1.宮保皮蛋
材料
A
皮蛋 3顆 \ century egg 3
太白粉 適量 \ potato starch
蒜末 15g \ garlic 15g
乾辣椒 15g \ dried chili 15g
洋蔥片 40g \ onion 40g
青椒 40g \ green Pepper 40g
蔥段 15g \ scallion 15g
B
醬油 2茶匙 \ soy sauce 2tps.
鹽 1/4茶匙 \ salt 1/4tsp.
白醋 1大匙 \ rice vinegar 1tbsp.
糖 1大匙 \ sugar 1tbsp.

蒜味花生 適量 \ peanuts
香油 適量 \ sesame oil
作法
1.取一鍋冷水蓋過皮蛋,小火煮滾10分鐘後沖涼去殼,再切成8瓣備用。
2.材料B混合成宮保汁備用。
3.熱鍋,倒入500cc的油,加熱至油溫約150℃,將皮蛋裹上一層薄太白粉後,入鍋以大火炸至表面微酥後撈起瀝乾油。
4.鍋中留少許油,放入蔥段、蒜末及乾辣椒炒香,下皮蛋以大火快炒5秒。
5.邊炒邊加入宮保汁炒勻,再加入香油及蒜香花生即可。
2.皮蛋蒼蠅頭
材料
A
皮蛋 2顆 \ century egg 2
蒜末 15g \ garlic 15g
辣椒末 15g \ chili 15g
豆豉 25g \ fermented black bean 25g
絞肉 150g \ minced pork 150g
韭菜花 150g \ bud chive 150g
B
醬油 2茶匙 \ soy sauce 2tsp.
糖 1/2茶匙 \ sugar 1/2tsp.
香油 1茶匙 \ sesame oil 1tsp.
作法
1.取一鍋冷水蓋過皮蛋,小火煮滾10分鐘後沖涼去殼切丁;韭菜花切丁,備用。
2.熱鍋,加入1大匙沙拉油,放入蒜末及辣椒末爆香,再加入豆豉及豬絞肉,以中火炒至肉色變白。
3.加入材料B、皮蛋切丁、韭菜花丁,以中火炒約2分鐘拌勻即可。
3.皮蛋水晶凍
材料
A
皮蛋 2顆 \ century egg 2
四季豆 40g \ dwarf bean 40g
紅蘿蔔 30g \ carrot 30g
紅甜椒 30g \ red pepper 30g
B
洋菜條 6g \ agar 6g
水 650ml \ water 650ml
鹽 1/2茶匙 \ salt 1/2tsp.
白胡椒粉 少許 \ white pepper powder
米酒 1茶匙 \ cooking rice wine 1tsp.
香油 少許 \ sesame oil
作法
1.取一鍋冷水蓋過皮蛋,小火煮滾10分鐘後沖涼去殼,切丁備用。
2.四季豆汆燙2分鐘,取出泡冰水切丁;紅蘿蔔跟紅椒汆燙後切丁備用
3.洋菜條加水600ml煮沸,轉小火煮至洋菜條化掉為止,加鹽、白胡椒、米酒、香油攪勻。
4.將皮蛋丁、四季豆丁、紅蘿蔔丁、紅甜椒丁加入作法3的洋菜液中放入冷藏待結成凍狀即可。
4.金沙皮蛋
材料
A
皮蛋 2顆 \ century egg 2
熟鹹蛋 3顆 \ salted duck egg 3
苦瓜 1條 \ bitter gourd 1
蔥白 15g \ scallion 15g
蒜末 15g \ garlic 15g
蔥花 適量 \ scallion
B
糖 1茶匙 \ sugar 1tsp.
米酒 1大匙 \ cooking rice wine 1tbsp.
1.取一鍋冷水蓋過皮蛋,小火煮滾10分鐘後沖涼去殼,再切粗丁;鹹蛋白切粗丁;鹹蛋黃切細丁;苦瓜去瓜囊切薄片再汆燙過,備用。
2.熱鍋,倒入適量的油,放入鹹蛋黃用大火炒散至起泡,待鹹蛋黃已沒有小顆粒,加入蔥白、蒜末爆香。
3.再下鹹蛋白、皮蛋丁、苦瓜片、材料B,全部拌炒均勻後撒上蔥末即可盛盤。

材料:
蒜 15,豬腩肉 250g,韭菜 適量,飯 1,蠔油 1 tbsp,生抽 1 tbsp,韓國魚板 2片,小鯷魚 1杯,蔥 適量,洋蔥 1/4,青辣椒 1, 紅辣椒 1,芝麻鹽,百搭辣醬
做法:
1. 炒香蒜,豬腩肉,加入韭菜,飯,蠔油,生抽,炒勻
2. 炒香韓國魚板,蔥,洋蔥
3. 炒香小鯷魚,青辣椒, 紅辣椒
4. 加入百搭辣醬,芝麻鹽,分開炒勻

▪ INGREDIENTS:
-Fried Rice: 1 Microwavable Rice, 1 Strip Pork Belly (250g), 15 Piece Whole Garlic, 1 Handful Chive, 1 Tbsp Oyster Sauce, 1 Tbsp Soy Sauce
-Stir-Fried Fish Cakes: 2 Sheet Fish Cake, 1 Handful Chopped Scallion, 2 Tbsp Stir-Fried Red Pepper Paste, Sesame Oil
-Stir-Fried Anchovies: 1 Cup Anchovy, 1 Red Pepper, 1 Spicy Green Pepper, 2 Tbsp Stir-Fried Red Pepper Paste, Sesame Salt
▪ DIRECTIONS:
1. Stir-fry 1/2 cup cooking oil, 1.5 cup minced onion, 1/2 cup minced scallions, 1/2 cup minced garlic and 1/3 cup of ground pork until the grease comes out.
Add 1/4 cup sugar, 1 cup red pepper paste and 1.5 Tbsp soy sauce and boil.
(Measured by disposable paper cup)
2. [Left]
1) On the left side of the pan, add oil and stir-fry 2 sheet of sliced fish cakes.
2) Add 1 handful of chopped scallions and 1/4 sliced onion.
Add 2 Tbsp of stir-fried red pepper paste.
3) Finish off by adding a sprinkle of sesame salt.
[RIGHT]
1) Stir-fry 1 cup of anchovies on an oiled pan.
2) Add 1 chopped spicy green peppers and 1 chopped red peppers.
Add 2 Tbsp of stir-fried red pepper paste and stir-fry.
3) Finish off by adding a sprinkle of sesame & salt mixture.
3. Cook 15 whole garlics on an oiled pan. Add 1 strip of chopped pork belly on the side and grill. When pork belly starts to cook, add 1 handful of chives, 1 serving of cooked rice, 1 Tbsp oyster sauce and 1 Tbsp soy sauce to make fried rice.
