BBQは何と言っても焼いてる時間がいいんですよね。
パチパチと音を立てる炭火に、ジュージュー焼き上がっていくエビ。
香ばしい匂いが食欲をそそり、日々の小さな悩みもどうでもよくなるような、そんな気がしてきます。
殻が赤くなり身が白くなって、ミソがぐつぐつしてきたら焼き上がりです。
伊勢海老はこのミソが本当濃厚でおいしいんです…
プリッと引き締まった身に、酸っぱ辛くて爽やかなメキシカンソースをかければ、まさに究極のBBQと呼ぶにふさわしい味わいに!
ゆっくり味わって食べたいけど、手が止まらない…!!

伊勢海老のメキシカンBBQ
2人分
材料:
伊勢海老 2尾
塩 少々
■ソース
トマト(1cm角)1個
玉ねぎ(みじん切り)1/4個
にんにく(みじん切り)1片
パセリ(みじん切り)小さじ1
オリーブオイル 大さじ3
レモン汁 大さじ1
ペパーソース 小さじ1/2
砂糖 小さじ1/2
塩 小さじ1/2
作り方:
1. 伊勢海老を半分に割り、網の上にのせ、塩をふって殻が赤くなるまで焼く。
2. ソースを作る。ボウルに全ての材料を入れ、よく混ぜ合わせる。
3. 器に(1)を盛り付け、(2)をかけたら完成!

Mexican Shrimp with Japanese Spiny Lobster
Servings: 2
INGREDIENTS
2 Japanese spiny lobsters
Some salt
◆Sauce
1 tomato (diced)
1/4 onion (chopped)
1 clove garlic (minced)
1 teaspoon parsley (chopped)
3 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon pepper sauce
1/2 teaspoon sugar
1/2 teaspoon salt
PREPARATION
1. Cut the lobsters into halves. Place them on a BBQ grill and season with some salt.
Cook until lobsters turned to bright red.
2. For the sauce: Mix all ingredients for the sauce in a bowl.
3. Place grilled lobsters on a plate. Serve with the sauce.
4. Enjoy!

鴨 1 Duck
海鮮醬 20g Hoisin Sauce
鹽 8g Salt
砂糖 10g Sugar
五香粉 2tsp Five-Spice Powder
水 1000ml Water
薑 2slices Ginger
蔥 適量 Scallion
紹興酒 50ml Shaoxing Wine
熱水 10ml Hot Water
麥芽糖 30g Malt Sugar
1.鴨洗淨,切走鴨翼,鴨掌及去除內臟後印乾內部水份
2.海鮮醬,鹽及砂糖拌勻
3.加入五香粉拌勻成醃料備用
4.將醃料均勻塗在鴨內,以牙籤封口(半隻鴨先做步驟5)
5.加入水,蔥薑及紹興酒煮滾
6.鴨在滾水上,以湯勺不斷淋至鴨皮收縮
7.麥芽糖與熱水拌勻
8.外皮塗上麥芽糖水後放在架上風乾4-8小時
9.以180℃焗50分鐘,轉150℃焗10分鐘,放涼切件,取出牙籤,完成
