vegan (adj.) 嚴守素食主義的; (n.) 嚴守素食主義的人
vegetarian (adj.) 素食主義者的、吃素的; (n.) 素食者

看了英漢字典的解釋之後，還是不是不確定差別。平平都是素食，到底差在哪裡呢?
- Vegan不吃肉、蛋、奶、蜂蜜等，也就是認為從動物所取得的食品都不吃。通常是指"純素食者(全素)"。
-Vegetarian不吃魚、不吃肉。但是有些會吃乳製品(牛奶、起司等)，有些也會吃蛋。所以通常是所謂的"蛋奶素者(Ovo-Lacto vegetarian)"。主要分為兩種：
(1)Lacto vegetarian (乳素者): 會吃乳製品
(2)Ovo vegetarian (蛋素者): 會吃蛋。不吃魚膠(是一種從動物的骨頭或結締組織提煉出來無味的膠質)，或是其他動物性食品。
Vegan和Vegetarian如果當形容詞的話，也是這樣的分辨方式!
