This is my first time making piped butter cookie and I made two mistakes 😔😔
1st mistake: The recipe was for regular butter cookie but I decided to make chocolate and green tea flavour as well. I spilt the batter into three and added cocoa powder in one part and green tea powder in another part. When I was mixing them I started to wonder why was it so much harder to mix the chocolate and green tea dough. Then I realized what I did wrong 😐😐
I forgot to subtract the amount of flour by the amount of cocoa powder/green tea powder I put in. To explain further, if the recipe calls for 30g flour, and to make it into chocolate flavour I will need 5g cocoa powder. So what I need is 25g flour instead of 30g because the weight of the dry goods should always stay the same. Therefore I should have spilt the batter into threes BEFORE adding in flour 😅
2nd mistake: always always use a large decorating tip for pipping cookies. I felt like my hand was going to fall off because it took me so much strength to squeeze the cookie dough out, and moreover the cookie look ugly because I couldn't pipe them properly 😂. After switching to my Wilton 1M tip, everything got so much easier 😎😎
Just hoping to write this down so I will remember it forever. I am not new to baking at all but sometimes you just forget (like my 1st mistake) or you just don't know the right tool to use when you make something the first time. But now I am confident that my next batch would be perfect!!

バレンタイン用に苺とココア味の絞り出しクッキーを焼いてみました。(ラッピングのみの予定がついクッキーを焼いてしまいました、、笑)
サクサクと軽い焼き上がりでやめられないとまらないクッキーです^^
絞った形を綺麗に焼きあげるために、絞り出し後に必ず冷蔵庫で冷やして下さい。
焼く前のオーブンの予熱はしっかりと!
また、バターをしっかり混ぜてホイップ状にすると、グルテンができにくくなってよりサクサクの生地になります。

【Ingredients】
●Strawberry taste(2~2.5cm×40 cookies)
40g unsaltedbutter
20g powdered sugar
10g egg whites
Vanilla oil
40gcake flour
5g Strawberry powder
●cocoa taste(2~2.5cm×40 cookies)
40g unsaltedbutter
20g powdered sugar
10g egg whites
Vanilla oil
40gcake flour
5g cocoa powder
【Directions】
①Make butter soft and creamy.
②Mix it with a whisk until it gets white and soft.
③Add powdered sugar and mix more.
④Add the egg whites and Vanilla oil and mix.
⑤Add shifted cake flour and Strawberry powder and mix well.
⑥Add the mixture from Step ⑤ to a piping bag fitted with a star-shaped nozzle and pipe out onto a baking try lined with parchment paper.
⑦Cool it in the fridge for about 2 hours.
⑧Preheat the oven at 160°C and bake them for about 15 min.
*Make the cocoa version as well.
*Let it cool and store in an airtight container.
【材料】

無塩バター 40g

苺パウダー 5g

【作り方】苺味(ココアバージョンも同様)
①ボウルにバターを入れて柔らかくする。
②白っぽくなるまで泡立て器で混ぜる。
③粉砂糖を入れてさらに混ぜる。
④卵白とバニラオイルを加えて混ぜる。
⑤薄力粉といちご粉をふるい入れてよく混ぜる。
⑥⑤の生地を星口金をつけた絞り袋にに入れ、クッキングシートを敷いた上に絞り出す。
⑦生地を冷蔵庫で約2時間冷やす。
天板ごと冷やすと焼くときに温度が下がるので、まな板など薄手の平らなものがあればその上に乗せて、生地を冷やすといい。ここでしっかり冷やせば、形が綺麗に残る。
⑧オーブンを160℃に温めて15分ほど焼く。
*苺味は焼きすぎると色が茶色になってしまうので、目を離さずに注意しながら焼く。
天板が2枚あるときは途中で上に被せてしまっても良い。
ただし焼き時間を短くしてしまうとカリッと焼けずに美味しくないので、焼き時間を2分ほど追加する。
ご家庭のオーブンにより焼き時間は調整してください。
*苺パウダーは100円ショップなどのものは使わないようにしましょう、失敗します。
ココアパウダーは必ず製菓用のものを使ってください。
*完全に冷めたら密閉容器などに保管してください。

The taste is buttery, not too sweet, and crunchy, quite similar to Danish butter cookies. Below are the list of ingredients and some tips for 100% success in the first attempt :)
INGREDIENTS
240 grams unsalted butter - softened at room temperature
240 gram icing sugar (granulated sugar is also fine)
2 eggs medium sized
1 teaspoon/tsp (5 ml) vanilla extract
400 gram all purpose flour
TIPS:
1. Using cookie press:
- Use a non-greased baking tray. Don't line any parchment papers. Don't use silicon mats because the cookie dough needs to stick to the tray.
- Hold the press very tight with the other hand while you press. Only press once but firmly.
2. Using piping tips
- You can leave the dough at a warm place to soften it a bit before adding it into a piping bag. Soft dough is easier to be piped. After finishing piping the dough, you can add the whole tray into the fridge to make the dough firm back.
However, note that this recipe doesn't require the dough to be chilled to hold the shape.
- For the jam in the middle of the cookie, you can use raisins, soaked in warm water or Rum/ Brandy until soft. You can also make your own jam following the instruction in this video: https://youtu.be/J1V1mFWqi_I
3. Using cookie cutters:
- It's easier to roll the dough through a sheet of parchment paper as in the video.
- No need to chill the dough before baking, this cookie dough holds shape very well.
