Pan mee or mee hoon kuey? There's always arguably the longest debate when it comes to this. And to how the versions differ is basically really simple to distinguish. People asks me all the time, what is the difference between pan mee and mee hoon kuey?
Well, pan mee is essentially originated from hakka origin and you'll see more minced pork and fungus in it where as mee hoon kuey is of origin from Hokkien speaking area with the obvious of pinched pieces of dough instead of flat noodles. Although the two crosses sometimes, I have always have preference to the slightly more savoury version-the mee hoon kuey. Also, I like mine loaded with vegetables like this.

A creative twist to one of the Hakka’s favorite dishes- Lei Cha; Noodle Shack (面粉居) is probably the first to offer Hakka Lei Cha… noodle version. Noodle Shack specializes in offering Mee Hun Kuey, a type of Pan Mee variant but in a flat, irregular shape. They have been very creative with their choices… from the usual conventional Pan Mee soup to uncommonly seen combinations like Bitter Gourd Fish Ball, Salted Fish and Coriander-infused Mee Hun Kuey. The place is busy during both lunch and dinner hours, probably due to its inexpensive price tags and generous serving portion.
The Hakka Lei Cha Noodle is a good replacement to rice; all other elements remain constant. It gives weight-watcher the opportunity to satiate their craving yet without the guilt of having heavy carbohydrates.
