材料:
雞肉2磅(可以用雞髀或者雞胸)
洋葱1個
蒜茸1湯匙(可根據個人喜好加多減少)
麵粉、牛油各100克(份量1比1)
鮮奶2-3杯(可以用清雞湯代替)
白酒2杯(不喜歡酒精可以不加)
蘑菇、大啡菇(Portobello)各半磅,用乾淨布或廚房紙抹乾,不要用水洗。
做法:
1.雞肉洗乾淨切塊晾乾水分之後,加入白酒一杯鹽一茶匙及適量胡椒粉拌勻,最好放入雪櫃兩小時。
2.易潔鑊先落牛油,中小火煮溶加入麵粉轉中火爆炒,然後慢慢分幾次加入鮮奶,由麵團逐漸開稀成麵糊,最後成為濃稠白汁,放一旁備用
3.另外用鑊加油先爆香蒜茸、洋葱,加入白酒煮至酒精完全揮發
4.加入醃製好的雞肉,炒至雞肉變色,然後加入預先做好的白汁及蘑菇一同翻炒
5.中慢火煮20分鐘左右,再加入適量胡椒粉及鹽調味即可
貼士:加幾滴鮮露或辣椒仔汁,配飯配意粉都好味
Chicken a la King
Ingredients:
Chicken meat 2 lb (Use chicken thigh or breast)
Onion 1pc
Minced Garlic 1 tbsp
Flour & Butter each 100g (1:1)
Milk 2-3 cups (Option for chicken broth)
White Wine 2 cups (No add if don’t like alcohol)
Mushroom & Portobello each 1/2 lb (Clean with kitchen paper)
Steps:
1. Wash and slice chicken meat, drain it. Add a white wine, 1 tsp of salt and some pepper ground into the chicken meat, mix well. Put it to the refrigerator for 2 hours.
2. Add butter in the frying pan, cook on mid-low heat until melting. Turn to mid-heat, put in flour and stir fry. Add milk gradually into the pan. The dough turns into a thicken cream sauce.
3. Saute minced garlic, onion. Put in white wine, cook until the alcohol is evaporated.
4. Stir fry the chicken until to golden brown. Put in cream sauce, mushrooms and stir well .
5. Cook about 20 mins with mid-low heat. Season with some pepper ground and salt.
TIPS:Put some seasoning soy sauce or tabasco into chicken a la king. And good taste with rice or pasta.
