A culinary staple for many, Hainanese chicken rice is easy to prepare. The right technique to succulent chicken with soft golden yellow skin, well-flavoured chicken rice & most importantly, the chicken rice sauces. 😋

The combination of the refreshing cucumber slices, tender chicken & aromatic rice teaming up with the chilli and soy sauce makes every mouthful a delight. 👍

1️⃣ Start with a SALT RUB to exfoliate chicken. Give it a SPA treatment. TRUST ME. Your chicken will look and taste better this way.
2️⃣ HOT-BATH chicken - 3 to 4 times when water is at a hard boil.
3️⃣ SUBMERGE whole chicken with ginger & scallion in the pot to simmer for 5 mins.
4️⃣ Turn off heat & leave the pot, covered, for 45 mins.
5️⃣ Remove chicken from pot & dip it into a bowl of iced water for an ICE BATH of 10 sec.
6️⃣ Quick cooling will stop the cooking process, keeping the meat soft & tender, thus giving the skin a lovely firm texture.
7️⃣ OIL RUB with sesame oil to glaze the chicken to prevent from drying out.
8️⃣ Chop into bite-size pcs to serve with butter rice along with fresh slices of cucumber accompanied with chilli sauce and a bowl of soup.

韓式辣拌冷麵 Korean Spicy Cold Noodles 비빔냉면
Ingredients:
Korean Buckwheat Noodles - 2 Portions
Boiled Egg - 1 Pcs
Cucumber (Sliced) - 1/2 Pcs
Korean Pear (Sliced) - 1/4 Pcs
Toasted Sesame Seeds (Grated) - 1/2 Tbsp
Lettuces and Perilla Leaf - A Few
Spicy Noodle Sauce Ingredients:
Korean Hot Pepper Flakes - 3 Tbsp
Korean Corn Syrup - 2.5 Tbsp
Korean Soy Sauce - 2 Tbsp
White Vinegar - 1.5 Tbsp
Minced Garlic - 1 Tbsp
Sesame Oil - 1 Tbsp
Sugar - 1/2 tsp
Korean Pear (Grated) - 1/4 Pcs
Pickled Radish Ingredients:
Radish (Sliced) - 90 g
White Vinegar - 1.5 Tbsp
Sugar - 1.5 Tbsp
Salt - 1/4 tsp

Preparation:
1. Prepare the pickled radish. Marinate the sliced radish for 30 minutes and then dried with kitchen towel.
2. Add salt to the sliced cucumbers. Dry it with kitchen towel after 10 minutes.
3. Prepare a mixing bowl, mix all the seasoning paste ingredients all together.
4. Prepare a pot of hot water. Cook the Korean buckwheat noodles for 2.5 minutes.
5. Remove the noodles from heat and put under ice water. After cooling down, sieve out the water.
6. Put noodles into a big noodle bowl. Add the spicy noodle sauce, pickled radish, cucumber, boiled egg, toasted sesame seeds, lettuces and perilla Leaf.

【韓式辣拌冷麵】
材料:-
韓國乾蕎麥麵.............2人份
白烚雞蛋(切半)..........1隻
小黃瓜(切片).............1/2條
韓國水梨(切片)..........1/4個
已烤白芝麻(磨粗粉)..1/2湯匙
生菜&芝麻葉..............適量
調味辣醬:-
韓國辣椒粉.................3湯匙
粟米糖漿.....................2.5 湯匙
韓國醬油.....................2 湯匙
白醋.............................1.5 湯匙
蒜蓉.............................1 湯匙
麻油.............................1 湯匙
糖.................................1/2茶匙
韓國水梨(磨蓉)...........1/4個
醋漬蘿蔔材料:-
白蘿蔔(切片)..............90g
白醋............................1.5湯匙
砂糖............................1.5湯匙
鹽................................1/4茶匙
做法:-
1. 將醋漬蘿蔔材料之白醋、砂糖和鹽混合拌勻,然後加入白蘿蔔片,醋漬30分鐘,拿出瀝乾備用。(可隨個人喜好加入少量辣椒粉拌勻,這樣可使顏色更漂亮。)
2. 小黃瓜片加入1/4 鹽拌勻,醃漬10分鐘至軟身,用廚紙或棉布吸去多餘水分,瀝乾備用。
3. 把所有調味辣醬材料混合拌勻備用。
4. 韓國乾蕎麥麵滾水下鍋,煮2分30秒拿出,然後泡冰水至冷卻,拿出瀝乾放在碗裡。
5. 然後加入調味辣醬、醋漬蘿蔔、小黃瓜、韓國水梨片、白烚雞蛋、白芝麻粉、生菜、芝麻葉,最後加入少許麻油便可。

電飯煲鹵水凍雞腳:
材料:
急凍雞腳8隻(大)
鹵水四寶:
桂皮2塊
八角4~5粒
花椒1/2茶匙
香葉4~5塊
烹調:
1. 電飯煲,煲滾1煲水。
2. 加入1/2茶匙粗鹽,放雞腳落煲。
3. 沖淨鹵水四寶。
4. 雞腳已出水5分鐘,倒去水,逐隻清水沖乾淨,擎乾水。洗淨電飯煲。
5. 放鹵水四寶落電飯煲烘乾。
6. 鹵水汁1支加一支水,倒入電飯煲內。
7. 鹵汁已煲滾,加入2湯匙老抽,然後放雞腳,掩蓋,留一條縫隙。
8. 關掉電飯煲,冚蓋焗10分鐘。
9. 已焗了10分鐘,夾起雞腳連鹵水汁倒入碗中,攤凍,放入雪櫃雪3小時。
10. 已經雪了3小時,上碟。
Chicken feet with Chinese marinade in rice cooker:
Ingredients:
Frozen chicken feet (large) 8 Nos.
Four treasures of Chinese marinade:
Cinnamon 2 slices
Star anise 4~5 Nos.
Pepper 1/2 tsp
Bayleaf 4~5 pcs
Steps:
1. Heat up a pot water in rice cooker.
2. Put 1/2 tsp cooking salt into pot, then chicken feet.
3. Rinse "the four tresures of Chinese marinade".
4. Chicken feet have been soaked for 5 minutes, pour away water. Rinse them one by one. Hang dry. Rinse rice cooker.
5. Fry up "the four tresures of Chinese marinade" in rice cooker.
6. One bottle of Chinese marinade mix with one bottle of water, pour into rice cooker.
7. Chinese marinade has been boiled up, put 2 tbsp dark soya sauce into marinade, then the chicken feet. Put the lid on pot but leave a gap in between.
8. Turn off rice cooker, leave it "keep warm" for 10 minutes.
9. Already "keep warm" for 10 minutes, pick up chicken feet with marinade pouring into a bowl. Leave it cooling down, then put into refrigerator at least 3 hours.
10. Have already put in refrigerator for 3 hours. Serve.
