泡過水的小排骨。
小排骨在阿芳家會做兩種料理,一個是台式的五香排骨酥,一個是港式的豆豉蒸排骨,兩道菜的風味對於會做飯的媽媽來說並不難,但是阿芳做這兩道菜的小排骨,一定會提前半天把它泡在冰塊水中,放在冰箱冷藏,替換2-3次水,除了排出含在骨肉中的血水,同時也讓肉質吸飽水份,這個過程就是粵菜師傅用活水瓢洗豬肉讓豬肉去腥保水的方式,才不會因為醃製的調味料帶有鹽份,在醃製的過程中,因鹽份而讓肉失去水份,漂過活水的排骨肉,在未來蒸熟或炸酥之後都可以保有軟嫩多汁的口感。
🤣這個排骨酥直播是劉爸欠大家的,傍晚阿芳本來想開排骨酥的直播,但是劉爸想玩電腦正在熱頭上,是劉爸偷懶,於是阿芳把做的過程全部拍下照片跟大家分享!
五香排骨酥
1,小排骨1斤泡冰水釋出血水後吸乾表面水份。
2,調一份醃肉濕漿,濕漿用一顆蛋,醬油2大匙,魚露1大匙,蒜泥1小匙,五香粉1/2小匙 糖1小匙 胡椒粉1/4小匙 蓬來米粉2-3大匙(麵粉亦可)拌均勻後把肉塊放入拌勻移入冷藏醃放30分鐘。
2,在醃好的排骨中再加入兩大匙地瓜粉,另外在盤中放上1/2杯地瓜粉,取排骨塊沾上乾粉,全部ˉ裹上乾粉衣,放5分鐘讓排骨粉衣反潮。
3,準備溫油鍋,排骨會下鍋裡中小火慢慢炸至外表金黃香酥即可先撈出,用細撈網鍋裡的殘渣撈除乾淨,升高油溫,排骨塊重新回鍋二炸,表面即成酥脆狀,撈出瀝油灑上胡椒鹽即可。

Serves 4
Marinade for the chicken

Marinate for at least 30 minutes but the longer the better

2 pieces of chicken thigh - cut into cubes
1 teaspoon of salt
1 tablespoon of Chinese white rice wine
3 teaspoons of cornflour
A few dashes of white pepper
Other ingredients

1/2 thumb size of ginger - sliced thinly
15 pieces of dried chilli - soaked and roughly chopped
4 cloves of garlic - sliced
1.5 tablespoons of Sichuan peppercorn - smashed lightly
1 stalk of spring onion
2 tablespoons of light soya sauce
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao Wine)

This Meatballs with Cabbage Soup or 白菜狮子头汤 was Super yummy for me. To be honest, I have never craved for this soup because it just seemed so simple to me. How complex can the taste of this soup be? It's just meatballs and cabbage in chicken stock. But boy was I wrong. I really think Roland is talented. Every time I tell him what I'm craving for or what i want to try and he never failed to whip up something yummy that blows my mind away. He's a good homecook and a good hubby. Yes I'm very blessed. :)
