上次和大家提到節食會對身體帶來的傷害,今天要來跟大家一起聊聊,除了節食之外,疫情期間的居家飲食應該要如何調整,減少攝取過多的卡路里呢?
✅餐盤和碗公是你的好幫手
居家防疫,是不是每天都有家人們親手做好的飯菜呢?在享用美味的食物時,往往會在不知不覺中不知道自己吃了多少,透過餐盤夾取一餐的分量,更能夠評估營養有沒有均衡!
✅學習可替換食物
以低熱量的食品取代高熱量,例如芭樂取代芒果或荔枝、魚肉代替豬肉、橄欖油代替沙拉油、無糖無膠優格代替全脂鮮乳。簡單的替換方式,讓居家飲食不再有負擔。這邊有小叮嚀要提醒大家,地瓜、馬鈴薯、玉米都不是蔬菜,而是五穀根莖類,因此地瓜可以代替白米飯,但卻不能代替蔬菜喔!也要記得避免一餐食用到兩份澱粉,而經常誤以為是蔬菜的毛豆、四季豆其實是豆蛋魚肉類喔。
✅沒事多喝水
水分在身體佔有非常重要的元素,這裡要跟大家提醒,沒事真的要多喝水。身體缺水除了會引發冠心症、代謝變差之外,水分攝取過少也會容易感到飢餓。這是因為許多營養素無法被吸收,甚至像肝臟需要水分才能分解肝醣,進而儲存能量,身體缺水就會導致我們想要吃更多東西來補充能量。

✅Plates and bowls are your good helpers
When enjoying delicious food, you often don't know how much you have eaten without knowing it. By picking the size of a meal through the plate, you can know whether the nutrition is balanced!
✅Replace the food
Replace high-calorie foods with low-calorie foods, such as guava instead of mango or lychee, fish instead of pork, olive oil instead of cooking oil, and yogurt instead of milk. Here is a note to remind everyone that sweet potatoes, potatoes, and corn are not vegetables, but grains, so sweet potatoes can replace white rice, but they cannot replace vegetables! Also remember to avoid excessive carbohydrates in one meal. Edamame is often mistaken for vegetables, and is actually meats and protein.
✅Drink more water
Water is a very important element in the body. In addition to the lack of water in the body, it will cause Coronary Artery Disease and reduce metabolism of the body, and too little water will make us easily feel hungry. This is because many nutrients cannot be absorbed. Even the liver needs water for glycogenolysis and to store energy. The lack of water in the body will cause us to want to eat more for energy.

The food at @pratunamsg is so good! My favourite is definitely the Royal Thai Seafood Hot Pot. So flavourful and shiok to eat. The runny omelette prawn fried rice also very good, very creamy and silky. We also ate the Premium Tom Yum Mama, Tom Yum Kway Tiao Moo, Kway Tiao Gai, Runny Omelette Prawn Fried Rice, Fragrant Fried Pork Belly Rice, Grilled Oysters, Grilled Whole Squid, Prawn Donut, Green Papaya Salad, Glass Noodles Salad, Mango Sticky Rice, and also Skewers! オーブンは使わずに混ぜて冷凍庫で固めるだけですので意外と簡単です。

It's surprisingly easy because you don't use an oven, just mix and harden in the refrigerator.

【ingredients】
200g Cream cheese
100g Granulated sugar
200g plain yogurt
200ml heavy cream
100ml Mango juice
50ml Water (for gelatin)
10g Gelatin powder
Food color (yellow)
【材料】
クリームチーズ 200g
グラニュー糖 100g
プレーンヨーグルト 200g
生クリーム 200ml
マンゴージュース 100ml
水(ゼラチン用) 50ml
ゼラチンパウダー 10g
フードカラー(黄色) 適量
【作り方】
①ボールにクリームチーズを入れて電子レンジ600wで約30秒温めて泡だて器でよく混ぜてクリーム状にします。
②そこへグラニュー糖、プレーンヨーグルト、生クリーム、マンゴージュースを加えながら良く混ぜます。
③ゼラチンを水でふやかして電子レンジで温めて完全に溶かしておきます。
④食紅の黄色を加えて色を付けて、あらかじめ溶かしたゼラチンも加えて良く混ぜます。
⑤型に流しこんだら冷凍庫で冷やして、完全に固まったら型から外します。(6時間以上)
※冷蔵庫で3-4時間解凍して溶けたらOKですが、少し凍ってても美味しいです。

【麻糬朱古力曲奇 Mochi Chocolate Chip Cookies】
今次不是分享我自己的食譜,而是去跟着別人的影片嘗試複製美味的食物出來!
跟著Eat At Home (Karen)的麻糬曲奇食譜,發現原來看着別人的影片,然後跟着去製作食物出來是有另一番感受的~ 過程中原來會遇到很多的問題!的確蠻有趣!
This time I am not sharing my recipe, but following my friend's video and recipe to make the yummy and chewy mochi cookies!
Following the recipe of Karen (Eat At Home) is an interesting experience. Lots of questions and situations came up when I was making the cookies! It's fun to do video like this :)

材料 Ingredients:
— 朱古力曲奇餅 Chocolate Chips Cookies—
無鹽牛油Unsalted Butter | 180 g
黃糖 Brown Sugar | 145 g
雞蛋 Eggs | 1.5 pc
雲呢拿精油 Vanilla Extract | 2 tsp
中筋麵粉 All-purpose Four | 180 g
可可粉 Cocoa Powder | 36 g
泡打粉 Baking Powder | 1/4 tsp
粟粉 Cornstarch | 3/4 tsp
朱古力碎 Chocolate Chip | 3 tbsp
— 鐵觀音麻糬 Iron Goddess Mochi —
糯米粉 Glutinous Rice Flour | 120 g
鐵觀音茶粉 Iron Goddess Tea Powder | 1-2 tbsp
砂糖 Sugar | 3 tbsp
水Water | 120 ml
鹽 Salt | 1/2 tsp
做法 Method:
1. 先把焗爐預熱至攝氏170度。首先,把放軟的牛油和黃糖用電動打蛋器或廚師機打起。
2. 逐少放入蛋液,一邊開機攪拌,再放入雲呢拿油拌勻。
3. 將中筋麵粉、可可粉、泡打粉和粟粉過隔篩,再加入鹽。分三至四會將乾材料倒入牛油蛋液中混合,直至放入所有乾材料為止。再加入一半份量的朱古力碎拌勻。
4. 把曲奇麵團分成30克一顆備用。放入雪櫃約20分鐘令它們略為挺身,方便操作。
5. 製作年糕。把糯米粉、砂糖、鐵觀音茶粉和水拌勻成為麵糰。放入掃了油的碗中,隔水以中大火蒸10分鐘。
6. 在砧板上塗油,戴上手套後,把蒸熟的年糕反覆搓捶,令其更彈牙。再用塗上油的刀把年糕切成10克一棵。
7. 拿起一顆曲奇麵團,輕輕按扁,放上一顆年糕後,包好搓圓,準備入爐。
8. 再焗盤上放上焗爐紙,把已包年糕的曲奇放上去,曲奇之間至少預留三吋空間。先焗8分鐘,再取出,然後在表面輕輕按入剩下的朱古力碎後,再焗8分鐘。完成!
