2 tbsp Hoisin sauce
2 tbsp Honey
2 tbsp Light soya sauce
1 tsp Dark soya sauce
2 tbsp Shaoxing wine
1 tsp 5 Spice powder

2 cloves Grated garlic
2 tbsp Sugar
200ml Water

韓国風チーズマンドゥ(餃子)
2人分
材料:
■餃子の餡
豚ひき肉 150g
木綿豆腐 100g
白菜キムチ(みじん切り) 150g
にら(みじん切り) 30g
(A)しょうゆ 小さじ1
(A)酒 小さじ1
(A)にんにく 小さじ1
(A)ごま油 小さじ1
(A)塩 少々
(A)白いりごま 小さじ1
餃子の皮 20枚程度
サラダ油 大さじ2→ 適量
水 50ml
■チーズソース
ピザ用チーズ 200g
生クリーム 20ml
■コチュジャンソース
コチュジャン大さじ1
酒 大さじ1
はちみつ 小さじ2
しょうゆ 小さじ1
作り方
1. 木綿豆腐はキッチンペーパーに包んで10分ほど水切りする。ペーパーで包んだままぎゅっと水気を絞る。
2. コチュジャンソースを作る。ボウルにコチュジャン、酒、はちみつ、しょうゆを入れよく混ぜる。
3. 餃子の餡を作る。ボウルに豚ひき肉、木綿豆腐、キムチ、にら、(A)の調味料を入れて、白っぽくなるまでよくこねる。
4. 餃子の皮のふち半分に水を塗り、(3)を中央にのせて、ひだを作って閉じる。
5. 2つ折のように皮の両端を中央に寄せ、水を付けてとめる。
6. スキレット鍋にサラダ油を熱し、(5)を円になるように並べて、中火で2分ほど焼く。
7. 両面に焼き色がついたら水を回し入れ、蓋をして3分ほど蒸し焼きにする。蓋を開けて水分を飛ばし、焼けたら一度取り出す。
8. (7)のスキレット鍋にピザ用チーズと生クリームを入れて中火にかけ、かき混ぜながら溶かす。
9. (7)のマンドゥを溶かしたチーズの上にのせ、コチュジャンソースをかけたら、完成!

INGREDIENTS
Gochujang Sauce
1 tablespoon gochujang
1 tablespoon sake
2 teaspoons honey
1 teaspoon soy sauce
Gyoza Dumplings
150 grams ground pork
100 grams tofu
150 grams Chinese cabbage kimchi, chopped
30 grams Chinese chives, chopped
1 teaspoon soy sauce
1 teaspoon sake
1 teaspoon garlic
1 teaspoon sesame oil
A pinch of salt
1 teaspoon sesame seeds
20 sheets gyoza skins
Vegetable oil
50 milliliters water
Cheese Sauce
200 grams mozzarella
20 milliliters heavy cream
PREPARATION
Drain water off the tofu.
In a small bowl, add gochujang, sake, honey, and soy sauce, then combine. Set aside.
Add ground pork, tofu, kimchi, Chinese chives, soy sauce, sake, garlic, sesame oil, salt, and sesame seeds in a bowl. Mix them very well until sticky.
Scoop a spoonful of filling onto the middle of the gyoza skin. Apply water along the edge of half the skin with your finger. Fold in half. Apply water to one corner, then fold into the center.
Heat vegetable oil in a pan over medium heat and lay gyoza in a single layer for 2 minutes.
When both sides of the gyoza turn brown, add the water and cover with a lid. Steam for 3 minutes.
Remove the gyoza, and add mozzarella and heavy cream to the skillet. Cook over medium heat until the cheese has melted and is bubbling.
Arrange the gyoza on the mozzarella sauce. Pour the gochujang sauce on the top.

1 tablespoon Chinese rice wine
0.5 teaspoon of salt
A few dashes of white pepper
Egg white
2 tablespoons of cornflour
