Resepi Roti Puri & Kari Ayam Mudah | Easy Poori & Chicken Curry Recipe

Resepi Roti Puri
Bahan-bahan
2 cwn tepung gandum
3 sb minyak
2 sk gula
1/2 sk garam
1 sk yis
1/2 cwn air
Nota:
1. Pastikan doh betul-betul mengembang sebelum dibulatkan dan dileperkan.
2. Leperkan doh kepada beberapa kepingan sebelum menggoreng. Ini bagi memastikan semua roti kembong gebu.
3. Jangan leperkan semua doh sekaligus baru menggoreng sebab ianya akan mengakibatkan kepingan doh yang terakhir tidak mengembong apabila digoreng.
Resepi Kari Ayam
Bahan-bahan
1 biji kentang (dipotong dadu)
500 gm isi ayam (dipotong kecil)
1/2 cwn minyak masak
200 ml santan
1/2 cwn air (ikut kepekatan kuah)
1/2 sb garam
1/4 cwn air limau nipis
8 sb rempah kari daging
2 sb serbuk cili
Sedikit air
Bahan-bahan untuk dikisar
4 biji bawang merah
4 ulas bawang putih
1 inci halia
Sedikit air
Bahan-bahan untuk ditumis
2 tangkai daun kari
2 batang kayu manis
2 kuntum bunga lawang
3 buah pelaga
1 biji bawang merah (dihiris)
Nota: Bancuh dahulu rempah kari sebelum masak untuk mendapatkan kepekatan kuah kari sekata.
Cara memasak
1. ROTI PURI: Gaulkan tepung, minyak, gula, yis dan garam di dalam bekas.
2. Kemudian, masukkan air sedikit demi sedikit. Gaul rata dan uli sampai adunan tidak melekat pada tangan dan menjadi doh yang lembut.
3. Tutup mangkuk dengan plastik dan rehatkan doh selama 15 minit.
4. Setelah doh kembang, keluarkan doh supaya mudah diuli.
5. Bulatkan doh menjadi bola mini dan canai sehingga leper.
6. Panaskan minyak, goreng sampai agak kembung dan kekuningan.
7. KUAH KARI: Bancuh rempah kari dan serbuk cili dengan sedikit air untuk dijadikan pes.
8. Panaskan minyak, tumiskan bahan tumisan sehingga naik bau.
9. Masukkan bahan kisar dan kacau seketika sehingga kekuningan.
10. Masukkan pes kari. Teruskan menumis hingga pecah minyak (tambahkan air jika terlalu kering untuk mengelakkan hangit).
11. Masukkan ayam dan kacau sehingga 2-3 minit.
12. Masukkan kentang, santan dan air limau nipis. Masak sehingga ubi kentang dan ayam menjadi empuk.
13. Tunggu sehingga mendidih dan perasakan dengan garam.

Poori Bread Recipe
Ingredients
2 cups of wheat flour
3 tbsp of oil
2 tsp of sugar
1/2 tsp of salt
1 tsp of yeast
1/2 cup of water
Note:
1. Make sure the dough is properly risen before round and flatten.
2. Flatten a few before deep fry. This is to ensure poori is puffy.
3. Do not flatten all dough simultaneously as it will make the last rolled dough not puffy when deep frying.
Chicken Curry Recipe
Ingredients
1 potato (diced)
500 gm chicken fillet (cut into small pieces)
1/2 cup of cooking oil
200 ml coconut milk
1/2 cup of water (according to the gravy consistency)
1/2 tbsp of salt
1/4 cup of key lime juice
8 tbsp of meat curry powder
2 tbsp of chili powder
Bit of water
Ingredients for grinding
4 onions
4 cloves of garlic
1 inch ginger
Bit of water
Ingredients for saute
2 stalks of curry leaves
2 cinnamon sticks
2 star anise
3 cardamoms
1 onion (sliced)
Note: Make the curry powder paste first before cooking to get an even curry gravy consistency.
Cooking methods
1. POORI BREAD: Mix flour, oil, sugar, yeast, and salt together inside a container.
2. Then, add in water bit by bit. Mix them well and knead until the dough does not stick to the hand and becomes a soft dough.
3. Cover bowl with plastic and rest the dough for 15 minutes .
4. Once the dough is risen, remove the dough so that it will be easier to knead.
5. Round the dough into a mini ball and roll dough until thin.
6. Heat oil, deep fry until puffy and yellowish.
7. CHICKEN CURRY: Mix curry powder and chili powder with bit of water to make a paste.
8. Heat the oil, saute sauteing ingredients until fragrant.
9. Add in grinded ingredients and stir for a while until golden.
10. Add in curry paste. Continue sauteing until the oil separates (add water if it is too dry to avoid burnt).
11. Add in chicken pieces and stir for about 2-3 minutes.
12. Add in potatoes, coconut milk and key lime juice. Cook until potatoes and chicken are tender.
13. Bring to a boil and season with salt.
