In the ongoing fight against COVID-19, teachers have adapted their ways of teaching to engage students both online and offline. Many teachers are parents themselves, and also have to cope with caring for children and family members during the pandemic. Yet they have stayed focused on the welfare of their students, and given them encouragement and guidance.
We owe teachers immense thanks for staying resilient and providing steadfast support to their students during this unsettling time, in the classroom and beyond. "Happy Teachers' Day" site:uk 約有 6,950 項結果
"Happy Teacher’s Day" site:uk 約有 2,360 項結果
由上可知，雖然兩者皆可，但英美人士習慣上會說Teachers' Day.
維基百科的詞目 “教師節” 也是 “ Teachers' Day”:

So, I’d recommend using “Happy Teachers’ Day!”
因此，我建議使用 “Happy Teachers’ Day!” But remember, it’s “Happy Mother
’s Day!” unless you have several mothers, you don't say "Happy Mothers'
