Heads of prawns and shell were soaking in the bubbling red broth to which she had delicately removed from the fat juicy prawns that later found themselves in the actual soup. It was absolutely beautiful. Luscious thick rice noodles seeped in a mildly spicy broth with shards of lemongrass and flash-boiled squid so tender it simply melted between the teeth.
