🌟 Tofu Fa with Ginger 薑汁豆腐花 $12. Very smooth despite eating the cold version, with some natural soy beans taste too, which is rare in HK nowadays. Definitely up there in HK Top 3 in recent years. No need to add the red sugar, I just put some in for the photo contrast 📸
🌟🌟 Refrigerated Milk Tea 無冰凍奶茶 (1 glass) $15. It comes as either plain or with ginger juice, also available as whole bottles. Super strong yet smooth 👍🏻👍🏻
🌟 秘製咸檸茶 $20 Proprietary Salted Lemon Tea. Also super greatly balanced, natural tasting. Buy one for the hiking!
🤷🏻♂️ Sea Urchin Fried Rice 海膽炒飯 $118. Inevitably this won't be that amazing, but it does use local HK Sea Urchins, unlike the shops near central Sai Kung 西貢碼頭 which in recent years switched to US or Canadian urchins (unless u find the Urchin Boat parked outside, then order from it directly 🛶).
🌟 椒鹽魷魚 Fresh Local Calamari Salt & Pepper style $118 (not ordered this round). The version here carries a 'secret', but no one writes about it somehow. Their proprietary recipe carries some curry flavor 咖哩味, so it's actually a 咖哩椒鹽魷魚 but it's not recorded down officially 🤔 Not sure if I am even suppose to write this online but there u go?

【Tap Mun 塔門 Island, Sai Kung, Hong Kong】is famous for eating these items plus more, it isn't new. But there are some catches that u need to write an explanation book of 📖. Since there are only 5 to 6 shops on the island selling any form of food, and 3 shops converged to sell similar items. But there are indeed differences:
📍新漢記海鮮酒家 = 唔係粉嶺客家菜嗰間 🤣 was always here, selling local Seafood dishes. But they also sell the above. U come for local prawns & squid cuttlefish, fishes, etc
📍新惠和 = *here, is considered the Best for overall recipes of the above, plus their drinks are equally thoughtful
📍新有記 = was originally only a store 士多. But later on they opened a new kitchen at back, then started copying food from the other 2 shops. It's not meant to be as good, but somehow their 鮮炸墨魚丸 is considered the best

Instead of doing an Easter Egg hunt this Easter, how about doing a Colonial-era Postbox Hunt! Found 3 more colonial-era Post boxes in Hong Kong ✌🏻 It is not as difficult as you thought, 59 of them are still in service.

Unlike the new postboxes, which are made of fibreglass, the colonial-era post boxes are made of cast-iron and were painted in red. As the city returned to China in 1997, these red post boxes were repainted green. 59 of them are still in service.

Crab dishes are very popular in Singapore especially when you can find it in almost every Zi Char store. One of the most sought-after food items has to be the Salted Egg Yolk Crab! The hype of Salted Egg may have dipped with the rise of Mala but it is definitely a dish that you will regret not trying!
The richness from the salted egg paired with the sweetness from the flesh of the crab. Once you start, it’s hard to stop, the shiok-tisfaction only gets bigger... and BIGGER!
Endulge in this plate of savoury and buttery goodness with your family this Chinese New Year!
Ps: Crabs have to be prepared and then cooked immediately, if you leave it out for too long, it releases an unpleasant ammonia stench!

For this video, we headed back to Neo’s Kitchen to complete a 6KG Ichiran Ramen Challenge! Ichiran Ramen is a popular Fukuoka Ramen chain almost exclusively based in Japan, with limited outlets in Taiwan, USA and Hong Kong. They specialise in Tonkotsu-style Ramen, which is pork-based. As they do not have a physical location in Singapore, we opted for their own Instant Ramen brand that is supposedly very close to the in-store Ichiran Ramen in flavour. For our convenience and to take advantage of their exclusive discount on Ichiran Ramen, we ordered most of our ingredients from Qoo10 and had them delivered to our doorstep. Here is what we got from Qoo10:

The Ichiran Ramen box came elegantly designed and packed while the char siew and eggs had straightforward instructions for preparation. After some time in the kitchen and a speedy assembly process, we ended up with a massive 6KG bowl of Ichiran Ramen. 10 portions of noodles were piled into our Giant Bowl, which was then filled to the brim with the Tonkotsu broth. 6 sliced eggs and 2 blocks of char siew were gingerly placed on top to round off the dish. The bowl was delicately garnished with spring onions, seaweed and rehydrated fungus. Unfortunately, we had difficulty cutting the char siew, so we opted to leave 1 intact.
Flavour-wise, it is probably one of the best Instant noodles I have ever had. It was rich with the deep and intense pork flavour you come to expect from Tonkotsu Ramen from restaurants. The noodles had a clean flavour without any taste of preservatives and retained their springy texture even after sitting in the broth for some time. It also came with a topping of chilli powder, which adds a strong spicy kick for those who enjoy it. The eggs were well-marinated and gooey in the middle. The char siew was moist and tender with the signature savoury pork flavour of good char siew.
All in all, it was an enjoyable challenge because it was homemade, delicious and convenient thanks to Qoo10. We tend to find ourselves needing instant noodles eventually, usually in the dead of the night or as comfort food, and you would be hard-pressed to find any better than this Instant Ichiran Ramen. A génoise French: ʒenwaz usually spelt genoise in English), also known as Genoese cake or Genovese cake, is an Italian sponge cake. Instead of using chemical leavening, air is suspended in the batter during mixing to provide volume.
It is a whole-egg cake, unlike some other sponge cakes for which yolks and whites are beaten separately. The eggs, and sometimes extra yolks, are beaten with sugar and heated at the same time, using a bain-marie or flame, to a stage known to patissiers as "ribbon stage". A genoise is generally a fairly lean cake, getting most of its fat from egg yolks, but some recipes also add in melted butter before baking.

Recipe Ingredients:
Flour 110g
Cornstarch 40g (⅓ cup approximate)
sugar 110g(⅔ cup
eggs 5 medium
salt ¼ tsp
pure vanilla extract 2 tsp
butter 50g
20cm x 7cm//5"x3" cake tin
bake at 160-165°C preheated oven
40-45 minutes
note: use parchment paper on the side of the pan too if you have to produce less crumb.
