You may be familiar with the sweet yellow meat of the jackfruit, but are you familiar with the other part. The part that cooks up into the most amazing “meat” substitute you’ve ever had. The “new” vegan food that’s taking the world by storm (it’s only “new” in the west, we’ve been cooking with it here in Thailand for hundreds of years:))
Get This Goodness Going
Raw Jackfruit
Tom Yum Spices
For The Buttermilk
Soy milk: 1 Cup
Apple Cider Vinegar: 1 Teaspoon
Flour For Frying: As needed
Then Do This
1. Slice the jackfruit into bite sized pieces, then boil until soft
2. Mix buttermilk ingredients above, slowly adding the flour until it thickens up nice
3. Once the jackfruit gets all soft and stuff, take it out and whack it with a hammer until it’s even softer.
4. Dry the jackfruit and season with the tom yum spices
5. Make the jackfruit into burgers, dip in buttermilk and roll in the flour / breadcrumbs
6. Fry that stuff up
7. Eat
8. Repeat
