Miss going to Plan B to eat their Kale's salad. So today I want to make my own version to fulfill my craving. It is a fun & colourful salad because in their recipe, they have added Mamee Monster's noodle crackers. The crunchiness makes the salad interesting and fun. Even kids who do not like green vegetables will end up enjoying it. Just like Lala!
Ingredients for 5 pax:
- 250g kale, thinly shredded
- 20 cherry tomatoes, cut
- 1 cucumber, shredded
- 1 bell pepper, diced
- 100g rocket leaves
- 1 green apple, shredded
- 1 carrot, shredded
- 20 strawberries, cut half
- 2 whole red onions, finely cut
- 2 lime, cut half
- 3 packs Mamee Monster crackers, crushed
- 5 to 6 tbsp Kewpie Roasted Sesame Dressing
- 3 to 5 tbsp extra virgin olive oil
- pinch of salt
- 1 tbsp mustard
You can basically add any kind of green leaf vegetable and fruits to this salad. My kids said they look like "Yee Sang" for Chinese New Year. Yayy!

◾因為老公是個無肉不歡的正港男子漢
( 🤣讓我笑一下🤣 )
而我是個喜歡吃酪梨、也必須吃酪梨的女子🙈,所以這道菜就此在我家餐桌上誕生。
◾之前好友私下詢問我酪梨的食譜,為了她來好好筆記這道菜的做法。

難處:花點時間慢慢炸出成功的蒜片...

<做法如下>
▪材料:
牛肉粒/beef
羽衣甘藍/kale
酪梨/avocado
蘋果/apple
蒜頭/garlic
黃金烤肉醬/Ebara Gold Barbecue Sauce
▪做法:
① 將牛肉粒用 #黃金烤肉醬 醃漬。
Marinated the beef cubes with Ebara Gold Barbecue Sauce.※1.
② 羽衣甘藍洗淨切段、酪梨切塊、蘋果去籽切片泡鹽水、蒜頭切片備用。
Cut kale into sections. Cut avocado into small cubes. Sliced apple and garlic.
③ 冷鍋冷油,將蒜片一片片不重疊的放入冷油裡,再開小火慢慢炸,蒜片一變色就夾起來放在瀝網或餐巾紙上,在旁一片片不重疊瀝乾。炸蒜片的油充滿蒜香,可以另外撈起,未來炒菜或拌麵使用。※2.
Fried the garlic: Cold oil in cold pan, put sliced garlic in oil but dont stacked each other. Fried by small fire. Take it from the pan as soon as the color changes.
④ 準備好食材、炸好蒜片,這時牛肉也差不多醃漬好了,直接使用③的鍋子隨意炒牛肉,不用多洗一次鍋子,炒至自己喜歡的熟度。
Fried the marinated beef. You can direct used the pan which just fried garlic.
⑤ 炒好的牛肉粒與羽衣甘藍、酪梨、蘋果片拌在一起,再灑上蒜片就完成了~不用像我那樣擺盤也一樣好吃的!
Mix all the ingredients with beef, done!

※1. 我使用簡易真空法醃漬,如IG影片5/10,只需要夾鏈袋、一盆水就可以做到類真空效果;放冷藏醃漬大約20分鐘,就可以入味。真空醃漬可以讓醃料更平均地與肉的每個表面接觸,讓肉的醃漬更平均入味。Vacuum to marinated are more fast(about 20min) and evenly. There a easy way to do like vacuum as the video 5/10.
※2. 炸蒜片別等到金黃才夾起,餘溫會使蒜片加熱過頭而焦掉。Garlic don't fried to the gold color, will going to burned and blackened after taking out.
※3. 不喜歡吃全生菜的朋友,也可以將羽衣甘藍在牛肉快起鍋前放入拌炒。You can also add kale to fried if you don't like to have raw kale.
※4. 重口味的朋友可以多淋一點醬料喔!Add more sauce is ok.
◾這道料理我做了好幾次,期間也第一次使用了國產酪梨,發現國產酪梨很好吃耶!唯一缺點就是好大顆,都用不完。羽衣甘藍與蘋果可以讓這道菜的口感更加清爽喔!請務必要加!沒有羽衣甘藍可以用其他生菜替代。應友人要求,附上英文食譜,一定有文法、拼字錯誤🙈。

甘口更有水果蜂蜜味。

500g Liver

Make your eggs your favourite way. I like scramble eggs for wraps.
I used Byron Bay Chilli Salsa in my wrap with some salad leaves!

Day 4 Lunch Nandos Chicken
Home made Vegetables lol. I need to get my veges in so I brought my own!
Day 4 Chicken Broth with Vegetables
This was cooked a month ago and I just freezed it in the freezer. My chicken broth is usually cooked in a slow cooker for about 24 hours. Very tasty! I add a bit of apple cider vinegar and salt. That's it!
Day 5 Prawn Salad
A bit bunch of mix salad leaves
Tomatoes
Capsicum
Byron Bay Chilli Salsa (mild)
Avocado
Purple Carrots
(Add your favourite vegetables - you can use cucumber, or even feta cheese!)
I stir fry the prawn with some coconut oil, salt, ginger powder and a bit of chilli powder too.
Grill the liver in the oven for about 10-15 minutes at 200 degree celsius. Then mashed it into minced liver.
Now cook capsicum with coconut oil and add kale and cook for another minute. Set it aside
Use more coconut oil and pan fry the minced liver! Add some salt, apple cider vinegar, ginger powder and coconut aminos.
