☘️ Hot and Sour Soup

Here, I would like to share this super easy, yet absolutely delicious recipe with you. I hope you’ll have a go at making it.
The main ingredients for this soup are tofu, bamboo shoots, dried shiitake mushrooms, dried wood ear mushrooms, carrots, mung bean vermicelli (glass noodles), chilli bean paste, vinegar etc; cooked in a clear soup. The dish is characterised by it's sour, spicy, fresh, salty and fragrant flavours.
This soup is rich in nutrients such as protein, calcium, iron, dietary fiber, minerals, and vitamins. It is an indispensable and appetising healthy food which will helps to relieve heat in the hot summer.
Since dried shiitake mushrooms and dried wood ear mushrooms may not be something that people in the UK are familiar with, I have used fresh shiitake mushrooms in this recipe instead, and omitted the dried wood ear mushrooms. However, the traditional ingredients can be found in any Chinese supermarket, Amazon, and Sous Chef.
Shiitake mushrooms are one of the most popular mushrooms worldwide. They are prized for their rich, savory taste and diverse health benefits. Compounds in shiitake may help fight cancer, boost immunity, and support heart health.
You’ll only need 4-5 dried shiitake mushrooms (乾香菇) and 1 piece of dried wood ear mushrooms (木耳). The cooking method for these two ingredients are different to the fresh alternatives, if you have managed to find them and want to use them, let me know and I’ll be happy to explain.
I have found all the suppliers for the above ingredients and have attached the images in the comments below if you do want to give them a go.
You can get the fresh shiitake mushrooms, bamboo shoots and mung bean vermicelli from Tesco, just make sure you search online to ensure they stock them in the branch that you visit.

✳️ Ingredients:
(serves 4)
200g medium firm tofu
250g fresh shiitake mushrooms
1/2 medium carrot
60g tinned bamboo shoots
50g mung bean vermicelli
4 slices ginger
1 tbsp sunflower oil
coriander- washed and chopped to garnish
✳️ Seasonings:
* 1 tsp salt
* 1 tbsp light soy sauce
* 1/2 tsp ground white pepper
* 2 tsp sugar
* 2 tsp sesame oil
* 3 tbsp dark balsamic vinegar
* 2 tbsp white balsamic vinegar
* 1 tbsp chilli bean paste (豆瓣醬 Doubanjiang - you can add more if you can handle the heat)
* 2000ml water
* 1 tbsp vegan oyster sauce / vegan stir-fry sauce
* 3 tbsp corn flour
* 3 tbsp water
✳️ Method:
1. Soak the mung bean vermicelli in warm water until soft, then use scissors to cut into sections.
2. Gently wash and pat dry the tofu and fresh shiitake mushrooms and cut both into thick strips.
3. Peel the carrot, and cut into thin strips. Drain the bamboo shoots, rinse and cut into thin strips.
4. Cut the ginger slices into thin strips then finely dice into small cubes.
5. Mix the corn flour and water together to make a slurry and leave to one side.
6. Heat a large saucepan over medium heat, add oil, then add ginger and fry until slightly brown, stirring gently. Next, add the bamboo shoots and carrots, stir-fry together for a while, add salt, soy sauce, pepper, sugar and sesame oil, and fry until soft.
7. Pour in the black vinegar, white vinegar, vegan oyster sauce and chilli bean sauce. Then, add water and bring to a boil. Turn to low heat and continue to cook for 5 minutes.
8. Put the tofu and shiitake mushrooms in, gently move around with chopsticks or wooden spoon, and add the vermicelli, stirring everything around. Turn to medium-high heat and bring to a boil.
9. Whisk the corn flour water into the soup, a little bit at a time until you reach the desired consistency. If you like it thicker, add a bit more, or if you prefer thinner, add a bit less. After the soup is boiled, taste it and adjust the seasoning, then garnish with coriander.

認識粗糧 vs 精製食物
現代人飲食越趨精緻化,追求軟滑細緻的口感,回想今早那片鬆軟無比的白麵包、午餐吃了碗一滑入口的麵條,還有下午茶的冬甩和蛋糕,白麵包、白麵條、蛋糕餅乾等甜點都是高度精製食物,多吃長遠會造成健康負擔。日常飲食中適量添加粗糧會吃得更健康,粗糧包括全穀類食品,例如大麥、黑麥、燕麥、藜麥、蕎麥、小米、粟米、五穀米、全麥麵粉等,亦包括可以連皮一起吃的粗糧,例如番薯、芋頭、花生、紅豆、綠豆等,有助吸收更多膳食纖維。
2021年想向更健康邁進一步,不妨在飲食上做些小改變,例如在晚餐的白飯中加入少許紅米、糙米或五穀米,白麵包改吃全麥麵包,由拉麵轉吃蕎麥麵或全麥意粉,在飲食中適量加入小米、藜麥、碗豆、鷹嘴豆、紅豆、綠豆、蓮子等,都是輕鬆養生的好方法。 但注意粗糧不是吃得越多越好,過份食用也有損健康,尤其脾胃虛弱、消化能力不佳人士,一時間進食過多纖維反而未能消化,長者、小兒及脾胃虛弱者進食粗糧都要適可宜止。

Understanding coarse grains VS refined food
People these days enjoy delicacies that are soft and smooth – fluffy white bread in the morning, smooth noodles for lunch, and the donuts, buns, cakes and cookies during our afternoon tea. All these are what we called ‘refined food’.
Eating refined food for an extended period would adversely affect our health. Hence, it is best to include some coarse grains into our diet. Coarse grains include whole grains such as barley, rye, oats, quinoa, buckwheat, millet, corn, five-grain rice and whole-wheat flour. Coarse grains with edible skin are sweet potato, taro, peanut, red bean and mung bean. These kinds of food can help increase the dietary fiber in the body.
In order to lead a healthier life in 2021, consider making minor changes to our meals. For instance, add some red rice, brown rice or grain rice into our white rice; eat whole-wheat bread instead of white bread; opt for soba noodles or whole-wheat spaghetti instead of ramen. Add millet , quinoa, pea, chickpea, red bean, mung bean and lotus seeds into our food and beverages, as it can improve the quality of our diet.
Nevertheless, do note that we should not consume coarse grains excessively, especially for individuals who have a weak spleen and stomach, and those with indigestion.

【老吉士 Old Jesse, iapm 環貿店 Shanghai】Back to Jan 2020, somehow I went to Shanghai & nearby as last minute planning. Despite being late in the season, but with annual Weather fluctuations & Global warming, I ordered some Shanghainese Crab Roe & Meat on bean noodles which turned out still great 🦀. But remember to read the last point below! :

🎗️The fresh Shanghai Crab Roe & Tomalley, Meat was so fragrant & tasty, it wasn't remotely funny! 😬🤤😢 Granted I have eaten mediocre ones in Shanghai too b4.
🎗️The 粉皮 Mung Bean noodles used up there is inherently different, compared to the ones served at most Hong Kong shops. I much prefer this type of noodles which are more springy & can be spooned. Ironic thing, & I have said this before, some famous shops in Shanghai use noodles which are Made in Hong Kong but to their spec! So it isn't like these noodles aren't available here.
🎗️Photos 3 & 4 are from HK's 老吉堂. The Noodles are also the texture & type I consider the best for the dish. It just sux that HK shop's Crab flavor is so low, tamed & MSG laddened. Over priced too 🙄
🎗️A lot of people compare 蟹粉粉皮 vs 蟹膏粉皮 these days once again, especially those from Liu Yuan Pavillion 留園雅敘 or 浙江軒. We used to order carefully between these too or say 禿黃油, but I think some eaters for diff dishes can prefer similar to the former, oft cheaper version because it has a sweeter mix of all Crab bits from Meats to corals from Males & Females, all of which contribute a diff profile.
🎗️In fact, some other Crab connoiseur foodies prefer another option called 生拆 公蟹蟹粉粉皮. It is actually picked from raw Crabs 1st, rather than picking from pre Steamed Crabs, & non frozen. 2ndly, despite using only Male Crabs, it utilizes both Male Roes, Milt & also the Meat. This is super hard to come by though, as not many shops are willing to 生拆 them as it is actually much tedious work 喺香港時間等於金錢! Good luck finding & special ordering them in Hong Kong 😋😋😋

春雨は短く切るよりもちゅるちゅる食べたくて、長いまま使っています。胡瓜はもっと沢山入れますが、今日は冷蔵庫に1本しかなくてがっかり、、バッタの私としてはあと1本は入れたいところ、、、。
薄焼き卵もたっぷり入れて、栄養満点^^
赤が入ると綺麗なので、カニカマか人参の千切りを加えますが、赤パプリカでも美味しいです。

【Ingredients】
2.8oz Harusame Noodles
1 Cucumber
1.4oz Kanikama
(crab stick)
*shred with your fingertips
3-4 slices Ham
●Dressing Ingredients
1tsp Chicken bouillon powder
1-2 tbsp Sesame Oil
2-3 Soy Sauce
2 Rice Vinegar
For Sprinkle:
1 tbsp Roasted Sesame Seeds
*Make Thin Omelette(Usuyaki Tamago)
2 Eggs
1 pinch Salt
1 tsp Katakuriko
2 tsp Water
* Vegetable oil
【Directions】
①Make Thin Omelette
Beat the eggs in a bowl. Add the katakuriko dissolved in water, and salt, then mix well.
Thinly grease a frying pan with oil, and Pour in the Step 1 mixture, and evenly spread it out. When the surface starts to harden, flip.
When cooked, remove from the pan, and let it cool and cut them into.
②Cook Harusame Noodles as instructed.
③Cut cucumber. microwave at 600w for 40sec.
Squeeze the Cucumber to remove excess water.
④Ham into thin strips.
⑤Combine all the Dressing Ingredients in a bowl and mix well.
⑥Place everything in a large bowl, add the Dressing and mix well.
⑦Sprinkle Sesame on salad.
To Store
You can store the leftovers in an airtight container and keep it in the refrigerator for up to 3 days.

春雨 80g
胡瓜 1本
かにかま 40g
ロースハム 3-4枚
●Dressing Ingredients
鶏ガラスープの素 小さじ 1
ごま油 大さじ 1-2
醤油 大さじ 2-3
米酢 大さじ 2
For Sprinkle:
白ごま 大さじ 1
*薄焼き卵
卵(M) 2個
塩 ひとつまみ
片栗粉 小さじ1
水 小さじ 2
* サラダ油
【作り方】
①薄焼き卵を作る。
卵を溶いて、塩と水溶き片栗粉を加えてよく混ぜる。
フライパンを熱し油を薄く引いてフライパンを回しながら卵液を均等になるようしながら焼く。表面が乾いたら裏返して数秒焼き取り出して冷ましておく。
***水溶き片栗粉は錦糸卵と同様、卵を破れにくくするために少量加えます。
②春雨は袋の指示通りにゆでる。
私は熱湯につけて5分ほどそのまま置いてからお湯を切り、よくお湯を切って使います。
③胡瓜は細く切り、袋に入れて600wで40秒レンチンしたら、水分を良く絞っておく。
***そのまま加えると胡瓜から水分が出て味が薄くなるので、最初に水分をよく絞っておくと良いです。
④ハムも細く切っておく。
⑤ボウルにドレシングの材料を入れてよく混ぜ合わせる。
⑥ここに材料を全部入れてよく混ぜ合わせる。
⑦器などに盛ったら上に白ごまをふりかけて出来上がり!
●保存
タッパーなどに入れて冷蔵庫で保存。作った日を含めて3日ほどで食べきりましょう。
容器から取り分ける時はその都度必ず綺麗なお箸を使いましょう。

三文魚腩粉絲煲:
材料:
三文魚脂1磅
綠豆粉絲4兩
薑1舊
乾蔥頭6粒
處理:
1. 薑切片
乾蔥頭去皮
2. 三文魚脂,切2”1塊。
3. 三文魚脂,沖洗乾淨,廚紙索乾。
4. 三文魚調味:
a. 胡椒粉少許
b. 雞粉少許
撈勻。
5. 預備醬汁:
a. 水500毫升
b. 雞汁1湯匙
c. 生抽1湯匙
d. 糖1茶匙
6. 預備2茶匙生粉上脆漿。
7. 粉絲,清水浸軟。
烹調:
1. 中火在鑊中燒熱5湯匙油,爆香薑片及乾蔥頭。
2. 薑片及乾蔥頭倒入已洗淨的煲仔內,加入醬汁,中火煲滾。
3. 三文魚,沾上生粉,放在鑊中炸。
4. 煲仔滾起,放粉絲落煲仔,轉慢火。
5. 三文魚已炸至兩面金黃色,倒去多餘的油,打開煲仔蓋,放在粉絲上面,完成。
Claypot with salmon belly and rice vermicelli:
Ingredients:
Salmon belly 1 lb
Mung bean vermicelli 4 taels
Ginger 1 No.
Shallots 6 Nos.
Preparation:
1. Ginger, get it sliced.
Shallots, get it peeled.
2. Salmon, cut with size 2" per each.
3. Salmon, rinse thoroughly, dry with kitchen towel.
4. Season the salmon:
a. Pepper little
b. Chicken powder little
Mix well.
5. Prepare the sauce:
a. Water 500ml
b. Chicken sauce 1 tbsp
c. Light soya sauce 1 tbsp
d. Sugar 1 tsp
6. Prepare 2 tsp tapioca starch for frying purpose.
7. Soften rice vermicelli by tap water for 15 minutes.
Steps:
1. Heat up 5 tbsp oil at medium flame in wok. Fry the ginger and shallots.
2. Put the ginger and shallots with the sauce in a cleaned claypot. Heat up at medium flame.
3. Dip the salmon with tapioca starch before deepfrying in wok.
4. Claypot has been boiled up. Put rice vermicelli, then turn to low flame.
5. The colour of 2 sides of the salmon has been turned into golden yellow. Pour away excess oil. Put the salmon on top of rice vermicelli in pot. Serve.
