In this episode, we whipped up a 3.5KG Nuclear Mac’N’Cheese in Neo’s Kitchen using Samyang’s Hot Chicken Sauces. We are all familiar with the traditional forms of Mac’N’Cheese, be it purely cheese and pasta goodness, juiced up with bacon and spring onions or cooked with evaporated milk. Instead of following the tried and tested methods, we decided to spice ours up quite literally with the fiery concoctions made by Samyang. Samyang is a famous brand from Korea that are known for their spicy products.
Hot Chicken Sauce comes in 3 varieties, Original (in black), Extreme (in red) and Cabonara (in pink), and are available island-wide in quaint bottles. Other than the addition of these sauces, we did not veer much from your standard Mac’N’Cheese. Using Gruyere and Cheddar as our cheeses, we tossed 2 bags of elbow macaroni into the resulting Mornay sauce. To the Mornay, we added the Extreme and Cabonara varieties of the Samyang Hot and Spicy Sauce. The Mac’N’Cheese was then piled onto our Giant Plate and garnished with more grated cheddar, spring onions and additional drizzles of the sauces.
The Mac’N’Cheese was deliciously heavy as expected, thick and gooey. The Carbonara sauce was mild and creamy, very suitable for those with low spice tolerance while the Extreme sauce was spicy as expected, but not overwhelming and perfect for Asian palates. Mixing them into the Mac’N’Cheese gave it a distinct red colour and a refreshing kick to the savoury dish. The sauces were slightly salty, so reduce your added salt if you attempt this dish. Our choice of Gruyere and Cheddar came together beautifully, bringing nutty and salty notes to the pasta.
As expected for a heavy milk-based dish, it became a struggle towards the end but I pushed through. One thing about the Samyang Hot Chicken Sauces is that you can customise the spice level simply by adjusting the amount of it you squeeze into the dish you are making. They are also very versatile, especially for spice-lovers and the adventurous, as the food you can use them on are almost limitless. In this video, we headed down to Lim's Fried Oysters to eat a massive plate of Oyster Omelette. Lim's Fried Oysters is located at Berseh Food Centre, near Jalan Besar MRT station. Oyster omelette, also known as orh luak in Chinese dialect, is a traditionally Chinese dish brought over to Singapore by immigrants. It is a savoury dish with oysters tossed in eggs in the style of an omelette, with sweet potato starch added to make it thicker and crispier. It is usually accompanied with a chilli sauce on the side. Lim's Oysters is a family-run business that was passed down from father to son, who is the current chef, with over 50 years of operation.
For my serving, I ordered 20 plates worth (SGD$100), which were plated onto my giant plate. Garnished with coriander, it was speckled with thick, juicy oysters and looked tantalisingly good. The omelette was crispy on the outside and moist on the inside, with a plump oyster present every other bite. Fried in lard, it was sinfully delicious with a visible pool of oil on my plate. The addition of the sour and slightly spicy chilli sauce, together with the fresh coriander, complemented the "heaviness" of the dish well. As always, with such a heavy, decadent dish, it became rather overwhelming towards the end. As a single serving, it would be a perfect and affordable treat for yourself during this Covid-19 period.

It seems like residents in Kovan love minced meat fishball noodles. At Kovan Market and Food Centre, there are three very popular minced meat fishball noodles — Chun Fu Fishball Minced Meat Noodle Laksa (春福鱼圆肉脞面.叻沙, #01-04), Fa Ji Minced Meat Fishball Noodle (发记肉脞鱼圆面, #01-05) and Yam Mee Teochew Fishball Noodle (炎成潮州鱼丸面, #01-35). Every day during lunch and dinner, expect to see queues at not one, but all three stalls.
I have tried all three stalls, and to be really honest (not a PR answer), three of them are really above average. Even though they sell the same dishes, but in terms of seasonings and ingredients, all of them have different recipes and use different suppliers. So it really boils down to personal preference.
For me, I prefer Fa Ji Minced Meat Fishball Noodle because I like stronger flavours, and Fa Ji’s chilli sauce really won me over.
