小心高鈉食物
高血壓是一種動脈血壓升高的慢性疾病,分為原發性及續發性,續發性高血壓有明確病因,例如懷孕、內分泌異常、腎病等;而原發性高血壓與遺傳、年齡、體重等有關,如果父母都患有高血壓,子女遺傳機率可高達六成,而患病率隨年齡增長而增加,所以如有高血壓的遺傳風險,宜檢視生活與飲食方式,遠離疾病。
常說吃太鹹的食物容易導致高血壓,其實導致高血壓元兇是鈉,鈉不只存在於鹽裡,有些吃起來不太鹹的食物鈉含量都相當高,故購買包裝食物要留意營養標籤,世界衞生組織建議成人每日的鈉攝取量應少於2000毫克(即略少於一平茶匙鹽)。
常見高鈉食物:
白麵包 — 「無味」的白麵包加入鹽及酸度調節劑乙酸鈉等製作
麵條 — 杯麵鈉含量高,有些乾麵條鈉含量也不少
燒味 — 燒味製作時加入大量調味料
醬料 — 豉油、蠔油、雞粉、鹵水汁、魚露、蝦醬等都是高鈉調味料
罐頭 — 為延長罐頭保質期製作時添加鹽分
湯 — 湯底味道越濃郁,鈉含量就越高
醃製食品 — 火腿、香腸、午餐肉、榨菜、泡菜、鹹蛋等都是高鈉食物
零食 — 薯片、蝦片、餅乾、魷魚絲等小小一片鈉含量都很高

Beware of high-sodium foods
Hypertension is a chronic disease related the pressure of blood pushing against the arteries. There are two types of hypertension — primary and secondary. Secondary hypertension has apparent causes, for instance, pregnancy, endocrine disorders, and kidney problems. On the other hand, primary or essential hypertension is associated with hereditary, age, and weight.
If both parents suffer from hypertension, their children have a 60% chance of inheriting it. Chances of having hypertension would also increase with age. If you are at risk, do observe and adjust your lifestyle and dietary habits to keep hypertension at bay.
People always tell us that eating extremely salty food can cause hypertension. The main culprit of hypertension is actually sodium, which does not only exist in salt, but also foods that are not even salty. Therefore, keep an eye on the nutritional label of foods before buying them. The World Health Organization suggests that an adult should consume less than 2000mg of sodium per day. This is equivalent to less than one teaspoon of salt.
Foods that are high in sodium:
White bread — contains salt and acidity regulator like sodium acetates
Noodles — cup noodles and some dried noodles have high sodium content
Roasted foods — spices and seasonings are ingredients used to enrich the flavor of roasted foods
Sauces — soy sauce, oyster sauce, chicken stock powder, braised and brined sauce, fish sauce, and shrimp paste are all high in sodium
Canned foods — sodium is added to canned foods to extend their shelf life
Soup — soup that is rich in flavor normally contains a lot of sodium
Pickled foods — ham, hot dog, luncheon meat, pickled mustard, and salted egg are high-sodium foods
Snacks — potato chips, prawn crackers, biscuits, and even dried shredded squid are high in sodium

天麻湯袪風緩頭痛
遇上頭痛發作,長輩都會推介飲天麻魚頭湯,聽說有祛頭風作用。從中醫角度來看,天麻性平,有息風止痙、平肝潛陽、袪風通絡的功效,通常會加入川芎及白芷同煲,兩種藥材都性溫,川芎能祛風寒、止頭痛、行氣活血,白芷則有解表散風、通竅、止痛作用,所以這款湯適合血瘀或高血壓引致的頭痛,亦適合產後婦女祛風去瘀血之用。由於此湯藥材偏溫熱,感冒、體質偏熱、口乾舌燥、大便乾硬者不宜飲用。中藥的祛風藥材有分辛涼及辛溫兩大類,不清楚藥性而胡亂服用恐怕會延誤病情,還是諮詢註冊中醫師為妥。
黑木耳川芎白芷天麻素湯
功效:袪風止痛,紓緩因血瘀或高血壓引致的頭痛。
材料:黑木耳1塊、紅蘿蔔2根、川芎12克、白芷12克、天麻12克、生薑2片、紅腰豆40克
做法:
1. 所有材料洗淨,黑木耳泡水至軟身,紅蘿蔔去皮切大塊。
2. 直接於鍋中加入約2500毫升水,放入全部材料,以武火煮至水滾,調文火煮約1.5小時,最後下鹽調味即可。
Gastrodia soup to dispel wind and relieve headache
When you have a headache, the elderly will recommend gastrodia soup with fish as it has the effect of dispelling wind. From traditional Chinese medicine perspective, gastrodia is mild in nature, can relieve convulsion and spasm, calm the liver and suppress yang, dispel wind and regulate meridian. It is usually cooked with Ligustici Chuanxiong and Bai Zhi. These two herbs are warm in nature. Ligustici Chuanxiong can dispel cold wind, relieve headache, promote qi and blood circulation. Bai Zhi can relieve exterior symptoms, dispel cold and relieve pain, so this soup is suitable for those with headache due to blood stasis or hypertension. It is also suitable for those after childbirth to dispel wind and clear blood stasis. As ingredients of this soup are warm and hot in nature, those with cold/flu, heat-related body condition, dry mouth and dry stool should not have it. Herbs that can dispel wind are divided into spicy and cool, and spicy and warm. Do not take the medicinal herbs if you do not know their nature, otherwise you may worsen the symptoms. It is better to consult a registered Chinese medicine practitioner.
Gastrodia vegetarian soup
Effects: dispels wind and relieves pain, relieves headache due to blood stasis or hypertension
Ingredients: 1 black fungus, 2 carrots, 12g Ligustici Chuanxiong, 12g Bai Zhi, 12g Gastrodia, 2 slices of raw ginger, 40g red kidney beans
Preparation:
1. rinse all ingredients thoroughly. Soak black fungus until soft. Peel carrots and cut into pieces.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

1. Himalayan salt contains trace minerals but such amount is not significant and has provides extra benefits than table salt.
2. Excessive intake of any salt contributes to hypertension.
Conclusion: Be cautious with health claims from “health products” or food industry.
