馬上中秋節啦,今天快快教大家做一個不用蒸烤的懶人冰皮月餅,奶黃餡香甜可口~
🌈食材:冰皮月餅預拌粉100g,熱水100g,蝶豆花4朵,雞蛋3個,低筋麵粉40g,無鹽奶油35g,白砂糖50g,牛奶100g
🌈Ingredients: 100g snowy moon cake premix powder, 100g hot water, 4 butterfly pea flowers, 3 eggs, 40g low-gluten flour, 35g unsalted cream, 50g white sugar, 100g milk
🌼做法:
1、 蝶豆花放入熱水浸泡10分鐘,呈藍色後取出蝶豆花;
2、 將熱水倒入冰皮月餅預拌粉中,攪拌均勻後揉成麵團,分成25g一個;
3、 雞蛋+牛奶+白砂糖混合,攪拌均勻至白砂糖融化;
4、 篩入低筋麵粉,倒入融化的無鹽奶油,攪拌均勻;
5、 不粘鍋開小火,將奶黃糊倒入鍋中,攪拌至濃稠狀態後,冷藏保存;
6、 將25g的小麵團擀成餃子皮大小,包入餡料,收口後放入模具中。

300g unsweetened yogurt (1.05 cup)
3 egg yolks
54g flour (6 Tbsp)
3 egg whites
84g sugar (7 Tbsp)

1 tbsp lemon juice
vanilla
Bake at 150°C(302F) for 60 min + 180°C(356F)for a few minutes to brown
*Egg size is L. 20g yolk and 40g egg white per egg.
