• ½ medium daikon
• 1 carrot
• 1 small cucumber
• 7 oz (200 g) tenderloin pork
• 7 oz (200 g) shrimp, peeled and deveined
• 2 red jalapeños (optional)
• ½ white onion
• ¼ cup roasted peanut, chopped
• ¼ cup deep fried shallot
• Vietnamese cilantro
• white distilled vinegar
• salt
• pepper
• sugar
• deep fried shrimp crackers
Dressing:
• ¼ cup fish sauce
• ¼ cup sugar
• 1 tbsp water
• 1 garlic clove, peeled
• 1 red jalapeños, discarded seeds
• ½ lime

Warm up with this wonderful bowl of beef pho!
I used a pressure cooker and slow cooker to cook the broth, but you can also make the broth in a normal pot. Let it simmer uncovered for at least 5 hours after adding all of the spices and flavorings. Happy cooking everyone!

• 5 lbs. (2.5 kg) beef bones
• 3 lbs. (1.5 kg) beef oxtail
• 3 medium yellow onions, peeled, cut in half
• 1 daikon, peeled, cut into thick cubes
• 10 shallots
• 4 garlic cloves
• 6 whole star anise
• 6 whole cloves
• 2 cinnamon sticks
• 1 Tbsp dried clementine peel
• 1 Tbsp coriander seeds
• 1 tsp fennel seeds
• 1 black cardamom pod
• 2 tbsp salt and plus
• Black pepper
• 4-inch (10 cm) piece of ginger, sliced
• 1 Tbsp distilled vinegar
for the bowls
• 2 lbs. (1 kg) banh pho fresh
• 1 lb. beef sirloin or eye of round
• 1 white onion, sliced thin, soaked in cold water for 30 minutes
• ½ cup chopped cilantro and green onion (green part only)
• fish sauce
• fresh long coriander
• fresh Thai basil
• 2 cups mung bean sprouts
• Thai chilis, sliced
• 1-2 limes, cut into wedges
• Sriracha hot sauce
