Resepi Mi Wantan Sup Dumpling | Wonton Noodle in Dumpling Soup Recipe

Bahan-bahan Dumpling
250 gm ayam cincang (boleh diganti dengan daging jika suka)
30 gm bawang holland (dicincang)
30 gm lobak merah (dicincang)
30 gm daun bawang (dihiris)
30 gm cendawan shitake (dicincang)
1 sudu teh garam
1 sudu besar tepung jagung
1 sudu teh minyak bijan
Kulit dumpling
Bahan-Bahan Sup
1500 ml air
1 inci halia (dihiris)
2 ulas bawang putih, (dihiris)
5 gm daun bawang (dihiris)
3 biji cendawan shitake (dihiris)
1 sudu teh garam
1 sudu teh stok ayam
1 sudu teh minyak bijan
50 gm Pak Choi
250 gm mi wantan
Bahan-bahan Sos Pedas
1 sudu besar emping cili
1/3 cawan minyak masak
1 batang kulit kayu manis
3 biji buah pelaga
1 batang bunga lawang
1 sudu teh garam
Cara memasak
1. Untuk dumpling ayam, campurkan kesemua bahan dalam sebuah mangkuk, tambahkan garam, tepung jagung dan minyak bijan. Gaulkan sehingga sebati.
2. Letakkan sesudu campuran ayam ke dalam kulit wantan dan letak sedikit air dikelilingnya supaya mudah lekat. Lipat dan kelim setiap bucu wantan dengan kemas. Resepi ini akan dapat 30 biji dumpling ayam.
3. Seterusnya adalah proses memasak sup stok ayam. Dalam satu periuk masukkan air, hirisan halia, bawang putih dan cendawan shitake. Masak sehingga mendidih dan perasakan dengan garam, stok ayam, minyak bijan diikuti dengan daun sup.
4. Bila sup mula mendidih, masukkan dumpling dan masak lebih kurang 10 minit.
5. Untuk sos: sangai kulit kayu manis, buah pelaga dan bunga lawang sehingga naik bau dan ketepikan. Kemudian, panaskan minyak dan tutup api, masukkan emping cili dan garam. Kacau dan campurkan kesemua sekali bahan yang telah disangai tadi ke dalam campuran minyak dan siap.
6. Celurkan mi wantan di dalam air panas menggelegak seketika. Toskan. Hidangkan mi wantan bersama sup dumpling ayam. Dumpling juga enak dihidangkan begitu sahaja tanpa sup dan mi dan dimakan bersama sup.

30 gm holland onion (minced)
30 gm carrot (minced)
30 gm spring onion (sliced)
30 gm shitake mushroom (minced)
1 tsp salt
1 tbsp corn starch
1 tsp sesame oil
Dumpling skin
Wonton Soup Ingredients
1500 ml water
1 inch ginger (sliced)
2 cloves garlic, (sliced)
5 gm green onions (sliced)
3 nos shitake mushroom (sliced)
1 tsp chicken salt
1 tsp chicken stock
1 tsp sesame oil
250 gm wonton noodles
50 gm Pak Choi
Spicy Sauce Ingredients
1 tbsp chili flakes
1/3 cup cooking oil
1 pcs star anise
3 pcs cardamoms
1 pcs cinnamon
1 tsp salt
Cooking methods
1. For the chicken dumpling, mix all the ingredients into a bowl, add salt, corn starch and sesame oil.
2. Spoon a tablespoon of mixture onto each wrapper and brush the edges of each wrapper with a little water. Fold wrapper over the mixture and then starting from one end, pleat and press the edges together. For this recipe will get 30 pieces chicken dumpling.
3. Next is the step for making chicken-stock soup. Add water, ginger, garlic slices and shitake mushroom in a pot, and cook until boil. Then, add the salt, chicken stock and followed by the spring onion.
4. Add the dumpling when the soup is boiling. Cook about 10 minutes.
5. For the sauce: in a small saucepan, pan fry without oil star anise, cardamon and cinnamon until aromatic, then put aside. Next, heat the cooking oil in a small pot, and turn off the heat, and then add the chili flakes and salt. Mix to combine and add the spices into the oil mixture.
6. Immerse noodle in hot water for a while and then simmer it. Serve wonton noodle with dumplings soup and serve with the spicy sauce. Dumpling also delicious when serve without soup and eaten with the sauce only. Bonne appetite.
