4 dried shiitake mushrooms

For the pickle radish:
1 ½ cup (90g) dried radish
1 cup (240ml) water
¼ cup (60ml) rice vinegar
½ cup (100g) sugar
¼ cup (140g) fish sauce
For other combinations:
⅓ cup (150g) peeled, deveined shrimps
1 tsp fish sauce
