費德勒是瑞士蓮巧克力(Lindt)的品牌大使,這週他們推出了最新品牌宣傳廣告Lindt Home of Chocolate,跟著費德勒一起參觀瑞士蓮全新的企業總部,大廳入口處有一座9公尺高的巧克力瀑布,還有包括巧克力博物館、觀光工廠、咖啡店、販賣部。
影片中有一段挺有趣,巧克力師傅問費德勒:「你正拍的秘密到底是什麼?」
費德勒回答:「不好的反拍(a bad backhand)。」

這個特濃朱古力慕士配方完全不使用魚膠粉, 而且只加了兩湯匙糖(因要協助打發雞蛋)! 黑朱古力愛好者絕對不能錯過喔~
This is a super rich dark chocolate mousse cake that requires no gelatine. I add two tablespoonfuls of sugar just to help whipping the eggs. If you love dark chocolate, you will love this recipe.
我家有兩隻小鬼, 所以我做慕士(及其它含有生雞蛋成份的甜品)時, 一定、一定會將蛋液加熱至安全食用温度(160'F/71'C)後才會使用. 雖然多了一個步驟, 但安全至上啊!
I have two little ones at home. So whenever I make treats containing uncooked eggs, I always heat them to at least 160'F/71'C) to minimize the risk of Salmonella infections. This extra step ensures their safety.
註:
1. 級數越高的朱古力做出來的慕士味道越香濃. 我會建議大家使用能力範圍負擔得起的高級黑朱古力. 我用Lindt Piccoli 苦甜調温朱古力
2. 我怕甜, 若不是要用糖協助打發雞蛋的話, 我會連糖也省略. 甜度可以依個人口味作調整, 兩湯匙是最底標準
3. 食譜參考及改良自蛋糕話咁易的“法國朱古力慕絲蛋糕”
Notes:
1. Try using the best dark chocolate you can afford. Premium chocolate gives a better taste. I use Lindt Piccoli bittersweet couverture chocolate.
2. I add sugar for the sake of egg whipping. If there is no egg whipping I would omit the sugar. You can always adjust the sweetness to fit your taste but two tablespoons of sugar is the minimum.
3. This recipe is tweaked and adapted from Bowie Yim’s French chocolate mousse cake.

Rich Dark Chocolate Mousse Cake with reduced sugar (makes an 8-inch cake)
材料 Ingredients
直徑七吋的朱古力雪芳蛋糕片 7-inch chocolate chiffon cake layers 2片
黑朱古力 (58%或以上濃度) Dark chocolate (58% or higher) 260g
淡忌廉 Whipping cream 320g
蛋白(大蛋) Egg white, large 1個
蛋黃 (大蛋) Egg yolks, large 4個
砂糖 Granulated sugar 2湯匙 (Tbsp)
