Dish: Braised Pork Belly Served In Chinese Steamed Bun

A rice cooker can cook more than rice and it can make wonder if you’ve got one with innovative technology. I am blessed to have this Tefal Optimal Fuzzy Logic Rice Cooker that is packed with plenty of features and settings, first in my menu to share here is the ALL-In-ONE ~ Braised Pork Belly Served In Chinese Steamed Bun ~ all done in a rice cooker.��Simply stir fry the pork belly and spices in the inner pot of the rice cooker, cover, set the time and let it cook. When it’s ready, steam the leaf bun in the steam basket. Serve with lettuce and cherry tomatoes to complete your meal. Sounds easy and tempting right? Ingredients:
Yield 3 servings
600g Pork Belly
2 tbsp Cooking Oil
7 Lotus Leaf Bun
1 Butterhead Lettuce
1 Punnet Cherry Tomato
Some Coriander Leaves
(A)
2 tbsp Light Soy Sauce
1 tbsp Rice Wine
1 tsp Sesame Oil
(B)
45g Shallot (sliced)
15g Garlic (lightly pounded)
15g Ginger (sliced)
(C)
1 Cinnamon Stick
1 Star Anise
5 Clove
1/2 tsp Chinese Five Spice Powder
1/2 Cumin Powder
1/4 tsp Salt
3 tbsp Dark Soy Sauce
2 tbsp Light Soy Sauce
1/4 tsp Garlic Pepper
35g Rock Sugar
1 3/4 cup Water
Method:
1. Wash the pork belly, pat dry with kitchen towel. Cut into 7 thick slices. Add in (A), mix well. Cover with cling wrap and let it marinate for 1 hour.
2. Turn the rice cooker on DIY mode, heat 2 tbsp of cooking oil in the inner pot. Add in (B), stir fry until fragrant.
3. Add pork belly (reserve the marinates). Cook the pork belly until both sides are slightly brown. Add in the remaining marinates.
Tips: The 3D spherical pot encourage heat circulation from all direction. Make sure there’s no overlapping when you add in the pork belly so that the sides are cooked evenly. It’s fine if the pork belly are placed at the sides of the pot.
4. Stir in (C). Mix well.
5. Close the lid. Set the time to 45 minutes (DIY mode).
6. When the cooking is done, place the Chinese leaf bun on the steam basket. Open the rice cooker lid, flip the pork belly. Put the steam basket in the rice cooker, close the lid, set the time to 15 minutes (DIY mode).
7. To serve: Gently tear-open the steamed lotus leaf bun. Place a lettuce leaf followed by a slice of braised pork belly and some coriander leaves. Serve with cherry tomatoes and more lettuce to complete your meal.

1.乾燒荷包蛋

番茄醬 2大匙 ketchup 2tbsp.
辣椒醬 2大匙 chili paste 2tbsp.
甜酒釀 2大匙 sweet fermented rice 2tbsp.
蔥花 15公克 scallion 15g
蒜末 20公克 minced garlic 20g
薑末 10公克 minced ginger 10g
水 200cc water
糖 1茶匙 sugar 1tsp.
太白粉水 1大匙 tapioca starch with water 1tbsp.
作法:
1.鍋中噴油,將蛋打入鍋中煎至蛋白凝固且邊緣微焦,再用鏟子將靠近蛋黃編翻面煎定型,兩面焦香即可舀起備用。
2.鍋中再爆香蒜末與薑末,倒入辣椒醬、番茄醬與水煮滾後,再加入酒釀、糖煮滾再勾芡,起鍋後撒上蔥花即可。
2.燒椒荷包蛋
材料:

荷包蛋 6顆 over easy egg 6
糯米椒 60公克 sweet green chili peppers 60g
辣椒 40公克 chili peppers 40g
蒜片 30公克 garlic slice 30g
B
水 150cc water
醬油 1大匙 soy sauce 1tbsp.
黑醋 1大匙 black rice vinegar 1tbsp.
糖 1大匙 sugar 1tbsp.
米酒 1大匙 cooking rice wine 1tbsp.
作法:
1.鍋中噴油,將蛋打入鍋中煎至蛋白凝固且邊緣微焦,再用鏟子將靠近蛋黃編翻面煎定型,兩面焦香即可舀起備用。
2.鍋中噴油爆香蒜片、辣椒與糯米椒。
3.將材料B倒入鍋中續煮,湯汁滾後加入荷包蛋燒至汁收乾,最後加入黑醋即可。
3.魚香荷包蛋
材料:

薑末 10公克 minced ginger 10g
蒜末 20公克 minced garlic 20g
蔥花 15公克 scallion 15g
辣豆瓣醬 2大匙 chili bean sauce 2tbsp.
豬絞肉 100公克 minced pork 100g
水 150cc water
B
醬油 1大匙 soy sauce 1tbsp.
糖 1茶匙 sugar 1tsp.
白醋 1大匙 rice vinegar 1tbsp.
米酒 1大匙 cooking rice wine 1tbsp.
太白粉水 1大匙 tapioca starch with water 1tbsp.
作法:
1.鍋中噴油,將蛋打入鍋中煎至蛋白凝固且邊緣微焦,再用鏟子將靠近蛋黃編翻面煎定型,兩面焦香即可舀起備用。

3.再加入辣豆瓣醬煸出紅油,再加入水,並加入材料B煮至滾勾芡,起鍋後撒上蔥花即可。
紅燒蔥爆蛋
材料:
荷包蛋 6顆 over easy egg 6
蔥段 50公克 scallion 50g
薑絲 20公克 shredded ginger 20g
辣椒片 15公克 chili slice 15g
醬油 2大匙 soy sauce 2tbsp.
米酒 1大匙 cooking rice wine 1tbsp.
水 100cc water 100cc
糖 1茶匙 sugar 1tsp.
作法:
1.鍋中噴油,將蛋打入鍋中煎至蛋白凝固且邊緣微焦,再用鏟子將靠近蛋黃編翻面煎定型,兩面焦香即可舀起備用。
2.鍋中噴入少許油,爆香蔥段、薑絲與辣椒,再倒入水、醬油、糖與米酒,煮至滾後加入荷包蛋至入味即可。

La paella es el plato tradicional de España, un rico arroz con mariscos.
Pero en Japón, mejillón y camarón con cabeza son muy caros, por eso cociné con ingredientes japoneses, por ejemplo hongos shimeji, almeja (en la temporada en Japón), y camarón sin cabeza (usado ingredientes muy económicos en Japón). Y también, no tenemos paellera por eso cociné en sartén.
Lo siento no es la paella Valenciana o España, pero te gustan mi receta!!!
Paella is a traditional dish from Spain, a very tasty rice dish with seafood.
But in Japan, mussel and head-on shrimp are very expensive, so I used Japanese ingredients, such as shimeji mushrooms, clams (in season now), and head-off shrimps. Also, we don't own paellera (paella pan) in Japanese households, so I used a frying pan (Tefal pan with removable handle).
Sorry this recipe is not from Valencia or Spain, but I hope you like my recipe!!!

Paella Japonesa (How to Make Japanese-Style Paella)
Difficulty: Easy
Time: 40min
Number of servings: 3 people
Necessary Equipment:
26cm (10.2inch) frying pan
Ingredients:
180g (6.4oz.) chicken thigh without skin
3 bacon strips
6 large shrimps
120g (4.2oz.) squid body
200g (7.0oz.) clams
100g (3.5oz.) shimeji mushrooms
1 (75g=2.5oz.) small green pepper
1 (75g=2.5oz.) small red pepper
1 (200g=7.0oz.) tomato
1.5 cups = 240g (8.5oz.) rice
a pinch of saffron
350ml hot water
1/2 (100g=3.5oz.) onion
1 clove garlic
50ml white wine (or sake)
1 bouillon cube (or consomme cube)
1 bay leaf
2 tbsp. olive oil
lemon wedges
Directions:
1. If your clams have some sand in them, place the clams in a dark container and fill it with salted water (as salty as sea water). And let sit for several hours. The clams push salt water and sand out of their shells.
2. Soak a pinch of saffron in the 350ml hot water to extract the color.
3. Devein shrimps with shells using a bamboo skewer or a toothpick. Cut squid into rings. Cut chicken and bacon strips into bite-sized pieces. Break shimeji mushrooms into pieces. Mince the onion and garlic. Cut peppers into strips. Dice the tomato.
4. Heat the olive oil in a pan. Saute onion and garlic until fragrant. Add bacon, chicken, and squid, then cook until cooked through. Then add rice and stir until evenly coated with oil.
5. Add white wine (or sake), saffron hot water (2.), bouillon cube (or consomme cube), bay leaf, shimeji mushrooms, and diced tomato. Cover (use a lid without a hole, or if you have a hole on your lid, seal it with aluminum foil) and bring to a boil on high heat for 5 minutes.
6. Add shrimps and clams on top of the rice. Cover and set to low heat and let it simmer for 13-15 minutes until water is absorbed and rice is cooked - you can quickly peep into the pot and check.
7. Arrange peppers on top, cover again, and steam on low heat for 5 minutes.
8. Uncover, and turn the heat to high until when you hear the crackling noise (until the liquid is gone).
9. Garnish with lemon wedges and serve directly from the pan.
