番茄或鳳梨 Tomatoes/ Pineapple

▶調味料 SEASONING
橄欖油 Olive Oil
鹽巴 Salt
大蒜粉 Garlic Powder
味醂 Mirin
醬油 Soy Sauce
辣椒醬 Chili Sauce
甜麵醬 Sweet Bean Sauce @lkkusa
番茄醬 Ketchup
▶作法
① 橄欖油炒香洋蔥
② 加入植物肉丸拌炒
③ 加入番茄或鳳梨拌炒
④ 加鹽巴、蒜粉、味醂、醬油拌炒
⑤ 加辣椒醬、甜麵醬、番茄醬拌炒,小火收汁
⑥起鍋,撒上蔥花,完成♡

#胡麻松阪豬義大利麵
#氣炸松阪豬
#吃宵夜囉
義大利麵一直都是我的愛
但是一般的口味都吃膩了
這次來挑戰一點不一樣的口味
用胡麻醬做為主要的醬汁
吃起來濃郁的胡麻醬的搭配義大利麵
配上氣炸過的松阪豬肉
真的是很過癮!

**材料**
■義大利麵 100g
■鹽巴(煮麵用) 適量
■松阪豬 80g
■味淋 Mirin—1小匙
■醬油1/2小匙
■洋蔥1/4個
■美姬姑 150g
■奶油 2小匙
■桂冠日式胡麻醬 2包
■牛奶 50cc
■鮮奶油 3大匙
**作法**
1.將松阪豬表面擦乾放入氣炸鍋內180度10分鐘,切片後拌入醬油味霖調味
2.用奶油炒洋蔥及菇,加入胡麻醬、牛奶、鮮奶油,煮滾後熄火
3.開另外一鍋水煮義大利麵,7-8分熟的時候起鍋放入步驟2的鍋中拌煮收汁
4.加入松阪豬肉片一起拌炒至喜歡的義大利麵熟度即可

浦燒鰻魚玉子燒 Umaki (Eel Filled Omelette)
Ingredients:
Eggs - 4 pcs
Kabayaki eel - 1 pcs
Scallions (Chopped) - 1 Stalk
Dashi stock - 2 Tbsp
Mirin - 1 Tbsp
Sugar - 2 tsp
Salt - 1/4 tsp
Dried bonito flakes - A Few
Kabayaki sauce - A Few

Preparation:
1. Cut the Kabayaki eel into half.
2. Whisk the eggs with dashi stock, mirin, sugar and salt. Sieve the egg to make it smooth.
3. Heat up a tamagoyaki pan and make sure it's very hot. Apply some oil on it.
4. Add 1/4 of the eggs into the pan. Put half of the eel on the egg and cook until the egg is half way to solidify.
5. Flip the eel and egg towards the handle side. Apply some oil on the pan then push it to another end of the pan.
6. Apply some oil on the pan and add 1/4 of egg.
7. Repeat steps 5 and 6 until eggs are being used up.
8. Use parchment paper to wrap the umaki. Rest for 3 minutes to shape the roll.
9. Lay another half of the eel on the umaki. Apply a small amount of kabayaki sauce on it.
10. Put the dried bonito flakes and chopped scallions on the top.

【浦燒鰻魚玉子燒】
材料:-
雞蛋............................4隻
浦燒鰻魚(切半).......1條
蔥花............................1棵
鰹魚高湯....................2湯匙
味醂............................1 湯匙
糖................................2茶匙
鹽................................1/4茶匙
鰹魚片........................適量
鰻魚汁........................適量
做法:-
1. 雞蛋打發成雞蛋液,加入鰹魚高湯、味醂、糖和鹽拌勻,然後用濾網過篩。
2. 熱油鍋下蛋液,加入1/2份浦汁鰻魚以小火煎至半凝固(約七分熟),從鍋邊把蛋向內捲起,然後把蛋捲向外推至尾端。
3. 從新塗上適量油,然後在蛋卷旁邊加入蛋液(重複以上步驟直至用完所有蛋液)。
4. 完成後之玉子燒可用烘焙紙/壽司竹蓆捲包裹著待3分鐘,使玉子燒定型。
5. 將另外1/2份浦汁鰻魚放在玉子燒上面,最後塗上適量鰻魚汁,加入鰹魚片和蔥花,然後切件便可。
小貼士:-
煎蛋卷時,需要看準時機,若七、八分熟時捲起,這樣蛋皮才較易依附著。

Preparation:
1. Tenderizing the pork chops and seasoning with salt and black pepper.
2. Coat the pork chop with flour, beaten egg and breadcrumbs in sequence.
3. Deep fry the pork chop for 2 times. Using a higher oil temperature in the second deep fry.
4. Adding the dashi stock, mirin, Japanese soy sauce and sugar in a frying pan. Cook until sugar melts.
5. Add onion and bring to boil.
6. Add beaten eggs and deep fried pork chop into the sauce. Cook until the eggs are half cooked.
7. Add scallions and pour the sauce and pork chop over the rice.

【吉列豬扒丼 Katsudon 】2人份
厚豬排............................2塊
麵包糠............................1杯
雞蛋(打發成蛋液)..........1隻
麵粉...............................適量
醬汁材料:-
雞蛋(打發成蛋液).........2隻
鰹魚湯...........................1杯
洋蔥(切絲)....................1/2個
味醂...............................1.5湯匙
日式醬油........................1.5湯匙
糖...................................1湯匙
蔥(切碎)........................少許
做法:-
1. 厚切豬排用鬆肉槌敲打至薄身,平均地撒下黑胡椒碎和鹽。
2. 豬排依次序沾上麵粉、雞蛋液、麵包糠,放入熱油鍋來炸至金黃拿出,然後調高油溫復炸拿出切件。
3. 將醬汁材料之鰹魚湯、味醂、日式醬油、糖拌勻放入鍋內,加入洋蔥煮開,然後下蛋液、吉列豬排入鍋內煮至蛋液半熟,最後加入蔥碎便可。

Do-it-yourself Japanese style Hamburg steak, super easy and delicious! It’s also much more affordable than buying it! Most importantly, the kids love it. This Hamburg steak contains their most hated onions, but it’s all in their stomachs now~ Isn’t that great ~~ hooray!

[材料]
1. 豬,牛肉碎,350g
2. 麵包糠,30g
3. 牛奶,70ml
4. 洋蔥,半顆
5. 雞蛋,1顆
6. 鹽 ,1茶匙
7. 胡椒粉,适量
8. 黑胡椒碎 ,适量
9. 豆蔻粉 (nutmeg powder),半茶匙
[酱料]
1. 水 ,4湯匙
2. 料理酒,3湯匙
3. 味醂(mirin),1湯匙
4. 白糖,1茶匙
5. 醬油 ,1湯匙
6. 黑胡椒,适量
[做法]
1. 洋葱炒至透明(降温后加入绞肉里)
2. 把牛奶倒入面包糠里,搅拌均匀
3. 把浸泡在牛奶的面包糠放进绞肉里(绞肉尽量保持低温,汉堡排才会更多汁)
4. 加入炒过的洋葱,蛋一颗,盐,胡椒粉,黑胡椒粉
5. 用手迅速搓揉至有黏性
6. 把绞肉弄成圆形后,左右手相互拍打,去除里面的空气
7. 锅里倒入油,把汉堡排放进锅里煎至双面略焦
8. 要熟的时候,加入2汤匙水和2汤匙料理酒后,盖上盖子慢火煎5分钟
9. 把肉取出后,在同一个锅,加入剩余调味料
10. 小火煮到酱汁冒泡即可
[Ingredient]
1. Minced pork and beef, 350g
2. Bread crumbs (Panko), 30g
3. Milk, 70ml
4. Half an onion
5. Egg 1
6. Salt, 1 teaspoon
7. Pepper, appropriate amounts
8. Black pepper, appropriate amounts
9. Nutmeg powder, half a teaspoon
[Sauce]
1. Water, 4 spoonfuls
2. Cooking wine, 3 spoonfuls
3. Mirin, 1 spoonful
4. Sugar, 1 teaspoon
5. Soy sauce, 1 spoonful
6. Black pepper, appropriate amount
[Directions]
1. Fry onions till transparent (Chill to room temperature before adding to mince meat)
2. Pour milk into the bread crumbs and mix
3. Pour the milk and bread crumb mixture into the mince meat (Keep mince meat at a cool temperature)
4. Add fried onions, egg, salt, pepper and black pepper
5. Use hands to mix till sticky
6. Shape the mixture into patties, and toss between hands to get rid of air bubbles
7. Pour oil into pan and fry both sides of the patties
8. When the patties are almost cooked, add in 2 spoonful of water and 2 spoonfuls of mirin and let it cook for 5 minutes and your hamburg steak is done
9. Take the hamburg steaks out of the pan and add in the rest of the ingredients for the sauce
10. Cook on low heat till it bubbles
