Hello friends! Today we're going to share with you how to make a French style Pineapple Vanilla Rum Jam (Confiture D’ananas Á La Vanille au Rhum).
It’s the season for pineapple locally. Pineapple is super sweet and less expensive than usual since they're in season now. If you want to preserve more delicious pineapples, making jam is a good way.
We have made Taiwanese pineapple jam before, but this time we’re going to make the French style, the recipe is inspired by Christine Ferber. Pineapple laced with vanilla and dark rum, the whole combination worked brilliantly and produced a delicious result in texture and flavor. It’s a Must Try recipe. Enjoy the video. :)

How to make French Pineapple Jam With Vanilla & Rum
Here is the French Pineapple Jam With Vanilla & Rum Recipe
☞ Jam Container is 500ml
✎ Ingredients
pineapple 500g, remove the skin and core
rum 50ml
sugar 375g
vanilla extract 1/2 teaspoon (or a stick of vanilla bean)
lemon 1
✎ Instructions
1. Cut the pineapple in half through the center, and then cut into 3 for each half. Remove the core.
2. To use a sticker or a small knife, remove the pineapple seeds to make a perfect texture and taste.
3. Slice the pineapple into 2~3mm thick. Weigh out 500 grams of pulp.
4. Place pineapple slices into a saucepan, add the sugar, vanilla extract, then squeeze a lemon juice.
5. Cook on medium heat, stirring frequently, until the pineapple mixture simmers slightly for a few minutes.
6. Pour the pineapple mixture into a large bowl, cover with parchment and let cool. Then cover with plastic wrap and refrigerate overnight.
7. Next day, pour the mixture into the saucepan and bring to a boil over medium heat. Stir frequently and skim any scum that rises to the surface. After boiling, continue to cook for 8~10 minutes. Stirring occasionally.
8. When the fruit and liquid cook to the gel point, or until 105C, add the Rum and continue to cook for 3 minutes.
9. Once cooked, pour the jam into sterilized containers. Place lids and seal. Turning the jars upside down. Let cool and place in the refrigerator.

Marbré Au Chocolat, aka Chocolate Marble Cake is an iconic French store-bought dessert. It’s traditionally baked in a loaf tin in France. This cake is very moist and not sweet, it’s a perfect treat for any time of the day.
This is a simple recipe and very easy to make, it tastes like pound cake, but the taste is richer and buttery, butter gives lots of flavor. And one serving of cake can taste the flavors of vanilla and cocoa. Heartily recommend. 💕

How to make French Chocolate Marble Cake
Here is the French Chocolate Marble Cake Recipe
☞ Mold size: 16x7x6cm
✎ Ingredients
unsalted butter 100g
powdered sugar 100g
egg 2, about 110g
vanilla extract 1.3g
honey 9g
All purpose flour 110g
baking powder 1.3g
cocoa powder 9g
a pinch of salt
✎ Instructions
1. Grease the cake pan with butter, then line with parchment paper.
2. Use a mesh strainer to sift powdered sugar. Then sift flour and baking powder together. Set aside.
3. Place softened butter and a pinch of salt into a large mixing bowl. Using a hand mixer on medium speed to cream the butter for 4-5 minutes, or until butter is pale yellow and fluffy. Use a rubber spatula to scrape the sides of the bowl once or twice while mixing.
4. Add half sugar and mix for 1 minute, then add the rest of sugar and vanilla extract, then mix for another 1 minute.
5. Add honey, and add egg one by one, and mix well after each egg is added. Scraping down the sides of the bowl as necessary.
6. Add the half sifted flour and baking powder, fold it in gently with spatula until the flour has disappeared. Repeat again with the remaining flour until well combined.
7. Simply pour 2/3 of the cake batter into a piping bag. Set aside.
8. Add the cacao powder into the rest of 1/3 of the batter and slowly mix it in until combined. Then pour the cacao batter into another piping bag.
9. Once the two cake batters are ready, it's time to combine them to create the marble effect. Cut off the tip and pipe the batter into the cake pan, alternating between the two colors.
10. After placing all the batters, you can use a fork, a bamboo stick or a butter knife to swirl the batters together. It's the fun part of the recipe, you can create your own marble pattern. Now the cake is marbled and ready to bake.
11. Preheat the oven to 200C, and bake for 15 minutes, then reduce the temperature to 160C, bake for 22~24 minutes.
12. Once baked, remove the cake from the pan, and let cool on the rack.

How to make French Chocolate Cake
Gâteau Au Chocolat Recipe
📍 Cake Tin Size: A round cake tin, the diameter is 15cm/6”
✎ Ingredients
70% bittersweet chocolate 125g
unsalted butter 125g, cut into small cubes
granulated sugar 100g
all-purpose flour 35g
egg 2, medium size, room temperature
a pinch of salt
* more butter and flour to grease the cake tin
✎ Instructions
1. Butter the baking pan and flour the pan, then shake it around the edge, next invert the pan and tap out any excess flour.
2. Crack two eggs into a bowl, and whisk them slightly, set aside.
3. Use a knife and carefully shave off or chop the chocolate into small pieces.
4. Put the chocolate and butter into a large bowl, and place on top of a saucepan 1/3 full with simmering water over low heat, use the hot water bath to melt them. Once melted, remove from heat.
5. Add the sugar until perfectly amalgamated.
6. Add eggs in two batches, mix until the mixture is incorporated each time, then add the remaining egg, mix again until well combined.
7. Sift the flour and salt into a bowl, mix until it disappears from the dough. but do not over mix.
8. Pour the batter into the pan, and smooth the top with a spatula.
9. Preheat the oven to 180C, bake for 22~25 minutes. Once baked, take out the cake and place it on a wire rack, let it cool down.
10. You can lightly dust with powdered sugar, or pour the ganache evenly over the top, or even put some fruits or whipped cream as you like.
