For our next #popup #series, we’re inspired by Chef Selassie Atadika of @midunu in #ghana whose unique brand of new African cuisine has been featured at a State Dinner and the prestigious James Beard Foundation @beardfoundation . Her commitment to sustainability and preserving culture is embodied in her non-profit Midunu Institute, which is recruiting and training youth ambassadors to document traditional culinary practices in 3 of the 10 regions of Ghana. This is aimed at promoting the culinary uses of regional ingredients and increased interest in agricultural biodiversity and climate-smart crops.
