deficiency and the blood asthenia condition should limit the intake of spicy food, to avoid further weakening of qi and blood. The same rule applies to individuals with the qi stagnation, blood stasis, damp-heat and yin deficiency body conditions, because the spiciness in food would inhibit the liver function, disrupting the meridian system, hence aggravating the existing problems of the body. Individuals prone to stomach ache and bloating should avoid spicy food as well.
While eating spicy food can help stimulate the sweat glands, and in turn get rid of dampness in the body, individuals with the damp-heat condition are encouraged to consume more food like coix seed, Chinese yam, hyacinth bean, rice bean, or drink rice water instead, as these will further improve the health of the stomach and the spleen.

急凍雞髀3隻
薯仔2個
紅蘿蔔1個
粟米3支
處理:
1. 急凍雞髀,清水解凍。
2. 雞髀,倒去水分,用粗鹽乸15分鐘,去除雪味、腥味,及加入少許鹹味。
3. 雞髀,清水沖洗乾淨,擎乾水,用廚紙索乾。
4. 雞髀,加入調味:
a. 五香粉半茶匙
b. 黃薑粉半茶匙
c. 雞粉半茶匙
d. 生抽半茶匙
e. 花椒半茶匙
f. 油半茶匙
撈勻,放入雪櫃醃1小時,同時抽乾水分。
烹調:
1. 光波爐,用250度,預熱5分鐘。
2. 放雞髀入光波爐。
3. 第1次,用200度燒20分鐘。
4. 第2次,用200度燒20分鐘。
5. 最後,反轉雞髀,用200度燒10分鐘。
6. 薯仔、紅蘿蔔及粟米做好成沙律,放在碟上,雞髀放另一邊。
7. 完成,可享用。
Chicken leg salad with halogen cooking pot
Ingredients:
Frozen chicken legs 3 Nos.
Potatoes 2 Nos.
Carrot 1 No.
Corn 3 Nos.
Preparation:
1. Frozen chicken legs, defrost with tap water.
2. Chicken legs, pour away water. Season with cooking salt for 15 minutes to remove unpleasant smells and tastes and add some salty tastes to them.
3. Chicken legs, rinse thoroughly. Drain. Dry with kitchen towel.
4. Season the chicken legs:
a. Five spices powder 0.5 tsp
b. Tumeric 0.5 tsp
c. Chicken powder 0.5 tsp
d. Light soya sauce 0.5 tsp
e. Sichuan peppercorn 0.5 tsp
f. Oil 0.5 tsp
Mix well. Put into refrigerator and season for 1 hour to dry the chicken legs properly at the same time.
Steps:
1. Halogen cooking pot, preheat at 250 C for 5 minutes.
2. Put chicken legs in the pot.
3. First round, bake at 200 C for 20 minutes.
4. Second round, bake at 200 C for 20 minutes.
5. Finally, flip over the legs, bake at 200 C for 10 minutes.
6. Make salad well with potatoes, carrot, and corn. Put on plate. Put chicken leg on plate as well.
7. Complete. Serve.
