I still haven’t shared the recipe so here it is:
Preheat the oven to 190C.
- 200 g Full Fat Milk
- 2 medium Eggs
- 600 g strong white bread flour
- 7 g of instant yeast
- 50 g caster sugar
- 2 tsp salt
- 200 g unsalted butter
Start by making the dough with these ingredients.
Add the milk and eggs into a bowl. Then add the flour. Add the yeast into on side of the bowl and the sugar and salt on the other side (not touching the yeast). Add the soft butter and mix it all together either in a mixer or I just used a hand mixer.
I put the dough aside a bit but recipe is actually with fresh yeast so normally it should proof longer.
Meanwhile you make the filling:
- 150 g unsalted butter (make sure it’s soft)
- 250 g soft brown sugar
- 2 tsp cinnamon powder
Mix it all up.
Then you roll the dough out and spread the filling everywhere.
Fold over from both sides. Try it make it as even as possible. Slice them up into strips - makes around 12 or so. Then you cut 3 strip and braid each one and roll it from top down.
Grease a muffin tray. Pop them all in and brush with egg glaze.
Bake for around 18-20 minutes till the tops are golden brown.
Powder with icing sugar.

蝴蝶蛋糕(Butterfly Cakes)

12孔蛋糕烤盤
防油紙*1
大碗*1
叉子*1

蛋糕紙*12張
【食材】
軟化奶油*110g
砂糖*110g
雞蛋*2個
低筋麵粉*110g
糖漬櫻桃(裝飾用,切成方形)*3/4顆
【做法】
1。烤箱預熱至190℃。在一個碗裡混合軟化的奶油和砂糖,直到變成白色。加入一個雞蛋並攪拌。如果混合物開始凝固則添加1大匙的低筋麵粉,再攪拌至光滑。之後添加第二個雞蛋拌勻,慢慢加入麵粉,直到調勻的糊狀物而形成。
2。把蛋糕紙鋪在烤盤孔中,均勻地把麵糊鋪上,再放進烤箱烤20~25分鐘至金黃色。當完成時,可以拿一根乾淨的竹籤插進去檢查,應該要是淺金黃色。完成後放在散熱架上冷卻
3。當冷卻完成,在每個蛋糕的中央切出一個小圓,將小圓再切一半可以拿來做翅膀,將少量的香草糖霜覆蓋住圓孔,然後輕輕地將兩片翅膀推入糖霜中,最後再放上一小片櫻桃,撒上糖粉放在密閉容器中即完成。
香草糖霜
【食材】
軟化奶油*110g
糖粉*225g
牛奶*3大匙
香草精*1/2~1大匙
【做法】
4。將奶油和糖粉混合在一個碗裡,並攪拌直到融合。加入牛奶和香草精,拌勻,在食用前灑上一點糖粉。
Butterfly Cakes
makes 12
total time; 45 minutes (including cooling time)
Ingredients
110g butter softened
110g caster sugar
2 eggs
110g self raising flour
3/4 glace cherries for decoration cut into quarters
12 Paper cases
Turn oven to 190degrees
1.In a bowl mix the softened butter and caster sugar until pale. Add one egg and beat. If the mixture begins to curdle add a tablespoon from the measured self raising flour and beat until smooth. Add second egg and mix well. Slowly add the flour until a smooth paste is formed.
2.Put 12 paper cake cases in a cake/bun tray with holes and evenly put the mixture between the cases. Then bake in the oven for 20-25 minutes until golden.
They are cooked when a skewer is inserted in the center comes out clean. They should be a light golden colour.
Leave to cool on a wire rack.
When cool, cut out a disk from each cake with a knife. This is then cut in half to create the wings. Place a small amount of vanilla frosting to cover the hole and then gently push the two halves into the icing. Finish with a small piece of cherry.
Sprinkle with icing sugar.
Keep in an airtight container.
Vanilla frosting
Ingredients
110g butter softened
225g icing sugar
3 tbs milk
1/2 to 1 tsp vanilla extract
In a bowl mix together the butter and icing sugar until smooth and well combined. Add the milk and vanilla extract and mix well.
Finally, cut a circle out of the middle of the cake and cut the circle in half. Place a little frosting in the hole and then place the 2 half circles on the frosting so they look like wings.

Birthday cake with cream and berries
Original recipe by Nordic Bakery Cookbook (see the link below)
(We arranged a bit from original recipe. Use 3 eggs for a 18cm tin. Measure other ingredient with glasses like in the video. If you use normal flour, you can put extra baking powder. We use orange juice + maple syrup, instead apple juice. Baking time can vary depends on tins size. 18cm➡︎25~30min)
2 loose-bottomed cake tins.
26 cm in diameter, greased
Serves 8-10
Cake
4 eggs, at room temperature
225g caster sugar
1 teaspoon baking powder
170g self-rising flour
Filling
500 ml whipping cream
Vanilla sugar or icing sugar to taste and for dusting (optional)
300ml apple juice
your choice of fruit (e.g. strawberries, blueberries, blackberries, sliced bananas, chopped kiwi fruit, tinned pineapple pieces)
Preheat the oven to 200°C (400°F) Gas 6.
Put the eggs and sugar in a large mixing bowl and whisk with a handheld electric whisk until the mixture is foam-like – this will take unt 10 minutes. When it is ready, it will be almost white, have doubled in size and the batter will drop off the beaters in a figure-of-eight when you lift them out of the bowl.
In a separate bowl, sift the baking powder and flour together, then fold into the egg mixture as gently and briefly as possible – do not overwork the mixture otherwise it will lose its fluffiness.
Divide the mixture between the prepared cake tins. Bake in the preheated oven for 35-40 minutes, until the cakes are golden brown and a skewer inserted into the centre of each comes out clean. Leave to cool while you make the filling.
Whip the cream until soft peaks form. Add vanilla sugar or icing sugar to taste, if you like.
Remove the cooled cakes from their tins. Cut each one horizontally through the middle to make two equal layers. Lay one layer on a cake stand. Sprinkle one-quarter of the apple juice evenly over the cake layer to moisten it. Spread one-quarter of the whipped cream over it, followed by one-quarter of your choice of fruit. Repeat this process four times, finishing with a decorative assortment of fruit on top. Dust lightly with vanilla sugar or icing sugar and serve.
