Braised eggplants with minced grass carp meat
Ingredients:
Knife Supreme healthy peanut blended oil
Eggplant 2 Nos.
Minced grass carp meat 0.5 catty
Garlics 1 No.
Bread crumbs 50g (about a bowl)
Chili 3 Nos.
Preparation:
1. Season the fish meat:
a. Tapioca starch 2 tbsp
b. Oil 1 tsp
c. Pepper 1/4 tsp
d. Light soya sauce 1 tsp
e. Oyster sauce 1 tsp
Stir in one direction with a pair of chopsticks for 5 minutes until it turns sticky.
2. Prepare tapioca sauce:
a. Tapioca starch 1 tsp
b. Sugar 1/4 tsp
c. Light soya sauce 1 tsp
d. Oyster sauce 1 tsp
Add in water 200ml, mix well.
3. Garlics, get them peeled.
Chili, remove anchors. Remove seeds. Divide each one into 2 shares vertically. Dice it.
Garlics, chop well.
Steps (List 1):
1. Heat up oil 150ml at medium flame in wok.
2. Add in garlics, deep fry at medium~low flame.
3. Garlics have been deep fried into yellow colour, pick them up immediately. Drain.
4. Plain wok, no oil, add in bread crumbs, add in oil 1 tsp. Fry at low flame until it is crispy. Turn to low flame, add in appropriate amount of chili cubes.
5. Add in:
a. Black pepper salt 0.5 tsp
b. Salt 0.5 tsp
Fry well. Pour into a bowl.
6. Eggplant, rinse with tap water. Dry with kitchen towel. Dice in thick cubes horizontally. Make 3 light cuts on the eggplant. Put little tapioca starch on it. Put fish meat on top, press well. Put on plate.
Steps (List 2):
1. Heat up the garlics oil at high flame in wok.
2. Add in eggplants, fish meat faces down, fry well.
3. Fish meat has been fried into golden yellow, flip over and continue frying.
4. Add in half of tapioca sauce, heat up at high flame until the sauce becomes thick and eggplant has been softly cooked.
5. Pick up eggplants one by one on plate. Pour little sauce on top of them.
6. Bread crumbs and garlics are to be mixed well, put on side of the eggplant and little on top.
7. Chili cubes, put on top of the eggplant.
8. Complete. Serve

材料:
白米 2杯
熟栗子 大約10粒
蝦乾 10 隻
冬菇 5-6隻
幼蔥粒 少許
調味料:
麻油 1湯匙
豉油 2湯匙
糖 半茶匙
菇粉/雞粉 少許(可以不用)
做法:
1. 冬菇、蝦乾用水浸軟後切粒,冬菇水要留用
2. 煑熟栗子1開4
3. 兩杯白米洗淨後加入少量水,冬菇粒、蝦乾粒、栗子粒及冬菇水
4. 加入調味料:麻油、豉油、糖和菇粉

做法
1. 乳豬洗淨,撕掉骨中間的白色皮,再用刀仔在骨與骨中間鎅一鎅,備用。
2. 用鑊煮滾水,放梳打粉,把乳豬稍為灼一灼,拎起。之後用水沖乾淨,再用廚房紙索乾水份,之後用風筒吹乾乳豬。(如果乳豬有毛便燒一燒)
3. 用小煎鍋,不用加油,加入焊乾醃料,把醃料焊乾,有煙出便熄火。
4. 準備攪拌機,加入已焊乾的醃料打碎成粉。如果想濃味一些,可加雞粉。
5. 乳豬放在盤上,皮向底,把已打碎的醃料粉加在乳豬身上,搽勻,再加入剪碎的迷迭香,百里香,搽勻,之後返轉乳豬,再用醃料粉搽勻,之後再返轉乳豬,再加入蒜鹽,蒜粉,搽勻乳豬全身。再加入白蘭地,再搽勻乳豬全身。之後用風筒再把乳豬稍為吹乾,再加入橄欖油,搽勻乳豬兩邊全身。
6. 用鐵叉均勻地刺豬皮數下,之後乳豬放在焗爐鐵架上,鐵架底用焗盤盛著,乳豬皮向下,骨向面,放入焗爐用200度先焗30分鐘。
7. 30分鐘後,取出乳豬,把乳豬身上的油倒在碗上,再用250度焗5 - 6分鐘左右,之後翻轉乳豬,用錫紙遮住耳仔部份,再放入焗爐,焗25 - 30分鐘。
8. 時間到後,取出,用竹籤刺在眼睛位置上,再插上紅色細蕃茄仔,即成。
備註:
1. 如果買不到乳豬全隻,可以買乳豬件代替。
2. 如果用全隻乳豬,把頸部份的骨要切除,豬腳豬手摺位要鎅一鎅。
3. 如果沒有白蘭地,可用酒精度較高的白酒代替。紹興酒也可以,但係白酒比較好一點。
Portuguese Style Roasted Whole Suckling Pig and Suckling Pig Rack

Suckling pig - 1 whole
Or use
Spanish suckling pig rack - 1 rack
(Remove all the white membrane skin on the bone side of the rack.
Use a knife and lightly score in between the bones of the rack to absorb the marinade faster.
Blanch and clean the suckling pig rack by boiling in hot water with the skin side down with 1 tbsp of baking soda.
Rinse, pat dry, and blow dry it with a hair dryer or leave it in the refrigerator for 4 hours to let it dry.
Purpose of the baking soda is to tenderize the suckling pig’s skin.)
Dry marinade ingredients:
Fennel seeds - ¼ cup
Clove - 5
Cardamon - 5
Coriander seeds - ¼ cup
Black pepper - ¼ cup
Bay leaf - 2
Cinnamon stick - ½ a stick
Black cardamon - 1
(Pan fry the above herbs until fragrant and grind them into powder. Set aside.)
Chicken powder - optional
Rosemary - a sprig (cut into pieces)
Thyme - a sprig (cut into pieces)
Garlic-salt - to taste
Onion-salt - optional
Garlic powder - to taste
Wet marinade ingredients:
Brandy - ¼ cup (or white wine with a high alcohol content or Shaoxing wine)
Olive oil - about 2 handfuls
Garnish for the whole suckling pig ingredients:
Cherry tomatoes - 2 (to be placed over the eyes and secure with toothpicks.)
Methods for Whole Suckling Pig:
1. Marinate the whole suckling pig with the ground herbs powder on the abdominal side. Sprinkle rosemary and thyme pieces on top. Cut two slits each on all four of the legs to cook more evenly due to the thickness of the legs. Remove the bones below the head.
2. Sprinkle garlic-salt, and garlic powder on both sides of the suckling pig.
3. Rub brandy on both sides of the suckling pig.
4. Blow dry the skin side with a hair dryer until semi dry.
5. Rub olive oil on both sides of the suckling pig.
6. Poke small holes on the skin side to ventilate the hot air when baking.
7. Place the suckling pig on a baking wire rack and place the backing wire rack on top of a baking pan lined with aluminum foil paper. This pan is to catch the oil dripping when baking.
8. Bake at 200C (390F) with the abdominal side up for about 30 minutes or until the bones are golden brown then flip over to the skin side up and bake for further 30 - 45 minutes and increase the temperature to 250C (480F). Make sure to cover the ears with aluminum foil paper to avoid burning.
9. During the last 30 minutes of baking, occasionally brush the skin with the oil dripping.
10. When done, garnish with 2 cherry tomatoes over the eyes and secure them with toothpicks. Serve.

材料: 紫薯一杯,花奶一杯,椰奶一杯,水半杯,糖半杯,寒天粉14g
做法: 1 先弄濕3張廚紙放飯煲底按煮飯鍵,跳制後取出紫薯去皮切細
2 水,糖,寒天粉放煲內煮至溶加花奶略攪拌最後加椰奶煮一會(整過程需一邊煮一邊攪)
3 將以上1同2放攪拌機打勻
4 打好放盒內放涼後才放雪櫃
白色層
材料: 花奶,椰汁各半杯,糖2匙,寒天粉7g,水1/4杯
做法: 水,糖,寒天粉煮至溶放花奶,椰奶略煮一會離火待涼後倒在已凝固的紫薯漿上放回雪櫃即成
備註: a 紫薯可改用紅荳不用攪爛
b 寒天粉也可用魚膠粉口感較實
c 糖視乎個人喜好加減
d 白色層材料較少放雪櫃較快凝固

Cooked purple yam - 1 cup (cut into small pieces)
(Avoid choosing ones that have white spots on the skin or soft to the touch. These have defects in them. Choose ones that are firm to the touch.

Water - ½ cup (125ml) (Use 1 cup = 250ml if you are using corn flour.)
Sugar - ½ cup

Coconut milk - 1 cup (250ml) (add in last to avoid curding when cooked too long.)

Coconut milk - ½ cup
(Put all the ingredients into a cooking pot and cook until the sugar and agar agar powder have melted. Set aside.)
Methods:
1. In a cooking pot, add in ½ cup of water, ½ cup of sugar, and cook until the sugar has melted.
2. Add in evaporated milk, agar agar powder, and mix well.
3. Add in coconut milk, and mix well. This is the coconut milk mixture.
4. In a blender, add in cooked purple yam pieces, the coconut milk mixture, and blend well until smooth.
5. Pour into a mould.
6. Put into the refrigerator to set.
7. Once it is firm enough, pour the white layer on top and return back to the refrigerator to set.
Note: Optional to be creative with the layering of purple and white colors.

**Please refer to “Simple Way to Cook Yams &/or Eggs in Rice Cooker” methods below this recipe.)
Water - ½ cup (125ml) (Use 1 cup = 250ml if you are using corn flour.)
Sugar - ½ cup
Evaporated milk - 1 cup (250ml)
Agar agar powder - 14g
(also known as Kanten powder in Japanese and is vegetarian friendly.
Or use corn flour 1 cup.)
Coconut milk - 1 cup (250ml) (add in last to avoid curding when cooked too long.)
Blender
To make the white layer ingredients:
Water - ¼ cup
Sugar - 2 tbsp
Evaporated milk - ½ cup
Agar agar powder - 7g
Coconut milk - ½ cup
(Put all the ingredients into a cooking pot and cook until the sugar and agar agar powder have melted. Set aside.)
Methods:
1. In a cooking pot, add in ½ cup of water, ½ cup of sugar, and cook until the sugar has melted.
2. Add in evaporated milk, agar agar powder, and mix well.
3. Add in coconut milk, and mix well. This is the coconut milk mixture.
4. In a blender, add in cooked purple yam pieces, the coconut milk mixture, and blend well until smooth.
5. Pour into a mould.
6. Put into the refrigerator to set.
7. Once it is firm enough, pour the white layer on top and return back to the refrigerator to set.
Note: Optional to be creative with the layering of purple and white colors.

Hot boiling water
Cold Eggs
Pot lid
Cold tap water
Methods:
1. Prepare a pot of boiling water.
2. Gently lower cold eggs in boiling water with a ladle and cover pot with a lid.
3. Boil for 6 minutes.
4. After 6 minutes, take the eggs out and IMMEDIATELY rinse them under cold tap water and peel the shell at the same time.
5. Cut the eggs into halves. Serve.
Note: Boil for 7 minutes for larger eggs.

三文魚排 300g Salmon fillet
青豆 200g Green peas
新鮮薄荷葉 Fresh mint leaves
無鹽牛油 45g Unsalted butter
芥花籽油 Canola Oil
鹽 Salt
檸檬酸豆牛油 Lemon Caper butter
酸豆 3 茶匙 3 tablespoon Capers
無鹽牛油 25g Unsalted butter
檸檬 1/2 Lemon
鹽 Salt
風琴焗薯 Hasselback Potato
薯仔 1 Potato
百里香 Thyme
橄欖油 Olive Oil
鹽 Salt

1. 焗爐預熱185度。
Preheat over to 185c.
2. 將薯仔切成風琴狀,每層約2mm厚。底部預留1.5cm,不要切斷。
Slice the potato the same way as the video, about 2mm between each cut. Do not cut to the bottom, about 1.5cm from the bottom usually works well.
3. 薯仔放置焗盆上,淋上適量橄欖油。加份鹽調味後,放入焗爐。
Place the potato on a baking tray, drizzle a good amount of olive oil on the potato. Sprinkle some salt and place in oven.
4. 185度焗60分鐘至金黃色。
Bake 60mins until the potato is crispy on the edges.
5. 焗好後放上新鮮百里香。
Add some fresh thyme to the potato before eating.
青豆薄荷醬 Minted Peas Sauce
1. 青豆加入講量鹽煮熟後,瀝乾及放入攪拌機。
Boil some frozen peas in salted water. Remove from water and put into a blender.
2. 加入薄荷葉、牛油及適量鹽。攪拌至蓉狀。
Add mint leaves, butter and salt, blend.
檸檬酸豆牛油 Lemon Caper butter
1. 加熱平底鑊。檸檬切半後,放至熱鑊上,煎至表面呈焦糖色。
Cut half a lemon and place it on a hot pan until it is slightly caramelized.
2. 牛油放入另一平底鍋內。
Add butter into a saucepan.
3. 酸豆搾乾水份,加入平底鍋內。煮一分鐘後放置。
Squeeze the water from the capers and add into butter, set aside after about 1min of cooking.
香煎嫩滑三文魚 Pan Fried Salmon
1. 三文魚排清洗乾淨及抹乾,放置室溫。
Clean and dry the piece of salmon fillet and make sure it is at room temperature before you start cooking it.
2. 熱平底鑊加入芥花籽油。
Heat pan and add Canola oil.
3. 芥花籽油加熱後,放入三文魚排,魚皮一面朝下。
When the oil is very hot, place salmon skin side down.
4. 灑上鹽調味。
You can salt the salmon now.
5. 煎約2分鐘後反面。
Flip over after about 2mins.
6. 魚皮面灑上適量鹽調味。將熱油淋上魚皮面,繼續煎香。
Salt the skin side and spoon hot oil over the fish and keep cooking.
7. 煎約3分鐘後,盛起三文魚排,放置。
Total cooking time is usually around 5mins. Set fish aside once done.
8. 將三文魚放於青豆醬上。淋上酸豆牛油及擠檸檬汁。
Add minted peas to plate, place salmon fillet on top, spoon on the capers and butter mixture. Add a squeeze of the lemon.
Notes from Eddie:
1. Make sure the salmon fillet is in room temperature before you start cooking. I would bring out the fish about an hour before I start cooking.
2. Make sure the fillet is quite dry before you cook. Use a knife to scrape off any excess moisture from the skin.
3. You can use fresh peas if you can find, but frozen one is also fine.
4. Use Canola oil for panfrying salmon fillet. It is better for the recipe as the oil has a higher burning point.
5. While frying the fish, I usually lift the fish to check the skin, you want it to turn golden brown.

This is one of my favourite ways to eat Salmon. I also like it because it’s quite simple to make. Try your best to buy some good quality salmon, my favourite is King Salmon from New Zealand. My favourite part of the salmon is the belly so make sure you get a piece that includes some belly parts. The most important part of this salmon is making sure that its quite dry before you cook. There is a lot of moisture in the skin and I find the best way is to scrape it off with a knife. Keep scraping till no more moisture comes off the skin of the fish. Dry the other side with some kitchen towel. I prefer not to salt the fish until I cook it as more moisture will come off the fish if you salt it too early.

(蔥花芡汁煎三文魚)
材料:
急凍三文魚魚扒1件
蔥1條
薑1小舊
處理:
1. 三文魚,買回家後,放室溫15分鐘。
2. 用小刀刮淨魚鱗。
3. 魚,繼續用清水解凍10分鐘。
4. 魚,清水沖洗乾淨,廚紙索乾。
5. 預備芡汁:
a. 蔥,洗淨,切粒,放碗中。
b.薑,去皮,切碎,放碗中。
加入調味料:
a. 生粉1茶匙
b. 糖1茶匙
c. 生抽2茶匙
d. 清水300毫升
攪勻。
烹調:
1. 大火在鑊中燒熱油2湯匙。
2. 放魚落鑊,轉中慢火,繼續煎。
3. 魚,一面已煎至金黃色,反轉繼續煎。
4. 魚的兩面已煎至金黃色,轉大火,每面各煎半分鐘,逼出油分。
5. 放魚上碟。
6. 大火在鑊中煮滾芡汁,淋在魚扒上。
7. 完成,可享用。
Salmon steak in yummy sauce
Ingredients:
Frozen salmon steak 1 pc
Green onion 1 No.
Ginger (small) 1 No.
Preparation:
1. Salmon, put in room temperature for 15 minutes after purchase.
2. The fish, get it scaled with a small knife.
3. Continue to defrost the fish in tap water for 10 minutes.
4. The fish, rinse thoroughly and dry with kitchen towels.
5. Prepare sauce:
a. Green onion, get it rinsed and diced. Put in a bowl.
b. Ginger, get it peeled and chopped. Put in the bowl.
Add seasoning:
a. Tapioca starch 1 tsp
b. Sugar 1 tsp
c. Light soya sauce 2 tsp
d. Water 300ml
Mix well.
Steps:
1. Heat up oil 2 tbsp at high flame in wok.
2. Put fish in wok. Turn to medium~low flame, continue frying.
3. The fish, one side has been fried into golden yellow, flip over and continue frying.
4. Both sides of fish have been fried into golden yellow, turn to high flame, fry each side of fish for 0.5 minute more, to release excess oil in fish.
5. Put fish on plate.
6. Heat up the sauce at high flame in wok. Pour on top of fish.
7. Complete. Serve.

揚げないチキン南蛮
2人分
材料:
鶏むね肉 1枚(300g)
溶き卵 1個分
塩 少々
コショウ 少々
薄力粉 適量
サラダ油 適量
■南蛮酢
砂糖 大さじ2
酢 大さじ3
しょうゆ 大さじ3
■タルタルソース
ゆで卵(粗みじん切り) 2個
玉ねぎ(みじん切り) 1/4個
マヨネーズ 大さじ3
レモン汁 小さじ1/2
塩 少々
コショウ 少々
レタス 適量
パセリ 適量
作り方:
1.鶏肉の皮目にフォークで数カ所穴を開ける。裏返して、包丁の背で叩いて厚みを均等にする。
2.塩、コショウを振り、薄力粉をまぶして、溶き卵にくぐらせる。
3.フライパンに1cm深さのサラダ油を入れて170℃に熱し、(2)を入れる。そのまま触らず5分ほど揚げ焼きし、きつね色になったら裏返し、両面こんがりと焼けたら取り出して油を切る。
4.フライパンをキッチンペーパーで拭いてきれいにし、南蛮酢の調味料を入れて軽く混ぜ、中火にかける。煮立ったら(3)を戻し入れ、全体に煮絡める。
5.タルタルソースを作る。ボウルに全ての材料を加えて混ぜ合わせる。
6.器にレタスを広げてチキンをのせ、タルタルソースをたっぷりとかける。仕上げにパセリを散らしたら、完成!

Pan-fried Chicken With Vinaigrette Sauce
Servings: 2
INGREDIENTS
300g chicken breast
1 egg, beaten
A pinch of salt
A pinch of pepper
Some soft flour
Some vegetable oil
■Vinaigrette (Nanban) sauce
2 tablespoons sugar
3 tablespoons vinegar
3 tablespoons soy sauce
■Tartar sauce
2 boiled eggs (chopped)
1/4 onion (diced)
3 tablespoons mayonnaise
1/2 teaspoon lemon juice
A pinch of salt
A pinch of pepper
Some lettuce
Some parsley
PREPARATION
1. Pierce chicken skin with a fork. Use the back of a knife, pound the chicken breast to equal thickness.
2. Salt and pepper the breast, coat with soft flour and run though the beaten egg.
3. Heat 1cm oil in a medium skillet to 170℃, put the chicken breast (2). Do not touch until one side is golden, then flip it over. Remove the breast when the other side is also brown and crispy.
4. Absorb all excess oil with paper towels. Put all ingredients for vinaigrette sauce into the skillet to boil. Put the chicken breast in the sauce to simmer.
5. To make tartar sauce, mix all the ingredients well in a bowl.
6. Place chicken over some lettuce on a plate, put plenty of tartar sauce and sprinkle some parsley.
7. Enjoy!
