When I was starting out in food writing, I thought dry-aged steak meant eating old beef. How wrong I was! 😂
Dry aged beef is a process of curing the meat in a favourable condition for the enzymes in the meat cells to break down the protein, fats and glycogen. So in a nutshell, you're eating steak, level-up or in a term I like to use -- "tahap dewa".
I had a taste of the dry-aged steak selection at Prime, Le Meridien Kuala Lumpur and the wagyu sirloin was top-notch. Definitely a must-try if you're into tender cuts with plenty of umami in the meat itself!
