Here is my latest obsession - vegan chickpea "tuna" salad :)
It takes under 10 mins to make, so perfect for a quick snack, breakfast or lunch. You can eat it alone, on top of some lettuce cups, or even in a sandwich!
RECIPE:
- 1 can chickpeas/~250g cooked chickpeas
- juice of 1/2 lemon
- 3 pearl red onions/1 small shallot, chopped
- 2 tbs vegan mayo
- 1 tsp dijon mustard
- salt & pepper (season to taste)
